justify;\">Presenter:<br \/>\nHey, everyone, I\u2019m going to show you how to make foil wrapped vegetables in the fire pit on the Cooking Everything Outdoors show.<br \/>\nGary House with the outdoor cook Cooking Everything Outdoors show, I hope you try this at home.<br \/>\nSo I want to talk to you a little bit about my fire pit setup.<br \/>\nAs you can see here I have just retaining block stones, or retain stone block, that I\u2019ve knocked the lip off of.<br \/>\nI\u2019ve used 36 stones to give me the permit of my fire pit.<br \/>\nAs far as wood goes I\u2019m using almond or if you live here amond.<br \/>\nAnd these are really 3-4-year dried almond logs that I\u2019m using in it.<br \/>\nAnd I think it produces a nice, sweet, hardy smoke and a really good charcoal.<br \/>\nBut it\u2019s very similar to oak, in my opinion.<br \/>\nIt retains its heat and substance for a long time.<br \/>\nUsing about 6 logs here to get my charcoal base and I\u2019ll be adding a log as we go throughout the cooking process.<br \/>\nSo we have a good coal base working here.<br \/>\nAnd then I have my logs building up more coals.<br \/>\nProblem is, is right now that that\u2019s just such an intense heat that I can\u2019t really cook over it.<br \/>\nSo I\u2019m going to move my coal generating logs away, get my basic coals here spread out so that I can cook over it without burning my food.<br \/>\nAnd then I\u2019m going to make sure we keep those logs going because I\u2019m going to need coals throughout this cook.<br \/>\nSo there\u2019s a nice base of coals to start cooking with.<br \/>\nFoil wrapped potatoes with a twist.<br \/>\nThat\u2019s what we\u2019re talking about right now.<br \/>\nAnd what I have here are two large russet potatoes.<br \/>\nI have an onion.<br \/>\n4 pads of butter, about 2 pads per potato is what I like.<br \/>\nA couple teaspoons of olive oil.<br \/>\nWe won\u2019t use all of it.<br \/>\nAnd then I have my favorite bake potato rub here which is basically tablespoon of parsley, 2 tablespoons of garlic salt and about a teaspoon a fresh coarse black pepper.<br \/>\nYou\u2019ll also need 2 large sheets of heavy-duty aluminum foil.<br \/>\nNo ordinary potatoes these are.<br \/>\nI got a method to our madness.<br \/>\nNow, I try to find the flattest side which is almost impossible.<br \/>\nAnd what I want to do with my potatoes is cut, not all the way through, about 3 quarters of the way through.<br \/>\nAnd I\u2019m going to give myself some nice wages there.<br \/>\nKeep checking to see how you are doing on the cutting.<br \/>\nDon\u2019t go all the way through, we\u2019re going to be in trouble.<br \/>\nGet close to your fingers, rotate.<br \/>\nThat\u2019s what we\u2019re looking for.<br \/>\nWe\u2019re going to be fanning our potatoes.<br \/>\nSo I\u2019m going to make sure we get enough of a cut in there to be able to do that.<br \/>\nSo double-check check double check.<br \/>\nGive it a little bit more of a cut.<br \/>\nI just don\u2019t want to go through.<br \/>\nHere we go.<br \/>\nNow we need to prepare our onion.<br \/>\nAnd I will just take the ends off of this onion.<br \/>\nCut it in half.<br \/>\nGive it a good peel.<br \/>\nOkay, that\u2019s what we do with this aromatics right into the fire.<br \/>\nSo what I want are some small slices.<br \/>\nAnd I almost would recommend, and I try to do this as best as possible, is cut them at a bit of an angle so that we can get them the wedge in better.<br \/>\nSo that\u2019s what we\u2019re going to do.<br \/>\nWe\u2019re going to wedge them in between our slices.<br \/>\nSometimes you might sacrifice a little bit of onion, backwards wedge, if you will, but that\u2019s what we\u2019re looking for.<br \/>\nI find it easier to prepare the potato on the foil so that way I\u2019m not moving it too much.<br \/>\nAnd just all we want to do is take our slices and work them in as best we can into our little sliver there.<br \/>\nAnd as you go it\u2019s going to get tighter and tighter, but just keep working it.<br \/>\nI\u2019m going to stop that one right there I\u2019ve got this little humpbacked camel.<br \/>\nSo we\u2019re going to drizzle a little bit of our oil on there.<br \/>\nI want a good coating of our seasoning.<br \/>\n2 pads of our better.<br \/>\nAnd they can go anywhere but we\u2019ll try to get them on top.