this is Gary House with Cooking Everything Outdoors show, and today, we\u2019re making pies on a Camp Chef Smoke Vault for the holidays.<br \/>\nAnnouncer:<br \/>\nGary House with the outdoor cook Cooking Everything Outdoors show, I hope you try this at home.<br \/>\nPresenter:<br \/>\nToday we\u2019re making 4 pies.<br \/>\nI\u2019m going to make a mixed berry crisp, a pumpkin pie, a cranberry apple pie, and a caramel apple crisp.<br \/>\nThese are very, very simple, not a lot of ingredients.<br \/>\nAnd, guys, you need to step up the plate because after I\u2019m done showing you this there\u2019s no excuse for you not making a pie this holiday.<br \/>\nTwo main things that I\u2019m using making these pies, a cast iron pie pan.<br \/>\nThis is a 10 inch.<br \/>\nIt\u2019s from Camp Chef.<br \/>\nAnd I\u2019m making all 4 of these pies in the Camp Chef Smoke Vault.<br \/>\nSo it\u2019s not just for smoking, it\u2019s a great baking tool.<br \/>\nI\u2019m going to show you how I do that.<br \/>\nOur first pie is a mixed berry crisp and we\u2019re going to make a crisp topping first.<br \/>\nVery, very simple.<br \/>\nWhat you need is 1 cup of quick oats.<br \/>\n1\/2 a cup of packed brown sugar.<br \/>\n1\/3 of a cup of whole all-purpose flour.<br \/>\nA teaspoon of cinnamon.<br \/>\nAnd a stick of softened butter, in this case maybe partially melted.<br \/>\nFirst, before we put the butter in there, we want to get this mixed up real quick.<br \/>\nIt\u2019s not anything that you have to be too careful about.<br \/>\nI quite often will do these in Ziploc bags.<br \/>\nIt makes it so much easier, but you can\u2019t really see that well on camera and it makes cleanup better.<br \/>\nSo get it roughly mixed up and let\u2019s get your butter in there and start incorporating the butter into the crisp mixture.<br \/>\nWhat we\u2019re looking for is a texture that\u2019s going to be crumbly.<br \/>\nSometimes you just got to get your hands in there preferably after you\u2019ve washed them.<br \/>\nJust keep mixing that up until it\u2019s all incorporated in there.<br \/>\nShow you how to mix the mixed berry filling next.<br \/>\nTime to make our filling.<br \/>\nThis is a mixed berry, it\u2019s frozen that I\u2019ve since defrosted and drained.<br \/>\nIt\u2019s 2 bags.<br \/>\nI have 1 cup of sugar.<br \/>\n1\/2 a cup of brown sugar&#8211; or excuse me, 1\/3 a cup of brown sugar.<br \/>\nA teaspoon of cinnamon.<br \/>\nAnd a generous teaspoon of vanilla.<br \/>\nThis recipe works best when you\u2019ve completely defrosted the berries and you\u2019ve drained them several times.<br \/>\nYou don\u2019t have to rinse them, that\u2019s not necessary but it tends to get a little liquidy as it goes.<br \/>\nBut you can see that gooey mess right there.<br \/>\nIt\u2019s ready to go.<br \/>\nNow it\u2019s time to put our piecrust in our pie tin.<br \/>\nTime to get our piecrust ready.<br \/>\nA little Crisco, paper towel, apply nice coating to your pie tin.<br \/>\nThis is not like seasoning it.<br \/>\nThis is actually putting a layer on there to keep everything from sticking.<br \/>\nNow, it\u2019s entirely up to you if you want to make your own piecrust.<br \/>\nI\u2019m not going to go through that lesson.<br \/>\nIt\u2019s super, super simple.<br \/>\nI\u2019ve actually got cheddar piecrust for you because I know a lot of you like to use it.<br \/>\nIt doesn\u2019t quite have that wonderful flavor of a fresh piecrust but stuffing in the inside of this and on the top of this is going to more than make up for it.<br \/>\nIf you can get it all off without ruining it like I almost did.<br \/>\nAnd simply lay our piecrust in the pie tin.<br \/>\nWork it up the sides, fix our little hole there.<br \/>\nAlways start with the bottom, work your up the sides, fix or repair any damaged parts, get that set in place.