class=\"ingredient\">[br]<\/li>\n<li class=\"ingredient\">1 pound 85\/15 ground beef<\/li>\n<li class=\"ingredient\">2 tablespoons canola oil<\/li>\n<li class=\"ingredient\">4 tablespoons barbecue sauce<\/li>\n<li class=\"ingredient\">1\/2 cup (8 tablespoons) onions, fried<\/li>\n<li class=\"ingredient\">2 hamburger buns<\/li>\n<li class=\"ingredient\">Barbecue rub, to taste<\/li>\n<\/ul>\n<\/div>\n<div class=\"ERInstructions\">\n<div class=\"ERInstructionsHeader\">Instructions<\/div>\n<div class=\"instructions\">\n<ol>\n<li class=\"instruction\">Preheat the grill to 325\u00b0 &#8211; 350\u00b0F.<\/li>\n<li class=\"instruction\">Soak the cedar planks for an hour in water and heat in the grill with cooking side down.<\/li>\n<li class=\"instruction\">For the macaroni salad, cook macaroni according to package directions.<\/li>\n<li class=\"instruction\">Once done, drain them completely.<\/li>\n<li class=\"instruction\">In a large bowl, combine celery, red onions, drained macaroni, olives, pimento, pickles, mustard, mayonnaise and mix well for the ingredients to blend.<\/li>\n<li class=\"instruction\">Season with salt and pepper.<\/li>\n<li class=\"instruction\">Refrigerate until serving.<\/li>\n<li class=\"instruction\">For steak fries, put together potato wedges, olive oil and creole seasoning in a ziplock bag and shake well.<\/li>\n<li class=\"instruction\">Brush the heated cedar plank\u2019s cooking side with canola oil (after taking out of grill).<\/li>\n<li class=\"instruction\">Arrange the wedges on the greased plank as shown in the video and place the plank on the grill rack.<\/li>\n<li class=\"instruction\">Grill for 35-40 minutes in low heat setting.<\/li>\n<li class=\"instruction\">For hamburgers, divide the meat to equal parts (1\/2 pound each) and make patties.<\/li>\n<li class=\"instruction\">Sprinkle desired quantity of bbq rub over the patties and rub for coating well.<\/li>\n<li class=\"instruction\">Brush the heated cedar plank\u2019s cooking side with canola oil (after taking out of grill) and place the patties over it.<\/li>\n<li class=\"instruction\">Place the planks over grill and cook until internal temperature reaches 150\u221e.<\/li>\n<li class=\"instruction\">Meanwhile toast the hamburger buns over the grill.<\/li>\n<li class=\"instruction\">Layer the patties on Transcript:<\/strong><br \/>\nPresenter:<br \/>\nHey, everyone, welcome to the Cooking Everything Outdoors show.<br \/>\nToday, we\u2019re celebrating Memorial Day.<br \/>\nWe\u2019re cooking three of my favorite things: barbecued hamburgers, spicy steak fries and macaroni salad.<br \/>\nAnd we\u2019ve got a hot cup of Joe going here.<br \/>\nSo stick with me, we\u2019re going to have some fun.<br \/>\nAnnouncer:<br \/>\nGary House with the outdoor cook Cooking Everything Outdoors show, I hope you try this at home.<br \/>\nPresenter:<br \/>\nOkay, first thing we\u2019re going to do is get our mac going.<br \/>\nUsing the Camp Chef Big Gas Grill 3 that received from www.OutdoorCooking.com and we\u2019re going to be using one of the side burners which is a 30,000 BTU burner.<br \/>\nSo it\u2019s not going to take long to get this water going.<br \/>\nSimply matter of turning on the propane, turning on the burner, turning on the igniter and, boom, I\u2019ve got flame.<br \/>\nSo I\u2019m going to crank that all the way up.<br \/>\nSo I have about a 1\/2 a pound of mac in my pot boiling right now, just about done.<br \/>\nSo I\u2019m going to get the rest of the ingredients going.<br \/>\nAnd what\u2019s going to go in that?<br \/>\nWell, a little salt and pepper, about an ounce of pimento, about 2 and 1\/2 ounces of sliced olives, mustard.<br \/>\nI\u2019m just going to add that as I deem necessary.<br \/>\nAbout 5 sweet pickles.<br \/>\n3 stalks of celery.