style=\"text-align: justify;\">\nPresenter:<br \/>\nI hope you like salmon because that\u2019s what\u2019s on the menu today.<br \/>\nA fresh Atlantic salmon filet.<br \/>\nIt\u2019s about a 3-pounder that\u2019s going on our Island Grillstone and we\u2019re going to be accompanying that with a beautiful grilled Japanese eggplant.<br \/>\nGary House with the outdoor cook Cooking Everything Outdoors show, I hope you try this at home.<br \/>\nSo our salmon is going to be seasoned with a fresh herb seasoning salt that we\u2019re going to make right now.<br \/>\nSo, to make our fresh herb seasoning salt we\u2019re going to need some fresh parsley, some fresh sage.<br \/>\nI have thyme.<br \/>\nAnd I also have some fresh rosemary and just a little bit of marjoram that I\u2019ve added in there.<br \/>\nAlso need some fine sea salt and then zest of a lemon.<br \/>\nNow, ideally you\u2019re going to want enough herbs to make about a cup finely chopped, that\u2019s a ton and I\u2019m not going to make that much.<br \/>\nI just don\u2019t have that much fresh herbs in my garden, but I want to get as much of the leaves off of the stems as possible.<br \/>\nThe thyme, I\u2019m going to leave on the stem.<br \/>\nAnd some warm parsley here.<br \/>\nRosemary, fresh, just feel that against the growth.<br \/>\nAnd then our sage leaves.<br \/>\nI\u2019m going to pinch the stems off here.<br \/>\nAnd just get everything and get a good roll on it and take a sharp chef\u2019s knife and you\u2019re just going to start working your way through all of this.<br \/>\nMultiple times.<br \/>\nSo when you\u2019ve got your herbs diced up enough and stuff chopped up, then you want to pick them in a bowl and a caveat here is that if it\u2019s windy do it quickly because I\u2019ve already had some blow away.<br \/>\nSo, to our fresh herbs I want to add the zest of 1 lemon as much as possible.<br \/>\nNow, at this point you need to decide how much salt you want in your fresh herb seasoning salt.<br \/>\nAnd I usually go for 1 in 1 ratio.<br \/>\nYou can go for 2 in 1 which would be 2 cups of salt and 1 cup fresh herbs.<br \/>\nSo, for me, I\u2019m going to go with about a cup of salt.<br \/>\nAnd it\u2019s about a 1 to 1 ratio here.<br \/>\nOf course, this is going to weak out a lot of moisture out of the herbs and we\u2019re going to use this to accent our Japanese eggplant also.<br \/>\nOkay, our lemon is prepped.<br \/>\nWe have all of our slices.<br \/>\nHere you can see we have a beautiful filet, fresh Atlantic salmon.<br \/>\nAnd that\u2019s 3, yeah, about 3 pounds.<br \/>\nBut I\u2019m going to trim it up and make it so it, number one, it fits my Island Grillstone which I\u2019m going to be cooking it on.<br \/>\nIf you don\u2019t have an Island Grillstone, then you can put it on a tray and put some parchment paper down and cook it that way, works perfectly fine.<br \/>\nThe trims that I\u2019m going to do here is not going to be wasteful trims, but I\u2019m going to take part of the tale off.<br \/>\nAnd then I want to take some of these belly fat off.<br \/>\nAnd all this is going to be saved because I\u2019m going to make some soup later on and this is going to be in that soup.<br \/>\nSo the belly fat is here.<br \/>\nCertainly, it\u2019s flavorful, but it\u2019s not what we want in our salmon today.<br \/>\nWe\u2019re just going to cut that belly fat off and trim it off there nice and neatly.<br \/>\nSo now we have our salmon filet trimmed up where we want it.<br \/>\nAnd what I want to do now is double check to make sure I don\u2019t have any more pin bones in here.<br \/>\nAnd it\u2019s bone free.<br \/>\nYou can see all the bones have been removed.<br \/>\nAnd you can just run your finger across there and you can tell if there\u2019s any bones left.<br \/>\nAnd we just don\u2019t want any bones.<br \/>\nNow looking at this what I want to do is, I want to make some slices and what I\u2019m looking for is about 1 inch piece.<br \/>\nAnd I want to slice this to the skin, but I don\u2019t want to go through the skin.<br \/>\nDo this all the way across my filet.<br \/>\nReally wouldn\u2019t hurt if it came up a little short of the skin.