<br \/>\nSimple as that.<br \/>\nLet\u2019s take our mixed berry filling and get that in there.<br \/>\nDoes that look gorgeous or what?<br \/>\nNow, we\u2019re going to take our crisp topping and we are just, now that the consistency is all blended, the butter\u2019s all mixed in with the quick oats and brown sugar, we\u2019re just going to layer that on the top.<br \/>\nNow, traditionally, crisp don\u2019t have piecrust but that\u2019s the way I like them.<br \/>\nEvenly coated on all the surfaces and we\u2019re done.<br \/>\nPie number 1 ready to go.<br \/>\nPie number 2, pumpkin pie.<br \/>\nYou can use cheddar pumpkin pie mix in a can or you can do like I did last night.<br \/>\nI took the Halloween pumpkin that was leftover and they were small.<br \/>\nThese are pie pumpkins.<br \/>\nThey\u2019re perfect.<br \/>\nThey\u2019re a little bit sweeter.<br \/>\nI just cut it in quarters, seeded it, baked it for about 1 hour, scooped out the goodies and then I pureed it in a food processor just to, you know, make it a little easier on me.<br \/>\nSo what I came up with is about 3 cups here.<br \/>\nThis recipe is really as basic as you can get.<br \/>\nIt was handed down to me by a friend.<br \/>\nI have no idea where the recipe came from, but it\u2019s very, very simple.<br \/>\nAbout 3 cups of pumpkin pie filling.<br \/>\nWe have 1\/2 a cup of brown sugar.<br \/>\nOh, I\u2019ll just add these in.<br \/>\n1 cup of regular sugar.<br \/>\nI have a teaspoon of allspice, teaspoon of ginger, teaspoon of clove, salt a teaspoon, cinnamon a tablespoon 1, 4 eggs, beaten, 1 can of evaporated milk.<br \/>\nAnd we are going to blend all this together without making a mess and we\u2019re going to put it in our pie pan.<br \/>\nSo once you have your cheddar piecrust in your cast iron pie pan, then we can start ladling in our pumpkin mixture.<br \/>\nThere\u2019s going to be more than that\u2019s going to fit in the pie tin with the 3 cups of pumpkin.<br \/>\nSo you\u2019re going to be able to save this and make a mini pumpkin pie and such.<br \/>\nBut basically we\u2019re just going to fill this up now and take advantage of some of this wonderful pumpkin spice flavor that is going to be a definite crowd pleaser in your home.<br \/>\nThis is going to swell up a little bit as it bakes, so don\u2019t go quite to the top of your pie pan.<br \/>\nI\u2019m going to say about 3\/4 of an inch from the top, we\u2019re going to stop right there.<br \/>\nSo that\u2019s pumpkin pie, pie number 2 and super simple.<br \/>\nPie number 3 coming up.<br \/>\nPie number 3 is a cranberry apple crumble.<br \/>\nIt\u2019s really good.<br \/>\nSo first thing we\u2019re going to do is we\u2019re going to prepare the apples and I already did that.<br \/>\nIt basically is wash them, skin them, core them, and slice them nice and thin like that.<br \/>\nAnd I have about 5 Gala apples here.<br \/>\nIt\u2019s probably more than I\u2019m going to need in piecrust because I\u2019m only making a 10 inch.<br \/>\nIf it was a 12 inch, it would probably fit a little bit better.<br \/>\nBut at this point, overkill\u2019s okay because you can always make another pie.<br \/>\nAbout 8 ounces of fresh cranberries.<br \/>\nAnd a 1\/2 a cup of firmly packed brown sugar.<br \/>\nAnd this is 3 tablespoons of all-purpose flour.<br \/>\nA teaspoon of cinnamon.<br \/>\n1\/8th a teaspoon of salt.<br \/>\nAnd 2 and 1\/2 tablespoons of lemon juice.<br \/>\nNow, let me get this mixed up here real quick and then I\u2019ll add the lemon juice.<br \/>\nIt\u2019s going to coagulate on me all and the flour on the top.<br \/>\nI\u2019m going to give this a stir and this is going to be our filling and frankly, I have enough for about 2 pies here.<br \/>\nOur crumble topping is pretty simple.<br \/>\nIt\u2019s 3\/4 a cup of all-purpose flour.<br \/>\n1\/4 cup of brown sugar.