video)<\/p>\n<h2>Mango &#8211; Peach Buckle Ingredients<\/h2>\n<p>16 oz frozen Peaches, thawed<br \/>\n16oz frozen Mango, thawed<br \/>\n1 tbs All-purpose flour<br \/>\n1 egg white<br \/>\n1c sugar<br \/>\n2 tbs Brandy<br \/>\n1\/2 tsp cinnamon<br \/>\n1\/4 tsp ginger<br \/>\n1\/8tsp allspice<br \/>\n1 lime<br \/>\n2 ready-made pie crust<\/p>\n<p>&nbsp;<\/p>\n<blockquote><p><em><strong>Video Transcript:<\/strong><\/em><br \/>\n<strong>Presenter:<\/strong><br \/>\nHey, everyone, I\u2019m going to be making a Mango Peach Buckle.<br \/>\nWhat\u2019s a buckle?<br \/>\nWell, that\u2019s exactly what I\u2019m going to show you on the Cooking Everything Outdoors show.<br \/>\nGary House with the outdoor cook Cooking Everything Outdoors show, I hope you try this at home.<br \/>\nSo what\u2019s a buckle?<br \/>\nWell, it\u2019s a pie.<br \/>\nBut it\u2019s not a traditional pie dough or pie crust filling and pie crust.<br \/>\nIt\u2019s actually folded up, very similar to a tart, if you will, but just in a pie pan itself.<br \/>\nSo it\u2019s really simple.<br \/>\nIt works fantastic on the grill which is what we\u2019re going to be doing right now.<br \/>\nAnd the presentation on this is really, really cool.<br \/>\nAnd did I simple?<br \/>\nBecause it is simple.<br \/>\nSo I\u2019m going to be cooking this pie in a cast iron skillet I have right here.<br \/>\nAnd I have already pre-greased it with some Crisco lard, if you will.<br \/>\nAnd what I\u2019m going to be doing is cooking it with indirect heat in a charcoal kettle.<br \/>\nSo it\u2019s very simple setup and I\u2019ll show you how I have that right after we start\u2026right after we make the pie I\u2019ll show you how I have my charcoal setup in there so that we can cook this as if it was cooking in an oven.<br \/>\nNow, not a lot of ingredients to this recipe which keeps it simple, you can build upon this, if you want, like all of my recipes they are certainly expandable and you can take it as far as you really want to.<br \/>\nBut let\u2019s go over the recipe real quick here.<br \/>\nHighly encourage you to use fresh peaches and fresh mangoes if you can get them.<br \/>\nWhat I had available to me just really didn\u2019t look that great, so I opted for frozen.<br \/>\nAnd frozen works really, really well.<br \/>\nJust make sure you defrost them first.<br \/>\nSo I have 16 ounces of frozen peaches and 16 ounces of mango.<br \/>\nThat\u2019s probably about 3-4 peaches, large peaches and about 3 mangoes, sliced up.<br \/>\nYou can change the ratio on this.<br \/>\nThe mango adds some unique tartness to it and also a different mouth feel than the peaches.<br \/>\nSo it\u2019s quite a surprise and if you don\u2019t tell anybody it\u2019s a mango peach they\u2019re going to, you know, kind of be taken aback by the flavor of this peach buckle.<br \/>\nIt\u2019s really kind of fun.<br \/>\nSo that\u2019s what I\u2019m going to use for the filling and to add to that to make it flavorful I have 2 tablespoons of all-purpose flour.<br \/>\nFor the crust I have an egg white.<br \/>\n1 cup of regular sugar.<br \/>\n2 tablespoons of good brandy.<br \/>\n1\/2 a teaspoon of cinnamon.<br \/>\n1\/4 teaspoon of ginger.<br \/>\nAnd an 1\/8 of an teaspoon of allspice.<br \/>\nAnd the juice from a couple of limes that I\u2019ll be using.<br \/>\nAnd of course, my ever faithful cheddar pie dough which I like to use all the time.<br \/>\nAnd that\u2019s all is required for this.<br \/>\nNow you could add some butter pads to this to make it even more richer.<br \/>\nI\u2019m not going to do that tonight, but keep that in mind when you make it.<br \/>\nYou might want to put 5 or 6 pads of butter in there.