<br \/>\nYou\u2019re probably going to put in about a 1\/2 a red onion, and, of course, mayo.<br \/>\nSo let\u2019s get all this prepped up real quick.<br \/>\nThat\u2019s just a matter of some slicing and dicing.<br \/>\nYou know, macaroni salad, mac salad, everybody\u2019s got their own flavor, their own style.<br \/>\nAnd this is just something that, you know, I put together.<br \/>\nI really got this recipe many, many years ago and I doubt very much it is the same as when I received it.<br \/>\nBut I really like it.<br \/>\nIt\u2019s a great treat to have, one of my favorites.<br \/>\nYou know, anytime I get some macaroni salad on my plate, I\u2019m a happy camper.<br \/>\nRight up there with my potato salad that I love so much.<br \/>\nAnd we\u2019re just going to, of course, you know, fairly chunky because I hate little bites of anything.<br \/>\nAnd not to cut my fingers in half.<br \/>\nI\u2019ve got an extra big piece there.<br \/>\nThat\u2019s looking pretty good, about what I like.<br \/>\nPut that in our mixing bowl.<br \/>\nAnd let\u2019s get this onion going.<br \/>\nGoing to need about 1\/2 of this.<br \/>\nRed onion has a nice sweet flavor that I like, but if you get too much in there, I think it could be somewhat overpowering.<br \/>\nAnd right about there.<br \/>\nLet\u2019s get this peeled off, not going to need that nasty outside skin going on there.<br \/>\nAnd just about like that.<br \/>\nYou may want to mince yours up, but then again it\u2019s all a personal preference on how you want to do this.<br \/>\nI\u2019ve come across so many flavor, you know, vinegar, sugar, various different additives to put to it.<br \/>\nI get my sweetness from the sweet pickles.<br \/>\nThat\u2019s what I happen to like in mine.<br \/>\nLet\u2019s check that mac real quick.<br \/>\nMm, perfect.<br \/>\nI\u2019m going to drain this.<br \/>\nWe\u2019re going to start mixing up the rest of it.<br \/>\nSo we\u2019ve got our mac out.<br \/>\nIt\u2019s draining a little bit.<br \/>\nI don\u2019t want to lose all of that moisture, but I definitely want some of that to stay in there and that is just heaven in a pot.<br \/>\nGet every little bit out of this thing.<br \/>\nNice thing about mac salad, you can make it the day before, couple days before.<br \/>\nIt\u2019s all really good.<br \/>\nSo we have our olives, just sliced and add those in there.<br \/>\nMy pimentos with a little bit of oil, add those in there.<br \/>\nAnd then I\u2019m going to chop up our sweet pickles, nothing fancy here.<br \/>\nAgain, I like mine chunky.<br \/>\nAnd I really like a good dab of sweetness in my mac.<br \/>\nI don\u2019t know what you prefer.<br \/>\nBut whatever mom or grandma\u2019s recipe handed down to you, I\u2019m sure this is absolutely perfect.<br \/>\nNice healthy bits of everything.<br \/>\nOne last one here.<br \/>\nNow, as far as moisture goes, that in itself is entirely optional also, as you know.<br \/>\nI had mac that is mayo mac.<br \/>\nThat\u2019s not what I like although I do obviously add macaroni to my mayonnaise&#8211; no, I actually add mayonnaise to my macaroni salad but it\u2019s not a real wet mix.<br \/>\nNow, let\u2019s get some mustard in here.<br \/>\nNow, this is probably going to be, to start with, I\u2019m probably going to go for about a tablespoon just to get things going there.<br \/>\nAnd then my mayonnaise.<br \/>\nJust a regular mayonnaise.<br \/>\nIt\u2019s not the light or Miracle Whip or anything like that.<br \/>\nThough I know some people like Miracle Whip in their mac salad.<br \/>\nLet\u2019s just get in there, better spoon I\u2019m thinking.<br \/>\nAnd probably, I\u2019m going to say that\u2019s about 6 tablespoons, right now.<br \/>\nLet\u2019s give this all a good blend.<br \/>\nSee how we\u2019re coming along there.