class=\"ERIngredientsHeader\">Ingredients<\/div>\n<ul class=\"ingredients\">\n<li class=\"ingredient\">Prime rib 5 Pound, bone in<\/li>\n<li class=\"ingredient\">[br]For the wet rub<\/li>\n<li class=\"ingredient\">3 tbs Fresh rosemary<\/li>\n<li class=\"ingredient\">12 Garlic cloves, minced<\/li>\n<li class=\"ingredient\">1\u20442 Cup (8 tbs) Herbes de provence<\/li>\n<li class=\"ingredient\">1 tbs Fresh pepper<\/li>\n<li class=\"ingredient\">2 tbs Extra virgin olive oil<\/li>\n<\/ul>\n<\/div>\n<div class=\"ERInstructions\">\n<div class=\"ERInstructionsHeader\">Instructions<\/div>\n<div class=\"instructions\">\n<ol>\n<li class=\"instruction\">Prepare the dutch oven with about an inch thick layer of rock salt.<\/li>\n<li class=\"instruction\">In a bowl, combine all the ingredients for the wet rub and mix well.<\/li>\n<li class=\"instruction\">Using your hands, pat the wet rub on the prime rib to coat evenly.<\/li>\n<li class=\"instruction\">Insert a remote thermometer in the prime rib.<\/li>\n<li class=\"instruction\">Place the prime rib in the Dutch oven and cover it with about an inch of rock salt as shown in the video.<\/li>\n<li class=\"instruction\">Place the coals on the rim of the Dutch oven and allow to cook.<\/li>\n<li class=\"instruction\">Keep a check on the remote thermometer, it will take about 2 to 2.5 hours for the prime rib to cook to medium-rare.<\/li>\n<li class=\"instruction\">The internal temperature should be 130 degrees.<\/li>\n<li class=\"instruction\">Carefully remove the lid of the Dutch oven and gently scrape the rock salt.<\/li>\n<li class=\"instruction\">Allow the Prime rib to rest for about 20 minutes.<\/li>\n<li class=\"instruction\">Carve and I\u2019m going to be cooking a highly requested item, salt crusted prime rib in the Dutch oven on the Cooking Everything Outdoors show.<br \/>\nGary House with the outdoor cook Cooking Everything Outdoors show, I hope you try this at home.<br \/>\nSo let\u2019s go over the tools that I\u2019m going to be using and it\u2019s pretty simple.<br \/>\nFirst off, I\u2019m going to be using a 12 inch Camp Chef deep Dutch oven and I\u2019m going to be using rock salt.<br \/>\nI\u2019ve already put about an inch of rock salt on the bottom.<br \/>\nNow what I have is a 5 pound bone-in roast prime rib.<br \/>\nBasically, the Butcher has already trimmed the bone for me.<br \/>\nNow, on our prime rib we\u2019re going to put a\u2026 what\u2019s called the wet rub.<br \/>\nThe ingredients for our wet rub are about 3 tablespoons of fresh, chopped rosemary.<br \/>\n10-12 garlic cloves, minced.<br \/>\nThis is Herbs de Provence.<br \/>\nAnd it is a mixture of herbs with some salt that\u2019s added to it, and about a tablespoon of coarse black pepper, and some good extra virgin olive oil.<br \/>\nSo let\u2019s put our wet rub together.<br \/>\nTo start off with, we have our Herbs de Provence.<br \/>\nAnd that\u2019s probably a good 1\/2 a cup there.<br \/>\nI\u2019m going to add my garlic, my pepper, my rosemary.<br \/>\nLet\u2019s just give this a quick dry mix.<br \/>\nAnd then we\u2019ll start adding our oil.<br \/>\nAnd just do enough to where I get what\u2019s called a wet mix.<br \/>\nYou\u2019ll know you\u2019re done when it\u2026 some holds its shape.<br \/>\nSo now what you want to do at this point, we\u2019re ready to apply the wet rub to the prime rib.<br \/>\nYou want to get your charcoal going.<br \/>\nNow, we have a 12 inch Dutch oven.<br \/>\nSo that\u2019s going to mean 24 coals, we\u2019re going to need.<br \/>\nAnd so get that going in your charcoal chimney.<br \/>\nI have mine setup to the site here.<br \/>\nIt\u2019s starting to heat up right now.<br \/>\nSo roll up your sleeves and start packing this on.<br \/>\nI think, you know, you could spoon it on very delicately and dangly, but really the best way to do this is to just get in there and add a little more oil to this and pack it on with your hands.<br \/>\nAnd I want a pretty decent crust on this.<br \/>\nJust pad it on there as best you can.<br \/>\nEventually you\u2019ll get a nice, rich herbed coating on your prime rib.<br \/>\nAnd that, my friends, is what I like.<br \/>\nSo now we want to add our prime rib to our Dutch oven.<br \/>\nLid off, take our prime rib and set it right on the salt.<br \/>\nYou\u2019ve got extra seasoning and touch here and you want to pad that on there and add that on.<br \/>\nGo for it.<br \/>\nSo now we need to add the salt.