quartered<br \/>\n1 lemon, quartered<br \/>\n1 tangerine, quartered<br \/>\n1 orange<\/p>\n<h2 style=\"text-align: justify;\">Citrus rub ingredients<\/h2>\n<p style=\"text-align: justify;\">3 tbs Tajin seasoning<br \/>\n1 tbs dried orange peel<br \/>\n1 tsp dried sage<br \/>\n1 tsp salt<br \/>\n1 tsp coarse black pepper<\/p>\n<blockquote>\n<p style=\"text-align: justify;\"><em><strong>Video Transcript:<\/strong> <\/em><\/p>\n<p style=\"text-align: justify;\"><strong>Presenter: \u00a0<\/strong><br \/>\nToday it\u2019s smoked citrus turkey on the Cooking Everything Outdoors show.<br \/>\nGary House with the outdoor cook Cooking Everything Outdoors show, I hope you try this at home.<br \/>\nSo, what is smoked citrus turkey?<br \/>\nSomething I enjoy, something that I put together\u2026no clue if it\u2019s original or not, I haven\u2019t done the research for that, but I find it refreshing.<br \/>\nQuite often we have heavily saged-basted or buttered-basted turkeys, very common, very used to that.<br \/>\nWhat I\u2019ve done with this is I have created a profile that is citrusy, and clovey and sagy all at the same time.<br \/>\nSo really packs a unique profile to this turkey that I think you\u2019ll enjoy.<br \/>\nI certainly enjoy it.<br \/>\nAnd the video before this which is the brining one, you saw high brining.<br \/>\nI use citrus-based brine.<br \/>\nI did brine that for almost 10 hours.<br \/>\nSo I went a little bit longer than I had planned, but it\u2019s still\u2026I think it\u2019s going to be a fantastic.<br \/>\nI\u2019m using a 10 pound turkey.<br \/>\nAnd now we just need to get the stuffing together and get it going.<br \/>\nSo taken my turkey out of the brine, washed it off completely.<br \/>\nIf you don\u2019t do that, you\u2019re going to get a lot of salty residue.<br \/>\nSo I\u2019ve washed it completely, padded it dry.<br \/>\nAnd now we want to start preparing it.<br \/>\nI want to take some nice olive oil.<br \/>\nAnd I am going to just oil the carcass.<br \/>\nAnd this is really just going to do really two things.<br \/>\nIt\u2019s going to act as a binder.<br \/>\nAnd it\u2019s going to crisp up that skin.<br \/>\nSo don\u2019t be afraid to get in there and just give everything a good rub down wings, the legs.<br \/>\nOnce you got that, you want to add your rub.<br \/>\nNow, my particular rub is the one that I\u2019ve made up.<br \/>\nAnd I\u2019m using this.<br \/>\nAnd I believe it\u2019s pronounced tajin or tajine and it is a clasico seasoning but it\u2019s citrus baste.<br \/>\nSo what I have here is 3 tablespoons of tajin.<br \/>\n1 tablespoon of orange peel.<br \/>\nAnd 1 teaspoon dried sage.<br \/>\nA teaspoon of salt.<br \/>\nAnd a teaspoon of pepper.<br \/>\nThat\u2019s fresh coarse ground black pepper.<br \/>\nAnd we\u2019re going to flavor this up and get a nice coating on it.<br \/>\nI\u2019m going to save about a 1\/4 of this for the inside cavity.<br \/>\nAnd just take that leftover there and throw it in there.<br \/>\nOkay?<br \/>\nNow, let\u2019s start putting our stuffing together.<br \/>\nIt\u2019s not something we\u2019re going to eat, it just add aroma and flavor to this.<br \/>\nSo I have a small sachet of\u2026well, it\u2019s actually a large sachet of fresh sage that I want to stuff in there.<br \/>\nProbably we\u2019ll take a lemon, a tangerine and a lime.<br \/>\nAnd basically, with these I am just going to slice them.<br \/>\nI have washed them.<br \/>\nAnd I\u2019m going to quarter them up.<br \/>\nAlso I\u2019m going to take some cloves.<br \/>\nNow these are whole cloves.<br \/>\nI won\u2019t need that much.<br \/>\nI probably have may be 10 here.<br \/>\nAnd then I\u2019m just going to add these to the cavity in there.<br \/>\nReally just the same thing.<br \/>\nGet lemon, orange, tangerine, and pack it in there.<br \/>\nAlright.