<br \/>\n1\/2 a teaspoon of cinnamon.<br \/>\nAnd 1\/2 a cup of coarse chopped pecans.<br \/>\nAnd a 1\/4 teaspoon of salt.<br \/>\nWe just need to mix this up real quick here.<br \/>\nAnd this is a hand mix because I\u2019m going to be adding some butter here in a second with my hands, so get that all mixed up.<br \/>\nAdd the butter after you\u2019ve mixed your pecan flour mixture up.<br \/>\nIt\u2019s coated.<br \/>\nAnd then we want to take our softened butter, it\u2019s a 1\/2 a stick cut up into&#8211; it\u2019s 1\/2 inch pieces.<br \/>\nAnd then we need to crumble that up into our flour mixture.<br \/>\nWork that together until the butter\u2019s been incorporated into the flour giving it a crumble type of texture, crumbly texture.<br \/>\nNow, it\u2019s time to put the pie together.<br \/>\nNow, get your cheddar piecrust or your homemade piecrust and get it in your pie tin.<br \/>\nWe\u2019re going to add our filling next.<br \/>\nNow, keep in mind when this bakes that there will be some compression as the apples and cranberries soften up.<br \/>\nSo it\u2019s going to be okay if we really pack this in and fill it up.<br \/>\nDon\u2019t be shy here.<br \/>\nActually, it looks like I\u2019m going to need the whole thing.<br \/>\nJust guessed that there are just a bit.<br \/>\nSo let\u2019s get this in there, spread around.<br \/>\nNow, we want to take another 1\/2 a stick of butter.<br \/>\nThat\u2019s pretty good.<br \/>\nAnd just dot the top of that.<br \/>\nLike so.<br \/>\nNow, we have our butter dotted on top of our filling and we\u2019re going to take that crumble that we made and we\u2019re going to start sprinkling that all around.<br \/>\nThe difference between a crumble and a crisp is pretty much oatmeal.<br \/>\nI love a crisp but this crumble with the pecans is going to give it a really nice crunch, somewhat, if you will, as if it was a crisp.<br \/>\nOkay, little extra piecrust there.<br \/>\nAnd that\u2019s basically it.<br \/>\nAlright, that\u2019s pie number 3.<br \/>\nPie number 4.<br \/>\nIt is my apple cranberry crisp pie.<br \/>\nKind of a blend of a lot of different things but first thing we\u2019re going to start with is our crisp mixture.<br \/>\nWhat I have here is 2 cups of quick oats.<br \/>\nI have 1 cup of packed brown sugar.<br \/>\n1 cup of flour.<br \/>\n1 and 1\/2 teaspoons of cinnamon.<br \/>\nAnd 1 stick of butter that we\u2019re going to blend in, but I want to get the flour mixture mixed up.<br \/>\nAnd this is a hand game, might as well go for it.<br \/>\nQuickly mixed up and we want to add our butter to make a crumble topping and that gets a little messy fun.<br \/>\nSo I\u2019m going to mix this up real quick.<br \/>\nSo this is our crumble topping and this is the way we want it to look.<br \/>\nI\u2019ve taken about a 1\/3 of it and reserved it onto the side.<br \/>\nI\u2019m going to take and we\u2019re going to put that in there and we\u2019re going to mix that up.<br \/>\nGet a good mix on that real quick.<br \/>\nOnce that\u2019s fairly coated, we\u2019re going to add our caramel.<br \/>\nNow, basically what these are, are Werther\u2019s caramel pieces of candy that I\u2019ve cut into thirds.<br \/>\nI\u2019ve taken about 20 of them and one of the things that I learned was that these things stick together once they\u2019re out of the wrapper.<br \/>\nSo I coat them lightly in flour and they don\u2019t stick.<br \/>\nI hope that\u2019s a good tip that you can use.<br \/>\nBut take those and get them in there.<br \/>\nAnd we\u2019re going to give those a good mix so that they\u2019re evenly dispersed throughout our apple mixture.<br \/>\nWe have a nice heavenly coat like that.<br \/>\nThat\u2019s it.<br \/>\nNow it\u2019s time to put our pie together.<br \/>\nSo, again, we\u2019re taking our cheddar piecrust and using that as the base for our pie.