<br \/>\nSo the first thing I like to do is mix up my dry ingredients and that\u2019s just basically the flour, my sugar, and my spices, my cinnamon, my ginger, and my allspice.<br \/>\nEverything else goes on later.<br \/>\nSo just give a good blend.<br \/>\nAnd all this does is just gives me a better consistency as I\u2019m mixing it in with my peaches and my mangoes.<br \/>\nSo once we have our dry ingredients mixed we can then take it and mix it with the mango and peaches.<br \/>\nAnd just lightly toss these.<br \/>\nI just want to get them nice and blended.<br \/>\nAnd I\u2019m looking just to coat this.<br \/>\nThat\u2019s it.<br \/>\nMixed up.<br \/>\nAlmost ready to go.<br \/>\nNow to make the buckle, it\u2019s really simple, we\u2019re going to take our 2 pie crusts and these are going on the bottom.<br \/>\nWe used to have one on the bottom but we\u2019re actually using 2 pie crusts on the bottom.<br \/>\nSo I want too lay it in there and maybe 3 1\/4 of the way so that I have a lot of pie dough laid out to the side.<br \/>\nAnd be careful when you lay this in there.<br \/>\nYou don\u2019t want to puncture the sides.<br \/>\nBut I have about a 1\/3 of the pie dough, pie crust, on one side.<br \/>\nAnd I will do the same thing on the opposite side.<br \/>\nAnd here you can see I\u2019ve actually sealed the whole bottom of the pie pan so that I don\u2019t have anything goosing under there possible.<br \/>\nAnd I want to take my pie filling.<br \/>\nPretty as a picture.<br \/>\nAnd now we need to make the buckle.<br \/>\nNow, to make our buckle is pretty easy but it might look a little confusing.<br \/>\nAnd we\u2019re just going to fold it over at the top of our pie crust but we\u2019re going to do it kind of ripples.<br \/>\nAnd that\u2019s where the buckle comes from.<br \/>\nSo we\u2019re just going to bring a little bit up and then kind of fold some over, bring a little up, fold some over, bring a little up, fold some over.<br \/>\nSo you can see this actually looks kind of cool.<br \/>\nGot a little bit of the pie filling exposed there.<br \/>\nAnd what I\u2019m going to do is I\u2019m going to take one of the limes and I\u2019m going to drizzle it over the center there.<br \/>\nAnd then I want to take my brandy and I\u2019m going to pour it right in there.<br \/>\nAnd then I\u2019m going to take my egg white.<br \/>\nAnd I just want to paste up my pie crust to get a nice golden brown color.<br \/>\nSo now here you can see how I have my charcoal kettle set up.<br \/>\nAnd what I\u2019ve taken is made a ring around the outside perimeter in the kettle of my briquettes.<br \/>\nI don\u2019t have anything in the center.<br \/>\nSo it\u2019s somewhat cooler there.<br \/>\nThe heat is going to come in theory, and actually in practice it comes up and around the kettle and cooks just very similar to a convection oven.<br \/>\nAnd we\u2019re looking to maintain about a 350-degree oven for about 45 minutes.<br \/>\nSo when I put my dome on and I\u2019m watching this and if I\u2019m hitting 390-425 it\u2019s too soon to put the pie in.<br \/>\nSo I\u2019m going to damper it down, try to reduce the temperature a bit and just watch it and get it stabilized.<br \/>\nNow we\u2019ll put the pie in and about 15 minutes later I\u2019m going to take a peek at it keeping an eye on the temperature.<br \/>\nAnd I might drop some more charcoal in there just to maintain the temperature.<br \/>\nThat entirely depends on the brand of charcoal you\u2019re using.<br \/>\nSome charcoal will last to full 45 minutes, 50 minutes or so and other stuff only last 30-35 minutes.<br \/>\nIt falls apart really, really quick.<br \/>\nSo we have to watch that as we cook.