<br \/>\nOnce I get this all mixed up, I\u2019m going to add my salt and pepper to it, at that point.<br \/>\nThat\u2019s actually as moist as I want it.<br \/>\nNo more, almost too much for me but that\u2019s going to absorb and solidify a little bit as it cooks.<br \/>\nSo we need to take a taste test here.<br \/>\nPlenty of mustard, plenty of everything else.<br \/>\nWe need to kick it up a bit with some salt and pepper.<br \/>\nAnd let\u2019s see how this goes.<br \/>\nYeah, that\u2019s looking good.<br \/>\nLet\u2019s give this a shot here and&#8211; good.<br \/>\nOkay, I\u2019m happy with this.<br \/>\nWe\u2019re going to roll it.<br \/>\nWe\u2019re going to cool it off and see what happens.<br \/>\nOkay, I think you missed, I missed the overhead.<br \/>\nNo, I got the overhead shot but I didn\u2019t get the straight on shot.<br \/>\nMy beautiful bowl of mac salad but it\u2019s really cool.<br \/>\nI apologize about that.<br \/>\nSo we\u2019ll see.<br \/>\nI\u2019m going to go get this in to fridge.<br \/>\nI\u2019m going to cool it down.<br \/>\nI\u2019m going to start putting together my spicy steak fries and my barbecued hamburger.<br \/>\nSpicy steak fries, I\u2019m looking to offset the sweetness of the barbecue burger and the little bit of sweetness in the mac.<br \/>\nSo what I\u2019m going to be using is Creole seasoning.<br \/>\nIt\u2019s got some heat, got a lot of flavor to it.<br \/>\nI\u2019m going to use a little bit of olive oil.<br \/>\nJust some regular russet potatoes, but cooking them on a cedar plank.<br \/>\nSo it\u2019s going to add a little bit of a unique smokiness to it.<br \/>\nYou\u2019ve seen me use these before and basically you just take a plank.<br \/>\nThese are beautiful cedar planks from my friends at the Grilling Plank SuperStore.<br \/>\nAnd I soaked it for about an hour, just regular old plain water.<br \/>\nAnd then, now what I\u2019m going to do is I\u2019m going to heat up my cooking side.<br \/>\nAnd what the cooking side is, is obviously the side that I\u2019m going to place my potatoes on.<br \/>\nSo this is going to go into my Camp Chef grill box.<br \/>\nAnd let me preheat that and I\u2019ll show you what to do.<br \/>\nGot my grill box preheating right now and it\u2019s going to start smoking quite a bit because there\u2019s last night\u2019s meal still on there.<br \/>\nSo what I\u2019m going to do and it\u2019s really, really simple and really fast, great for camping, great for, you know, being out there at a picnic, is we\u2019re just going to take the potatoes and I\u2019m going to wedge them because they\u2019re going to be large steak fries.<br \/>\nNow, you can do, you know, any different shape and configuration that you want.<br \/>\nNo great rule about this, but I want a fairly large, kind of the concept is almost like a potato skin.<br \/>\nYou know how you scoop that up and fill it with a bunch of goodies.<br \/>\nSo that I have a really large steak fry here and that\u2019s what I\u2019m looking for.<br \/>\nYou can see that right there.<br \/>\nIt\u2019s pretty, pretty simple.<br \/>\nSo 1\/2 and then 1\/2 again, just like that.<br \/>\nLet me get these sliced up, show you what to do next.<br \/>\nHey, I have my steak fries potato wedges in the bag.<br \/>\nWe\u2019re going to add a little bit of olive oil, just to coat, not a lot, maybe 2 tablespoons, a little bit.<br \/>\nThere we go.<br \/>\nLet\u2019s get these nice and mixed up.<br \/>\nYou know, the real reason I like this recipe, super easy, really fast.<br \/>\nI just love that.<br \/>\n3 ingredients: potatoes, olive oil, some Cajun seasoning.<br \/>\nDon\u2019t go overboard with the seasoning.<br \/>\nI\u2019ve done that before, \u2018Oh, a little bit more, a little bit more.\u2019<br \/>\nThat\u2019s not always a good thing.