Cover with a lid and let sweat over medium heat for about 8 minutes or until the leeks soften.<\/li>\n<li class=\"instruction\">Stir occasionally.<\/li>\n<li class=\"instruction\">Peel, quarter the potatoes lengthwise and cut into 1\/4&#8243; cubes.<\/li>\n<li class=\"instruction\">Do not rinse the potatoes, as the starch will help to thicken the soup.<\/li>\n<li class=\"instruction\">Once the leeks have softened, add the potatoes and stir to combine.<\/li>\n<li class=\"instruction\">Next, add approximately 3 cups of hot stock just to cover the ingredients, adding more if necessary, just to cover.<\/li>\n<li class=\"instruction\">Bring the soup to a simmer.<\/li>\n<li class=\"instruction\">Cover and let cook over medium-low heat until the potatoes have cooked through.<\/li>\n<li class=\"instruction\">Remove from heat and mash until you reach a consistency of Pea Soup.<\/li>\n<li class=\"instruction\">Add more hot stock if needed to thin.<\/li>\n<li class=\"instruction\">Ladle into your [url href=&#8221;http:\/\/www.cooking-outdoors.com\/how-to-make-a-beer-bread-soup-bowl.html&#8221; target=&#8221;_blank&#8221;]Beer Bread Soup bowl[\/url].<\/li>\n<li class=\"instruction\">Add chopped chives and serve!<\/li>\n<\/ol>\n<\/div>\n<\/div>\n<div class=\"ERNutrition\"><\/div>\n<div class=\"endeasyrecipe\" style=\"display: none;\">3.2.1311<\/div>\n<\/div>\n","protected":false},"excerpt":{"rendered":"<p>Dutch oven Leek and Potato Soup Recipe Cooking Everything Outdoors newest video release Here is the direct link on YouTube: Leek and Potato Soup This recipe is adapted from a Rouxbe.com recipe.