<br \/>\nSo let\u2019s truss up these legs.<br \/>\nAnd I am not a trussing expert by any stretch of the imagination.<br \/>\nTied off a couple of times.<br \/>\nOnly reason I want to do this is during the cooking process I don\u2019t want any of my goodness popping out there.<br \/>\nSo, how we\u2019re going to go about this?<br \/>\nI\u2019m using the Camp Chef\u2019s Smoked Vault.<br \/>\nThis is the 18 inch version.<br \/>\nAnd it is going to be very, very simple setup with this.<br \/>\nI have my smoking chips.<br \/>\nNow, what I\u2019m to be using, our apple smoking chips.<br \/>\nI have some in there already.<br \/>\nYou can soak these if you want.<br \/>\nSoak them in an apple juice or a peach juice or something citrusy, if you will.<br \/>\nYou can soak it in beer, whatever you want to do.<br \/>\nI\u2019m going in dry on this.<br \/>\nThat\u2019s just the way I like to do it.<br \/>\nI have a water tray right here.<br \/>\nI\u2019m going to fill that up with water.<br \/>\nAnd then I have a drip tray that I\u2019m going to be putting right like so.<br \/>\nAnd then my turkey is going to go in there.<br \/>\nSo first thing we\u2019re going to do is add our water.<br \/>\nOkay, so fire this up.<br \/>\nGet that going.<br \/>\nTurn that down to medium to start with.<br \/>\nOnce I have the flame going, I\u2019m going to turn and open up the bottle all the way.<br \/>\nMy drip pan in place.<br \/>\nAnd now I want to put my turkey on it.<br \/>\nBut before that I\u2019m going to give it a good coating of cooking oil or spray to help prevent the turkey from sticking because I\u2019m putting that turkey bare butt right on that rack.<br \/>\nGood coating in non-stick spray.<br \/>\nI want to take my turkey in my smoker.<br \/>\nThat little 10 pound turkey fits just perfectly.<br \/>\nSo at this point I need to regulate the temperature.<br \/>\nNow, this is a 10 pound turkey and you can pretty much go with the rule of thumb of 30 to 40 minutes per pound when you\u2019re smoking.<br \/>\nNow that\u2019s at 225-250 around that range.<br \/>\nI\u2019m going to do 2-step smoking on this.<br \/>\nAnd what I mean is, is I\u2019m going to drop this down as low to 225 as I can for the first few hours because at lower temperatures the smoke is able to saturate the meat better.<br \/>\nSo I want a real nice smoke ring on my turkey.<br \/>\nAnd then towards the end I\u2019m going to turn it up so I can crisp up that skin.<br \/>\nSo it can get a double whammy on that.<br \/>\nThese chips are already starting to smoke.<br \/>\nSo I want to turn my temp down.<br \/>\nI want to close it up and start monitoring my temperature.<br \/>\nOur citrus stuffed turkey has been smoking for about two and half hours now.<br \/>\nI did a quick check on the temperature with an instant-read thermometer and I\u2019m at about 135.<br \/>\nSo I\u2019m pretty comfortable saying that I want to stop just my general smoking right now and I want to turn up the heat.<br \/>\nSo I kicked it up.<br \/>\nI\u2019m at 275 right now.<br \/>\nSo I went from 225 to 275, might even creep up towards 300 to start crisping up that skin.<br \/>\nBut I really wanted you to take a peek at this real quick because it is just a thing of beauty.<br \/>\nI hope you can see that in there, but that turkey is just golden brown, beautiful smoked.<br \/>\nJust coming along absolutely phenomenally.<br \/>\nWe\u2019re done.<br \/>\nActually let it cool down for a bit.<br \/>\nOh yeah.<br \/>\nOkay, let\u2019s see how we did it.<br \/>\nIt\u2019s nice and tender there.<br \/>\nLook at that.<br \/>\nLittle moisture in there.<br \/>\nIf you can see that or not, don\u2019t tell anybody I\u2019m going to take a bite of this.<br \/>\nTender and delicious and moist.<br \/>\nThere you have it.<br \/>\nThere is my smoked citrus turkey.<br \/>\nTry it if you want