<br \/>\nOkay.<br \/>\nSo just make sure everything\u2019s coated really well.<br \/>\nYou\u2019re going to end up having a lot left on the bag so just double check it.<br \/>\nOkay, bada boom, that\u2019s ready.<br \/>\nHow simple is that?<br \/>\nSo what I need to do is I\u2019m going to preheat my plank, right?<br \/>\nNow, when plank cooking, it\u2019s absolutely critical that you have a bottle of water handy and available.<br \/>\nSo let me get this on the grill box.<br \/>\nShow you how you do it.<br \/>\nOur grill box is cranking hot right now, so I\u2019m definitely going to turn it down.<br \/>\nI\u2019m going to have my settings just below medium.<br \/>\nI\u2019m going to get that down to about 325, 350 degrees.<br \/>\nNow, while it\u2019s this hot, it\u2019s a great time to clean it a little bit because you can some of the residue that\u2019s still in there.<br \/>\nAnd I get a grill brush here and we\u2019ll clean this up just a little bit here.<br \/>\nNow, here\u2019s a big tip for you.<br \/>\nDon\u2019t stand in front of your grill or your grill box and clean towards you because it\u2019s going to get all over you, been there, done that.<br \/>\nTrust me, do it to the side.<br \/>\nOkay, good to go there.<br \/>\nSo let\u2019s get our plank on there.<br \/>\nNow, cooking side goes down first because what I want to do is I want to start burning this.<br \/>\nSo let\u2019s get this on here.<br \/>\nClose this up.<br \/>\nIn a minute or 2, we\u2019re going to start smelling it and then you\u2019re going to hear some crackling and popping and you can almost hear it right now, it\u2019s starting to do that.<br \/>\nSo it\u2019s only going to take a couple of minutes to get that surface hot.<br \/>\nI can really smell the cedar now.<br \/>\nSo let\u2019s take a look at this and see how it\u2019s going.<br \/>\nRemember it\u2019s going to be really hot, so be careful.<br \/>\nOkay, that\u2019s what we\u2019re looking for right there, that burn mark.<br \/>\nAnd you hear that popping.<br \/>\nI\u2019m going to go for a minute more.<br \/>\nI got to get some oil and I\u2019ll show you what to do next.<br \/>\nLet\u2019s pull our plank.<br \/>\nShow you what to do next.<br \/>\nOkay, you can see there, we got a nice little burn going.<br \/>\nIt\u2019s exactly what we want.<br \/>\nAnd then, what I\u2019m going to do now is I\u2019m going to apply some basic canola oil.<br \/>\nVegetable oil will work fine, something with a fairly high flash point.<br \/>\nAnd that\u2019s just to really keep the food from sticking to the board.<br \/>\nNot a lot, just enough to coat it lightly.<br \/>\nSimple as that.<br \/>\nNow, let\u2019s get our spuds on there.<br \/>\nI\u2019m going to have more potatoes than I have plank room for, but that\u2019s okay.<br \/>\nGet as many on here as we possibly can.<br \/>\nThey can overhang the plank a little bit, not a big deal.<br \/>\nAnd that\u2019s that.<br \/>\nThat\u2019s a beautiful thing.<br \/>\nSo we need to get this back on our grill box.<br \/>\nGrill box is hot, a little hotter than it needs to be.<br \/>\nI\u2019ve turned the burners down too low on both of them.<br \/>\nWe\u2019re going to drop the cedar plank inside now and cook this way.<br \/>\nI suspect these are going to take about 35 minutes, maybe 40.<br \/>\nWant them soft but a little bit of crunch on the outside.<br \/>\nA lot of the cedar aromatics are going to be going through these potatoes with a bite of the Cajun seasoning.<br \/>\nSo I think it\u2019s just going to be dynamite.<br \/>\nOne of the nice things about the grill box here for the big gas grill is that the flames are not direct contact with the grate, so it\u2019s very unlikely I\u2019m going to have any flare-ups which you will very possibly if you put this on a regular barbecue but we never know.