She writes a daily blog\u00a0about farm life in\u00a0East Africa. <\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"font-family: Georgia;\"><img loading=\"lazy\" decoding=\"async\" class=\"size-thumbnail wp-image-53 alignnone\" style=\"border-right: 2px solid black; border-width: 2px; border-style: solid; border-color: black; margin: 10px;\" title=\"South African Potjiekos\" alt=\"South African Potjiekos\" src=\"http:\/\/www.cooking-outdoors.com\/wp-content\/uploads\/2008\/06\/7-close-up-of-potjie-pot-150x150.jpg\" width=\"150\" height=\"150\" \/><\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"font-family: Georgia;\">Potjiekos is a South African dish which is basically a meat and\/or vegetable stew cooked in a 3 legged cast iron pot over an outdoor fire. The word \u2018potjiekos\u2019 is an Afrikaans word (one of the languages spoken in South Africa) which directly translated means \u2018pot food\u2019 and is pronounced \u201cpoy-key-cos\u201d.\u00a0<\/span><\/p>\n<div style=\"text-align: justify;\"><span style=\"font-family: Georgia;\">The only thing limiting you when it comes to making potjiekos is your imagination ! You could have a lamb\/mutton, beef, pork, chicken or even a seafood potjiekos. You can add whatever vegetables you happen to have on hand, and liquids added can include stock, wine or even beer ! Potjiekos curries are also popular, as is \u201cpot brood\u201d which means \u201cpot bread\u201d and is bread baked directly in the pot.<\/span><\/div>\n<p style=\"text-align: justify;\"><span style=\"font-family: Georgia;\">The pot which I use measures 23 cm (9 \u201c) in diameter and is about 22 cm (8.6\u201d) high without it\u2019s lid on. (It is very heavy, as you can imagine !)<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"font-family: Georgia;\"><img loading=\"lazy\" decoding=\"async\" class=\"size-thumbnail wp-image-57 alignnone\" style=\"margin: 10px; border: 2px solid black;\" title=\"South African Potjiekos\" alt=\"South African Potjiekos\" src=\"http:\/\/www.cooking-outdoors.com\/wp-content\/uploads\/2008\/06\/4-close-up-of-pot-on-fire-150x150.jpg\" width=\"150\" height=\"150\" \/><\/span><\/p>\n<p style=\"text-align: justify;\" align=\"justify\">To make a fire I usually just use wood (you could use charcoal if you prefer) and I start the potjiekos when the fire is still quite hot (but not too hot) \u2013 this is when I usually brown the meat and onions for example, and then once the flames have cooled down a little, I add the rest of the ingredients and leave the potjiekos to simmer over the smoldering coals until everything is nicely cooked and the flavors have all developed.<\/p>\n<p style=\"text-align: justify;\" align=\"justify\">Here is one of my favorite potjiekos recipes -:<\/p>\n<p style=\"text-align: justify;\">\u00a0<em>Beef & Vegetable Potjiekos<\/em><\/p>\n<p style=\"text-align: justify;\" align=\"justify\">\u00a03 tbsp Flour<\/p>\n<p style=\"text-align: justify;\">\u00a01 tbsp Mixed Herbs<\/p>\n<p style=\"text-align: justify;\" align=\"justify\">Olive Oil<\/p>\n<p style=\"text-align: justify;\" align=\"justify\">3 Onions, cut into wedges<\/p>\n<p style=\"text-align: justify;\" align=\"justify\">8 cloves Garlic, sliced<\/p>\n<p style=\"text-align: justify;\" align=\"justify\">1 x 400 gm (14 oz) tin peeled Tomatoes<\/p>\n<p style=\"text-align: justify;\" align=\"justify\">2 Potatoes, cut into wedges<\/p>\n<p style=\"text-align: justify;\" align=\"justify\">4 Carrots, sliced into rounds<\/p>\n<p style=\"text-align: justify;\" align=\"justify\">1 bunch Leeks, (tops removed), sliced into rounds<\/p>\n<p style=\"text-align: justify;\" align=\"justify\">3 large Zucchini (Courgettes), sliced into rounds<\/p>\n<p style=\"text-align: justify;\" align=\"justify\">3 cups Beef Stock (I use 2 stock cubes in boiling water)<\/p>\n<p style=\"text-align: justify;\" align=\"justify\">Salt & Pepper to taste<\/p>\n<p style=\"text-align: justify;\" align=\"justify\">\u00a0<img loading=\"lazy\" decoding=\"async\" class=\"size-thumbnail wp-image-54 alignnone\" title=\"South African Potjiekos\" alt=\"South African Potjiekos\" src=\"http:\/\/www.cooking-outdoors.com\/wp-content\/uploads\/2008\/06\/1-the-ingredients-150x150.jpg\" width=\"150\" height=\"150\" \/>\u00a0 <a href=\"http:\/\/www.cooking-outdoors.com\/wp-content\/uploads\/2008\/06\/3-the-veggies-are-added-in-layers.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-thumbnail wp-image-56 alignnone\" title=\"South African Potjiekos\" alt=\"South African Potjiekos\" src=\"http:\/\/www.cooking-outdoors.com\/wp-content\/uploads\/2008\/06\/3-the-veggies-are-added-in-layers-150x150.jpg\" width=\"150\" height=\"150\" \/><\/a><\/p>\n<p style=\"text-align: justify;\"><span style=\"text-decoration: underline;\"><strong><img loading=\"lazy\" decoding=\"async\" class=\"size-thumbnail wp-image-55 alignnone\" title=\"South African Potjiekos\" alt=\"South African Potjiekos\" src=\"http:\/\/www.cooking-outdoors.com\/wp-content\/uploads\/2008\/06\/2-browning-the-meat-onions-150x150.jpg\" width=\"150\" height=\"150\" \/><\/strong><\/span><\/p>\n<p style=\"text-align: justify;\">Mix the flour & herbs together & toss the beef cubes in the mixture so that they are well coated. Next, pour some olive oil into your pot and fry the onions, garlic and the beef until browned. Add the tin of tomatoes and stir. (You can add some salt and pepper now, if you like.) Then layer the vegetables on top of the beef\/onion\/tomato mix, according to how long they take to cook. For this recipe I place them in the following order \u2013 potatoes, carrots, leeks, zucchini. Now pour the beef stock into the pot, add some more salt & pepper and close the lid.
