2<\/a><\/p>\n<h2>Tex-Mex Recipes<\/h2>\n<p>Butterflied Tri-tip fajitas<\/p>\n<p>2 &#8211; 3 lb Tri-Tip, butterflied<br \/>\n1 Lime, sliced<br \/>\n2 c Pineapple juice<br \/>\n2 c Soy Sauce<br \/>\n1 tbs Chili powder<\/p>\n<p>Mexican Red Rice<\/p>\n<p>2 med Tomatoes, chopped<br \/>\n2 tbs Canola oil<br \/>\n1 cup long grain rice<br \/>\n1\/2 med onion, chopped<br \/>\n3 Garlic cloves, minced<br \/>\n3 Anaheim chili's<br \/>\n1 1\/2 c Chicken stock<br \/>\n2 tsp Sea salt<\/p>\n<p>Re-fried Beans<\/p>\n<p>4\u00a0 Slices bacon, pieces<br \/>\n1 lrg can Pinto beans, drained<br \/>\n1 c bean broth<br \/>\nsalt<br \/>\npepper<\/p>\n<p>&nbsp;<\/p>\n<p>Recipes adapted from the &#8220;Tex-Mex Grill and Backyard Barbacoa Cookbook and Fine Cooking Forums&#8221;<\/p>\n<p>&nbsp;<\/p>\n<blockquote><p><em><strong>Video Transcript:<\/strong><\/em><br \/>\n<strong>Presenter: \u00a0<\/strong><br \/>\nHey, everyone, this is Gary House.<br \/>\nAnd today I\u2019m making butterflied tri-tip Mexican red rice and super easy refried beans on the Cooking Everything Outdoors show.<br \/>\nGary House with the outdoor cook Cooking Everything Outdoors show, I hope you try this at home.<br \/>\nTo make our butterflied tri-tip fajitas we need to marinate our tri-tip.<br \/>\nAnd we also have to butterfly it.<br \/>\nSo before I butterflied I\u2019m going to show you the ingredients we\u2019re going to use.<br \/>\nWhat I have here is a tri-tip.<br \/>\nAnd this is about 2.5 pounds.<br \/>\nI have one sliced lime.<br \/>\n2 cups of pineapple juice or in this case what I have is a pineapple orange apple blend of 100% juice.<br \/>\nNo sugar added.<br \/>\nIt\u2019s going to give us that tartness.<br \/>\n2 cups of soy sauce.<br \/>\nAnd 1 tablespoon of chili powder.<br \/>\nAnd a 2 gallon plastic re-sealable bag that we\u2019re going to marinate the tri-tip in.<br \/>\nSo traditionally, tri-tip has not butterflied.<br \/>\nIn fact, the one of the ways that I\u2019ve heard about this is a double butterfly which you butterfly it and then you butterfly it again so that there\u2019s going to be 4 flaps there.<br \/>\nAnd that\u2019s little bit more than I want to go.<br \/>\nJust create a very thin tri-tip which is a very fast grill.<br \/>\nAnd that\u2019s why they do that.<br \/>\nSo we\u2019re going to take this one.<br \/>\nAnd we\u2019re just going to butterfly it so that it opens up.<br \/>\nAnd it\u2019s going to reduce the cooking time.<br \/>\nAnd it\u2019s going to also present more surface for the marinade to attack to help tenderize and flavor it.<br \/>\nAnd so just very carefully take a sharp knife and you want to, just like I have shown you with chicken and everything else, just slice that, bookmark.<br \/>\nThat\u2019s almost all the way through.<br \/>\nAnd I have to do half at a time.<br \/>\nEnough there, I\u2019ll flip that over.<br \/>\nGet my mark as close through it as possible.<br \/>\nDon\u2019t worry if it\u2019s not perfect.<br \/>\nIf it was perfect then it wouldn\u2019t be fun, right?<br \/>\nAnd just get it so it looks like that.<br \/>\nAnd it\u2019s going to lay flat.<br \/>\nAnd be even consistency.<br \/>\nWe need to prepare our marinade and take a\u2026 this is a Trigon bag, I didn\u2019t say that earlier.<br \/>\nAnd put it in a bowl so it stays stable and doesn\u2019t go all over the place.<br \/>\nWe\u2019ll add our tri-tip in there.<br \/>\nOur limes.<br \/>\nChili powder.<br \/>\nSoy sauce.<br \/>\nSmells good already.<br \/>\nAnd in our case, pineapple orange apple juice.<br \/>\nGet much air out of there as we can.<br \/>\nSeal it up.<br \/>\nGive it a good mix, too.<br \/>\nGet everything coated up.<br \/>\nInto the fridge for 2 hours.<br \/>\nTo make are Mexican red rice we\u2019re going to only need a few ingredients.<br \/>\nA couple of medium tomatoes, chopped.<br \/>\n2 tablespoons of canola oil.<br \/>\n1 cup of long grain rice.<br \/>\n1\/2 an onion, you can either quarter this and slice it or in my case, what I did was just rough chopped it.<br \/>\n3 cloves of garlic.<br \/>\n3 Anaheim chilies.<br \/>\n1.5 cups of chicken stock.<br \/>\nAnd a little over maybe 2 teaspoons of sea salt.<br \/>\nWe probably are going to use about 1\/2 to 3\/4 of this.<br \/>\nTo get our Mexican red rice dish rolling we need to cook our chilies.<br \/>\nWe\u2019re going to char them.<br \/>\nI\u2019m going to seed them.<br \/>\nAnd then I\u2019m going to chop them up in a dish.<br \/>\nBut let\u2019s get a good char these so we can skin them.<br \/>\nIt\u2019s simple as preheating your grill.<br \/>\nThrowing them on the grate.<br \/>\nLet them cook for a few minutes.<br \/>\nFlip them again in few minutes.<br \/>\nFlip them again in few minutes until they are essentially just burnt on the outside.<br \/>\nChilies should be done now.<br \/>\nFlipped them a few times while I was cooking.<br \/>\nAnd you can see that they\u2019re nicely blackened all the way around.