<br \/>\nBut before you do that it\u2019s really, really important that you get a remote thermometer and insert the probe in right about now because otherwise, you\u2019re not going to know what temperature your roast is cook to because they\u2019re all going to cook at a different time.<br \/>\nToday it\u2019s a little cold, it\u2019s a little windy, it\u2019s going to slow things down a bit.<br \/>\nBut get your remote thermometer and get a probe in there right into the thickest part as best you can judge it.<br \/>\nWe\u2019re just going to fill up the whole Dutch oven, around the roast, fill up cavity completely.<br \/>\nAnd I\u2019m going to try\u2026 hopefully I\u2019ll have enough room to get of about an inch of salt on the top of this also.<br \/>\nSo there we have it filled up and our lid just barely fits, got about an inch of salt on that and we\u2019re just going to close this up and start cooking.<br \/>\nOkay, so I\u2019m going to need about 8 coals on the bottom.<br \/>\nGet our Dutch oven on there and, boy, oh boy, it\u2019s just heavy.<br \/>\nProbe will have that hooked up in just a second and now I want to add my top coals.<br \/>\nAnd we\u2019ll need to have to go around the rim about 14 coals there.<br \/>\nOkay, that\u2019s our setup.<br \/>\nSo the coals are on the Dutch oven.<br \/>\nIt\u2019s going to be heating up.<br \/>\nWe\u2019re shooting for about 350 degrees.<br \/>\nAnd, you know, that\u2019s somewhat speculation with the Dutch oven.<br \/>\nIt\u2019s going to get there and it\u2019s going to keep that temperature for, you know, good 40-45 minutes or so.<br \/>\nAt first it\u2019ll be higher than that then it\u2019ll creep down.<br \/>\nSo it\u2019s sliding scale on this.<br \/>\nBut optimally we\u2019re going to get about an hour of our\u2026 45 minutes to an hour with this set of coals.<br \/>\nAnd we\u2019re going to be cooking our prime rib to about 130 degrees, so that way I can pull it, it\u2019ll rest for half an hour, come up in temp, so we\u2019re going to be heating around 140 is my guess which is about medium rare, just what most people like their prime rib at.<br \/>\nAnd that I\u2019m going to guess is going to take a couple of hours.<br \/>\nBut we\u2019re going to watch the thermometer.<br \/>\nI can\u2019t really just judge this.<br \/>\nSo I\u2019m going to keep my eye on my remote thermometer.<br \/>\nI\u2019m going to add coals as needed.<br \/>\nAnd then we\u2019re going to have ourselves a beautiful prime rib.<br \/>\nSo it\u2019s been about 2 1\/2 hours.<br \/>\nOur prime rib temperature is at right at about 129 right now.<br \/>\nSo what I\u2019m going to do is I\u2019m going to pull all of these off and take a look at this.<br \/>\nAnd I think we\u2019ve got\u2026 I mean the smells are just incredible, but I think we\u2019ve got a winner here.<br \/>\nAlright, the first official peak.<br \/>\nI think all we\u2019re going to see is a bunch of cooked salt in there.<br \/>\nWell, there you go, there\u2019s the timer just hit 130.<br \/>\nSweet.<br \/>\nLet\u2019s see how we did.<br \/>\nOh man.<br \/>\nAlright, yeah, there\u2019s a big pile of salt.<br \/>\nYou can see some of the herbs and stuff have come through.<br \/>\nThe smell I have to tell you that it is phenomenal.<br \/>\nWell, let\u2019s get some of this salt off of here.<br \/>\nIt\u2019s just going to peel off.<br \/>\nSometimes it comes off in a big crust if you get your salt really, really wet ahead of time.<br \/>\nI didn\u2019t do that.<br \/>\nI just basically want to get as much of this, good thing we\u2019re cooking outdoors here off as possible.<br \/>\nAlright, so let\u2019s see what we can do here.<br \/>\nOkay, now what I\u2019m going to do is I\u2019m going to knock off a little bit more of the salt.<br \/>\nAnd then we\u2019re going to let it rest for 20 minutes or so and we\u2019ll cover it up.<br \/>\nAlright, the sun\u2019s going down fast.<br \/>\nWe cooked our prime rib.<br \/>\nIt\u2019s set for about 20 minutes now as I\u2019m kind of picking up things around here.<br \/>\nYou know, I\u2019ll just cut into a chunk of this.<br \/>\n3 strings if I remember right.<br \/>\nLet\u2019s see here.<br \/>\nSo, that should release our prime rib from the bone like so.<br \/>\nIt\u2019s a good sign.<br \/>\nLook at the juices in that, just coming out of that.<br \/>\nWow.<br \/>\nSpectacular.<br \/>\nIt\u2019s so tender.<br \/>\nWow.<br \/>\nFor those of you that think that salt has leached into this prime rib, that\u2019s not the case at all.<br \/>\nThere\u2019s a salty taste to the crust but not in the meat.<br \/>\nAnd the salty taste to the crust is only from the salt that I added to the wet rub.<br \/>\nSo there it is,