<br \/>\nThere\u2019s really a couple of ways to do this.<br \/>\nYou could take this crumble and you could put it in the bottom of your pie pan and use that as your base, but I just love it this way and that\u2019s the way I\u2019m going to do it for you guys here.<br \/>\nThe apple, just basically, gets packed in there with caramel bits.<br \/>\nAnd we want to stuff that as full as we possibly can, getting every bit of this in there especially those caramel bits.<br \/>\nOkay, so, this is I guess you would call a mile high apple pie.<br \/>\nGet that packed in there.<br \/>\nNow, we\u2019re going to take our apple cider, I have a 1\/2 a cup of apple cider and I\u2019m going to drizzle that over everything here.<br \/>\nWe have that.<br \/>\nWe\u2019re going to take the rest of our crumb topping and we\u2019re going to pack that gently over the top.<br \/>\nAll these crumbs and pieces that are falling all over the ground, Bailey\u2019s got it.<br \/>\nOkay, so that\u2019s what we\u2019re looking for.<br \/>\nNow, the final piece to this would be to put some more butter crumbled over the top, if you choose.<br \/>\nAnd we\u2019re ready to bake.<br \/>\nWe got 4 pies made and we\u2019re rocking and rolling.<br \/>\nSo over the course of a couple hours, you can tell by the way the sun\u2019s shifted through the shadows and I\u2019m still in the shadows, we\u2019ve managed to make 4 classic holiday pies.<br \/>\nWe made our mixed berry crisp, made a pumpkin pie, I have a cranberry apple pecan crisp topping&#8211; or excuse me crumble.<br \/>\nAnd here, we have an apple caramel crisp pie.<br \/>\nAnd I\u2019m going to put these in my Camp Chef after it\u2019s been preheated for about 15 minutes.<br \/>\nI\u2019m going to get it up to about 350-375.<br \/>\nAll 3 of these pies or 4 of these pies are going to cook for probably 45 minutes maybe an hour on the bigger one.<br \/>\nSo we\u2019ll be checking in on this.<br \/>\nNow, if you want these recipes, I want you to go to www.Cooking-Outdoors.com and I\u2019ll have those recipes listed there.<br \/>\nAnd let\u2019s get this warmed up.<br \/>\nOkay, we\u2019re at 350 degrees, been preheating this for a while.<br \/>\nNow, we need to get these pies in here and start baking.<br \/>\nSo I have my trays set up, 4 equal heights and they should just slide right in like it was nobody\u2019s business.<br \/>\nBe careful, it is hot.<br \/>\nAnd these are going to sneak in there.<br \/>\nWhew, that\u2019s a tight fit.<br \/>\nI made them too stuffy.<br \/>\nNo fear.<br \/>\nThere you go.<br \/>\n4 pies Camp Chef Smoke Vault.<br \/>\nGoing to let those bake for approximately 30 minutes as is and then I\u2019m going to take a quick look at them because I\u2019m probably going to have to foil them up because I don\u2019t want to burn my crusts or the crusts topping which is nothing unusual with pie baking.<br \/>\nSo see you in a bit.<br \/>\nWell, our pies are actually done now.<br \/>\nIt did take a little longer than I initially anticipated.<br \/>\nI forgot to calculate for the mass of the pies in the Smoke Vault.<br \/>\nWhat that means is, is the more you have in a small space the longer it\u2019s going to take to heat up that particular item that\u2019s in there.<br \/>\nSo if I had 1 pie in there, it would take 45 minutes; 4 pies closer to an hour and a half.<br \/>\nThey\u2019re pretty big pies.<br \/>\nBut I\u2019m pretty darn excited with how these turned out and I think you will be too.<br \/>\nLet\u2019s pull these out and take a look at them.<br \/>\nYou can see, they\u2019re bubbling.<br \/>\nThey\u2019re nicely browned, ready to come out.<br \/>\nThis is our beautiful pumpkin pie.<br \/>\nMixed berry crisp.<br \/>\nOur cranberry apple pecan crumble.<br \/>\nYou can see it bubbling away there.<br \/>\nAnd finally, the apple caramel