<br \/>\nAnd in fact, once we\u2019ve cut this it\u2019s going to weaken the whole filet and makes it somewhat challenging to move around.<br \/>\nAnd so there we go.<br \/>\nSo we\u2019re going to be careful taking this and transferring it to our Grillstone.<br \/>\nActually, I have a couple of spatulas I\u2019m going to get in there and do this with.<br \/>\nNow this is where our lemons come home.<br \/>\nAnd I want to very carefully insert a lemon slice in each piece here.<br \/>\nSo now that our salmon has lemons in it I want to take and drizzles some olive oil over it.<br \/>\nAnd then I want to take our fresh herb salt seasoning which is nice and I want to sprinkle that over the top here.<br \/>\nThat\u2019s ready to go.<br \/>\nAnd I\u2019m going to set that aside for just a couple of minutes so I can prepare the eggplant.<br \/>\nSo here\u2019s just a couple of Japanese eggplants and just going to take the ends off and I want to slice it in half.<br \/>\nAnd slice it in half one more time.<br \/>\nSo here we have our Japanese eggplant wedges, some olive oil.<br \/>\nGet this coated really well.<br \/>\nAnd I want to apply my seasoning.<br \/>\nSo now that I have everything prepped it\u2019s time to put it on the grill.<br \/>\nNow the Island Grillstone has been preheating for quite a while now.<br \/>\nSo it\u2019s really, really hot.<br \/>\nI want to oil the grill.<br \/>\nSome nice oil on there.<br \/>\nMake sure we\u2019re coated up so we don\u2019t stick on it.<br \/>\nBailey is here thinking she\u2019s going to get something.<br \/>\nNow, the hard part is getting it onto the grill.<br \/>\nSo I\u2019m using 2 spatulas here and we\u2019re just going to lift and place.<br \/>\nThat is a beautiful thing.<br \/>\nSo at the same time I want to get my eggplant on.<br \/>\nI\u2019m trying to get it so I can get some grill marks on there.<br \/>\nEggplant won\u2019t take long.<br \/>\nSalmon won\u2019t take long.<br \/>\nSo we\u2019ll keep an eye on all of this.<br \/>\nMake sure I\u2019m down to low temp.<br \/>\nIt\u2019s going to be cooking 350-ish.<br \/>\nSo about 3 minutes into this.<br \/>\nI did flip a couple of the eggplants already.<br \/>\nI\u2019m going to flip the others.<br \/>\nJust making sure I get those grilled marks on there and it\u2019s coming along okay.<br \/>\nIt\u2019s not releasing as nice as I would have liked, but, you know what, it\u2019s still going to be pretty darn tasty.<br \/>\nNow, eggplant, you don\u2019t want to overcook.<br \/>\nAt least I don\u2019t.<br \/>\nI still like a little bit of al dente.<br \/>\nAnd you can see this beautiful salmon.<br \/>\nIt\u2019s cooking from the bottom up, starting to firm up here and get a little translucent.<br \/>\nSo we\u2019ll close this up for another 3 more minutes and I\u2019ll pull the eggplant and we\u2019ll finish out the salmon until that\u2019s done.<br \/>\nLet\u2019s get our eggplant pulled.<br \/>\nUh-oh!<br \/>\nOh, look at that one.<br \/>\nThere we go.<br \/>\nThere is our eggplant, Japanese eggplant, cooked to about where I like it.<br \/>\nNot soggy.<br \/>\nJust got a little bit of bite into it.<br \/>\nSo let\u2019s set those aside and we\u2019ll finish up our salmon.<br \/>\nOkay, so our salmon should be done.<br \/>\nLook at that.<br \/>\nJust take a look here and still a little\u2026yeah, it\u2019s breaking a little bit.<br \/>\nI\u2019m pretty comfortable saying that this is about where I want it.<br \/>\nI don\u2019t want it so dried out.<br \/>\nIt\u2019s not going to have any flavor or taste.<br \/>\nAnd we want to take some of that white fat off.<br \/>\nIt\u2019s not appealing to a lot of people.<br \/>\nBut for the most part it\u2019s just a little bit of flavor.<br \/>\nSo I\u2019m pretty comfortable with that.<br \/>\nMaybe just we\u2019ve been undercooked in the middle.<br \/>\nBut I think we\u2019re ready to pull it.<br \/>\nSo let\u2019s pull our salmon.<br \/>\nCall it dinnertime.<br \/>\nThere we go.<br \/>\nOh my Gosh.<br \/>\nBiggest splatter I have.<br \/>\nAnd it barely fits.<br \/>\nAnd there you go.<br \/>\nWow.<br \/>\nAlright, I\u2019d say it was a huge success.<br \/>\nSo I have fresh herb seasoned lemon and salmon.<br \/>\nWe have fresh herbed Japanese eggplant all on the grill using the