<br \/>\nI\u2019m going to start wrapping this bad boy up.<br \/>\nOkay, our other vegetable packet that I\u2019m going to be preparing is going to be zucchini and some yellow summer squash, some large crimini mushrooms, and then a yellow onion, little olive oil.<br \/>\nAnd then seasoning, I haven\u2019t shared with you guys.<br \/>\nI have been using this for years on my vegetables, especially raw vegetables I really like it on, but spike gourmet all-natural seasoning.<br \/>\nAnd we\u2019re going to foil packet this and throw them on that fire pit.<br \/>\nTo get our vegetables going what I\u2019m going to be looking for is an onion base and these are just going to be ringlets.<br \/>\nKind of to help protect the squash and mushrooms from the direct heat of the coals but also to add a nice bit of\u2026like that\u2026a nice bit of sweetness.<br \/>\nSo, fairly decent 3\/8 to 1\/2 inch rings there.<br \/>\nAnd we\u2019ll just layer those, break them up and layer those in the bottom of our foil package here.<br \/>\nI\u2019m going to take our summer squash and trim that up.<br \/>\nI keep calling it summer squash, but I don\u2019t really think it is just a yellow squash.<br \/>\nAnd I want these in strips.<br \/>\nSo, basically, I\u2019m quartering it and taking a look at that\u2026actually, I\u2019m going to leave it like that.<br \/>\nYou don\u2019t want anything really, really small because it will get consumed in the heat of the fire pit very, very quickly.<br \/>\nSame thing with our zucchini, a little bit extra on this.<br \/>\nAnd these will shrink up quite a bit.<br \/>\nWe\u2019re starting to get a foil packet there.<br \/>\nI think I\u2019m just going to put one in there, and then I\u2019m going to take my crimini mushrooms.<br \/>\nAnd I\u2019m just going to stem those off.<br \/>\nBut often they just break off.<br \/>\nAnd I think we\u2019ll get about 3 in there.<br \/>\nA layer of seasoning.<br \/>\nLet\u2019s get our mushrooms in here.<br \/>\nAnd a layer of seasoning.<br \/>\nOlive oil, generously coat everything.<br \/>\nI have about over tablespoon of that.<br \/>\nAromatics for the fire pit.<br \/>\nSo I have 2 sheets of foil here.<br \/>\nAnd we just want to take and meet them in the middle making what they refer to as a tent.<br \/>\nIt\u2019s really just a packet.<br \/>\nI\u2019m going to grab one sheet.<br \/>\nThere we go.<br \/>\nAnd make my first packet.<br \/>\nSeal up the end and make sure everything is in there.<br \/>\nGot good and sealed up nice and tight.<br \/>\nI am going to flip it over.<br \/>\nWe\u2019ll do the same thing again.<br \/>\nAnd these will take 20, maybe 30 minutes tops to cook in the fire pit because it\u2019s going to be really, really hot in there.<br \/>\nSo we\u2019ll have to time that with everything else.<br \/>\nWith our potatoes cooking, ribs going, it\u2019s time to get our other vegetables going.<br \/>\nNow I don\u2019t want to put these directly over the hot coals.<br \/>\nI\u2019m going to put it right in the middle where I\u2019ve got heat from all sides and heat from the ash, which is really warm in that spot.<br \/>\nSo we\u2019re going to get a lot of really heat from the sides, from the bottom and then they\u2019re going to cook really fast.<br \/>\nSo we need to keep an eye on them.<br \/>\nCook them about 10 minutes and then flip them over for another 10 and then they come off.<br \/>\nI don\u2019t want them mush.<br \/>\nSo we\u2019re trying to avoid that.<br \/>\nWell, they sure smell good.<br \/>\nAnd they\u2019re going to be hot.<br \/>\nBe careful when you open them up.<br \/>\nThey should be juicy.<br \/>\nThey should have a lot of flavor built up in there.<br \/>\nYeah.<br \/>\nCertainly, smells good.<br \/>\nOh, boy.<br \/>\nAnd it looks good.<br \/>\nWell, it\u2019s officially party time.<br \/>\nAnd everything has turned out above and beyond my expectation.<br \/>\nThe food is just spectacular, if I don\u2019t say so myself.<br \/>\nHowever you want to serve this up you\u2019re welcome to.<br \/>\nBut it will be very difficult to resist because there\u2019s just something about fire pit cooking.<br \/>\nAnd it\u2019s so reminiscent of campfire cooking.<br \/>\nAnd you want to do this over and over and over again.<br \/>\nHey, I hope you enjoyed this episode of the Cooking Everything