<br \/>\nSo that\u2019s why I have my water bottle handy to put out those.<br \/>\nMaybe put out those fires, those flare-ups.<br \/>\nAlways make sure your bottle works.<br \/>\nWell, there we go.<br \/>\nYeah, cooking outdoors.<br \/>\nAlright, let\u2019s fire this up.<br \/>\nPerfect fit.<br \/>\nBarbecue, hamburgers, Memorial Day, perfect fit.<br \/>\nI\u2019m doing mine a little different.<br \/>\nBig surprise there, right?<br \/>\nWe\u2019re not going to really grill them but we\u2019re going to plank them and it\u2019s more of a roasting or baking.<br \/>\nI\u2019d rather prefer to think of it as a roasting technique.<br \/>\nAnd these are hamburger planks and they\u2019re perfect size for about 1\/2 a pound of hamburger.<br \/>\nLet\u2019s get these on the grill box.<br \/>\nKeep adjusting your heat.<br \/>\nKeep that around 350.<br \/>\nAnd let\u2019s talk about hamburgers, for a minute.<br \/>\nI am under the convention that less is more or less is better.<br \/>\nI always try to buy really good quality beef as few additives or no additives is even better.<br \/>\nGrass-fed is even better.<br \/>\nI love buffalo, but with as little bit to it as possible.<br \/>\nAlso, I\u2019m going to be adding absolutely nothing to the hamburger mix itself.<br \/>\nWhat I\u2019m looking for is a crispy coating, a bark almost, if you will, and just the pure taste of the beef on the inside.<br \/>\nAnd then we\u2019ll be adding a few goodies on the top of this to round this out.<br \/>\nSo what kind of beef mixture should you use?<br \/>\nPretty much, everybody says 80\/20.<br \/>\nThat\u2019s 80% beef, 20% fat.<br \/>\nI just don\u2019t like it.<br \/>\nIt\u2019s just too much juice, too much grease for me.<br \/>\nI really prefer more of a 85\/15, sometimes I\u2019ll even go with a 90\/10 depending on whether I\u2019m going to add a bunch of moisture content to it.<br \/>\nI know it\u2019s controversial to everybody out there, but this is just the way I do it and it\u2019s what I like.<br \/>\nSo I\u2019ve got a wonderful 85\/15 mix of beef right here.<br \/>\nAnd we\u2019re going to mix that out.<br \/>\nAnd all I\u2019m going to do is put a rub on the outside, so.<br \/>\nDon\u2019t tell my wife, but I\u2019m taking the ring off because I\u2019m going to get a little gooey.<br \/>\nAnd this is 1 pound of hamburger beef, right here.<br \/>\nAnd I\u2019m going to make some giant 1\/2 pound patties.<br \/>\nSo getting equal quantities.<br \/>\nThe other secret to hamburgers is to handle it as little as possible.<br \/>\nAnd really all I want to do is to form this.<br \/>\nYou can spank it if you want.<br \/>\nYou can press it down if you want.<br \/>\nBut these are monster burgers.<br \/>\nAnd then I want you to indent it just a wee bit there.<br \/>\nSo what\u2019s going to happen is this burger as it cooks on the plank, it\u2019s going to swell.<br \/>\nAnd as it swells a burger, typically you get this crown or this dome on there and that\u2019s not what we want.<br \/>\nIt\u2019s really hard to put anything on the top of that.<br \/>\nIt\u2019s even harder to put the bun on there.<br \/>\nIt all falls off and falls apart.<br \/>\nSo we\u2019re looking at 2 massive 1\/2 pound burgers.<br \/>\nI actually think these are a little over 1\/2 pound.<br \/>\nBut just a lightly packing them together, pressing them out just to keep the form.<br \/>\nHave to refit a little bit.<br \/>\nAnd these are just barely going to fit on these planks.<br \/>\nThat\u2019s okay.<br \/>\nI bet they won\u2019t even fit on the buns that I got.<br \/>\nSo I\u2019ve got them indented and seriously, these are huge.<br \/>\nAnd then pick a barbecue rub of your preference.<br \/>\nIt doesn\u2019t have to be anything that I recommend.