<br \/>\nSo I am right at 370.<br \/>\nSo that\u2019s a good place to be.<br \/>\nI\u2019m going to put my pie in.<br \/>\nRight dead center is where we want it.<br \/>\nAnd we\u2019ll close it up and let it bake watching the temperature.<br \/>\nWell, we\u2019ve been at it for about 20 minutes now, maybe 25.<br \/>\nThe temperature has dropped a little bit.<br \/>\nI am down at about 300 degrees.<br \/>\nNow kind of got to make a decision at this point whether I want to add some charcoal to it or just keep cooking.<br \/>\nBut I think we\u2019ll take a quick look at it and just kind of make a determination from there.<br \/>\nNow let me tell you that every time we lift this lid up we\u2019re going to lose heat, we\u2019re going to lose cooking time.<br \/>\nSo I don\u2019t want you to take it lightly that we\u2019re just going to open up to lid to peek because that\u2019s not really what we want to do but because I\u2019m filming this for you guys I want you to get an idea of what the pie looks like at this particular point and to see if we\u2019re getting any cooking actually happening here.<br \/>\nSo let\u2019s take a peek at this.<br \/>\nOh, okay, look at\u2026so we\u2019ve got some browning going on.<br \/>\nStarting to bubble on the outside.<br \/>\nI still got a good amount of coals in there.<br \/>\nSo I\u2019m going to let this just continue as it is.<br \/>\nI\u2019m not going to take the extra time to put some new charcoal in there because I don\u2019t think I\u2019m going to need it.<br \/>\nThis cook should take about 45 to 55 minutes, somewhere around there.<br \/>\nThat\u2019s what I\u2019m shooting for.<br \/>\nAnd we\u2019ll look at it a little bit later.<br \/>\nThe temperature dropped about 8 degrees and just came right back up.<br \/>\nSo I\u2019ve got a lot of heat in there.<br \/>\nThat\u2019s a good sign.<br \/>\nWell, we are right about the 1 hour mark and I can smell that mango peach buckle that we\u2019re cooking here.<br \/>\nSmells absolutely phenomenal.<br \/>\nAnd let\u2019s take a look and see how we did.<br \/>\nOh wow.<br \/>\nLook at that.<br \/>\nAnd so just by looking at this pie, you know, we have this beautiful crust here and it is definitely done.<br \/>\nI\u2019ve got some boiling and bubbling inside the pie.<br \/>\nIt tells me that that\u2019s done also.<br \/>\nAnd I\u2019m ready to pull it.<br \/>\nSo our pie is going to be extremely hot because it\u2019s a cast iron pie pan.<br \/>\nMake sure you have a really good heavy-duty pair of gloves.<br \/>\nWhen you are reaching across the coals, this pie iron is at 370 degrees it\u2019s screaming hot and just very carefully lift it out and put it where it needs to go.<br \/>\nSo there\u2019s our mango peach buckle pie.<br \/>\nAnd I think you\u2019ll agree that it looks absolutely phenomenal.<br \/>\nI just got this great color to it, lot of interesting contours in there and contrast.<br \/>\nIt\u2019s too hot to cut right now.<br \/>\nSo you know it\u2019s late.<br \/>\nI\u2019m going to wait until the morning and we\u2019ll have it for tomorrow.<br \/>\nWell, it\u2019s the official time of reckoning.<br \/>\nI\u2019ve actually managed to hold the family at bay all day today to save this pie and slice it just for you guys.<br \/>\nIt was not an easy task.<br \/>\nLet\u2019s see how we did.<br \/>\nI guess there\u2019s no easy way to do this.<br \/>\nI\u2019m just going to cut it up in pieces.<br \/>\nNice flaky crust.<br \/>\nThat chunks of mango and peach in there.<br \/>\nOh yeah.<br \/>\nOf course, you guys will probably forgive me if I don\u2019t bring out the vanilla ice cream to go with this.<br \/>\nBut I think we have ourselves a