<br \/>\nAnd what we want to do now is take and drop them into a plastic bag.<br \/>\nBe careful, they are pretty hot.<br \/>\nSo putting the chilies in the bag allows them to steam which will help remove the blackened skin and make it easy for us to, at this point, cut them up, seed them and place them up.<br \/>\nSo while our chilies are steaming and cooling down here, I want to get the rice, onions, and oil.<br \/>\nGet those started.<br \/>\nAnd I\u2019m going to use my favorite 10 inch flat bottom Dutch oven.<br \/>\nIt\u2019s an antique.<br \/>\nIt\u2019s been around for long, long time.<br \/>\nI just want to place this on the grill to start preheating that.<br \/>\nSo our Dutch oven has been preheating for a few minutes.<br \/>\nAnd I\u2019m going to add our canola oil.<br \/>\nAnd then we want to add our onions and rice.<br \/>\nSo what we\u2019re going to do here is while this is cooking, I\u2019m going to be basically saut\u00e9 the onions and getting the rice to a nice, deep, golden brown color.<br \/>\nIt\u2019s going to release those aromatics, that nutty flavor that we look for and some good quality rice.<br \/>\nSo we\u2019ll let that cook and probably take about 5 minutes.<br \/>\nSo let\u2019s have a go at skinning and seasoning these chilies.<br \/>\nSo they\u2019re cooled down enough to where I can handle them.<br \/>\nAnd the skin comes off extremely easy.<br \/>\nIt almost just unwraps, if you will.<br \/>\nNow, if you do have any problems getting this off, you can always\u2026and I\u2019m not&#8230;but you can always take a paper towel or dish rag and that will help remove that skin.<br \/>\nAnd this is just coming off just perfectly.<br \/>\nJust the way I like it.<br \/>\nLet\u2019s finish preparing our chilies.<br \/>\nWe want to cut the stem section off.<br \/>\nWhat I like to do is just give it a slice on one side, open it up, and just scrape those seeds right off.<br \/>\nAs simple as that.<br \/>\nMight be a couple of leftovers but no big deal.<br \/>\nAgain, just slice the top, slice it open, made out flat, and scrape those seeds right off.<br \/>\nThat works with just about any chili.<br \/>\nI like mine a little on a chunky side.<br \/>\nThat\u2019s roughly what I\u2019m looking for so that we get a nice bite-sized piece of chili in every mouthful of rice.<br \/>\nGot a couple in there that are little bigger.<br \/>\nGive them a little chop.<br \/>\nIf you want them smaller, give them another chop.<br \/>\nIt\u2019s not a big deal.<br \/>\nNow that our rice is at a beautiful golden brown I\u2019m going to get my garlic in there.<br \/>\nJust see this, this is just absolutely golden.<br \/>\nLet\u2019s threw this garlic in there now.<br \/>\nSmells incredible.<br \/>\nThere\u2019s aromatics going here.<br \/>\nCouple of minutes and we\u2019re ready to add the rest of it.<br \/>\nOur garlic has been simmering.<br \/>\nThey are saut\u00e9ing.<br \/>\nAnd now we want to add the rest of our ingredients.<br \/>\nSo I want to get my chilies in here.<br \/>\nMy tomatoes.<br \/>\nChicken Broth, 1.5 cups.<br \/>\nThat\u2019s homemade chicken stock by the way, the only way to roll.<br \/>\nGive this a stir.<br \/>\nI\u2019m going to take a quick taste to make sure\u2026we need to salt and yes, we do, a couple of pinches in there.<br \/>\nI\u2019m going to cover this back up\u2026excuse me, with the lid.<br \/>\nI\u2019m going to bring this up to a boil and then I\u2019m going to drop it quickly down to a simmer.<br \/>\nSo I got the rice up to boil.<br \/>\nAnd now we are at a simmer.<br \/>\nAnd the juices are really starting to be absorbed rapidly.<br \/>\nAnd probably 10-15 minutes tops I\u2019m just going to cook this down until obviously the chicken stock has been absorbed.<br \/>\nThat\u2019s the word I was looking for.<br \/>\nSuch a big word, absorbed.<br \/>\nAnd then I\u2019m going to take it off and we\u2019re going to let it rest for another 10 minutes or so, and it\u2019s going to be ready to go.<br \/>\nAlright, so about 10 minutes have gone by, take a look at our rice.<br \/>\nOh the smell.<br \/>\nOkay, that looks absorbed.<br \/>\nI think we\u2019re where we need to be.<br \/>\nLet\u2019s give this a quick stir in it.<br \/>\nLittle bit longer but you can see the color in this, flavors.<br \/>\nGoing to be just incredible.<br \/>\nI\u2019m going to give that just a few more minutes.<br \/>\nOh yes.<br \/>\nYes, yes, yes, yes.<br \/>\nThat is beautiful fluffy rice.<br \/>\nNow, what I want to do is get it off the heat now to get quick taste.<br \/>\nThey\u2019re seasoning.<br \/>\nAnd that garlic is just permeating this.<br \/>\nYou could salt it up from there if you want.<br \/>\nBut I\u2019m going to take it off the heat.<br \/>\nWe\u2019re going to let it sit for 10 or 15 minutes there.<br \/>\nDelish.<br \/>\nHey, I hope you enjoyed this episode of the