<br \/>\nBut find something that you like and this is one.<br \/>\nAnd I just want to get a good coating around there.<br \/>\nThis has got a lot of good flavor to it and saltiness.<br \/>\nAnd this is going to help add some crunch to the outside.<br \/>\nSo let\u2019s get these flipped real carefully.<br \/>\nAdd some more.<br \/>\nIf you like your burgers really heavily seasoned, then put a little more on.<br \/>\nGet them seasoned up how you like it.<br \/>\nAnd that\u2019s what I\u2019m talking about.<br \/>\nSo these planks are ready.<br \/>\nWe\u2019re going to plank our burgers.<br \/>\nSee you in a sec.<br \/>\nAhh, perfect.<br \/>\nThat\u2019s what we\u2019re looking here.<br \/>\nOkay, see what we got going there.<br \/>\nNow, I will tell you that the beef was brought up to room temperature before I started mixing it and preparing it.<br \/>\nI like doing it that way.<br \/>\nJust like steak it\u2019ll comes up to temperature quicker with beef typically when you do that.<br \/>\nSo now, these are going into the Camp Chef Big Gas Grill Box.<br \/>\nThat\u2019s a lot to spew out.<br \/>\nI\u2019m not going to flip them.<br \/>\nI\u2019m not going to touch them.<br \/>\nI\u2019m going to roast them.<br \/>\nThey\u2019re basically just going to cook like that on the plank.<br \/>\nTime to get the burgers on.<br \/>\nTemperature\u2019s at 350.<br \/>\nFry\u2019s been cooking for maybe 15 minutes.<br \/>\nSo we still got a ways to go with that.<br \/>\nLet\u2019s get these planks on there and start this process.<br \/>\nYou can already see some nice color on the Spicy Steak Fries there.<br \/>\nAnd these bad boys are ready to go.<br \/>\nThat\u2019s all there is.<br \/>\nTo maintain 350, cook it until it\u2019s done, going to do a temperature check here in a little while.<br \/>\nLooking about 155, 150 around there.<br \/>\nI like mine medium, just a little over medium.<br \/>\nMy burger, my way.<br \/>\nSee you in a bit.<br \/>\nLet\u2019s see where we\u2019re at.<br \/>\nOh, yeah, that is beautiful.<br \/>\nQuick temp, we\u2019re at 150.<br \/>\nOh, a little hot there 160.<br \/>\nJust juices are just oozing out of this.<br \/>\nFries have crisped up really well.<br \/>\nI\u2019m thinking it\u2019s time to plate.<br \/>\nI\u2019m going to turn this bad boy off.<br \/>\nWe\u2019ll plate it up, show you how it ends.<br \/>\nIt\u2019s time to plate it up.<br \/>\nI can tell you, it\u2019s empty here from the belly to spine there\u2019s a big gap and I\u2019m looking forward to filling this.<br \/>\nBut first thing, I want to toast up the hamburger bun a little bit because that\u2019s the way I like mine.<br \/>\nSo I got a nice, the biggest one I could find, sesame bun here.<br \/>\nAnd we\u2019ll just get this right in the middle, toast up a little bit.<br \/>\nAnd we\u2019re going to plate everything up here and see how it looks.<br \/>\nLet\u2019s start with the fries and we\u2019ll get some of those scooped out.<br \/>\nLook at those.<br \/>\nNow, of course, at this point you could add, obviously, more spice.<br \/>\nBut I\u2019m liking that.<br \/>\nScoop up some mac.<br \/>\nFight the flies.<br \/>\nYou know what it\u2019s like here in the central valley of California.<br \/>\nIt\u2019s beautiful macaroni and cheese.<br \/>\nMacaroni and cheese, wow, maybe that\u2019s what I\u2019m thinking about.<br \/>\nMacaroni salad, lot of color, lot of flavor.<br \/>\nI need 2 scoops, I\u2019m starving.<br \/>\nLet\u2019s grab a burger and a bun and show you how I\u2019m going to finish this off if I can get this wrap to stay.<br \/>\nLet\u2019s do it this way.<br \/>\n1 burger, nicely toasted.<br \/>\nAnd the smallest one of the batch right there, oh.<br \/>\nIf you like your hamburgers big, this is the way to go.<br \/>\nOkay, we\u2019ll barbecue sauce.<br \/>\nUse
