\/>\n<em>Presenter: \u00a0<\/em><br \/>\n<em>Hey, everyone, this is Gary House with Cooking Everything Outdoors.<\/em><br \/>\n<em>It\u2019s a beautiful day and we\u2019re making some bacon candy or candied bacon, however you want to name it, it is good.<\/em><br \/>\n<em>Announcer: \u00a0<\/em><br \/>\n<em>Gary House with the outdoor cook Cooking Everything Outdoors show, I hope you try this at home.<\/em><br \/>\n<em>Presenter: \u00a0<\/em><br \/>\n<em>So for those of you that haven\u2019t read the article yet, what we\u2019re going to be doing is taking bacon, which is a huge favourite, and you can use regular bacon bacon or turkey bacon or I would imagine tofu bacon.<\/em><br \/>\n<em>Not that I\u2019ve tried it.<\/em><br \/>\n<em>Not that I\u2019m going to try it.<\/em><br \/>\n<em>But I would have to assume that that would work just every bit as well.<\/em><br \/>\n<em>And what we\u2019re going to be doing is we\u2019re going to be slow smoking the bacon.<\/em><br \/>\n<em>You could certainly do this on a barbecue grill turned down low.<\/em><br \/>\n<em>You could even do this in your oven.<\/em><br \/>\n<em>And if you go on the internet, there are dozens of versions of this.<\/em><br \/>\n<em>It\u2019s not new.<\/em><br \/>\n<em>You know, it\u2019s been around for a little while.<\/em><br \/>\n<em>But this is my version.<\/em><br \/>\n<em>And, you know, I kick things down a notch and I make it super, super, simple and that\u2019s what I\u2019m doing here.<\/em><br \/>\n<em>So we\u2019re going to be smoking our bacon and we\u2019re going to be putting a brown sugar concoction on top of it and we\u2019re going to smoke it for about 2 to 3 hours.<\/em><br \/>\n<em>And I\u2019ll tell you what, it is good and it is popular.<\/em><br \/>\n<em>So let me show you what we need to do this.<\/em><br \/>\n<em>So first thing is, is that we\u2019re using the Camp Chef Smoke Vault.<\/em><br \/>\n<em>This is the 18 inch version.<\/em><br \/>\n<em>Just got it from my sponsors Camp Chef, thank you very much, absolutely love it.<\/em><br \/>\n<em>So we\u2019ll be using this.<\/em><br \/>\n<em>The other ingredients, to keep it all very, very, simple, we\u2019ll be using bacon.<\/em><br \/>\n<em>I get the thick cut bacon at the meat counter, okay?<\/em><br \/>\n<em>You can go and buy packages of the stuff and it\u2019s pretty well sliced so thin that it\u2019s just going to shrivel up into a little dink about that big and, you know, maybe that\u2019s a bite sized morsel, but I have always gone for the slab cut bacon.<\/em><br \/>\n<em>I find it\u2019s a lot cheaper too than buying the packaged stuff.<\/em><br \/>\n<em>So I have a couple pounds here.<\/em><br \/>\n<em>I\u2019m going to make two versions of this.<\/em><br \/>\n<em>I\u2019m going to make a cocoa candy bacon and then I\u2019m just going to make a regular candy bacon.<\/em><br \/>\n<em>I find 50-50 ratio of people that some just love the cocoa and some just love the others, but I\u2019m adding a kick of heat to each one.<\/em><br \/>\n<em>The ingredients are basic and you can alter this and add things to it as you want.<\/em><br \/>\n<em>First thing we\u2019ll need is 6 tablespoons of dark brown sugar, not packed, not precise.<\/em><br \/>\n<em>I\u2019m also using 1 tablespoon of a very, very nice natural sugar crystal.<\/em><br \/>\n<em>And I find this adds a little bit of extra, I don\u2019t know, maybe a crunch in some spots if it doesn\u2019t melt.<\/em><br \/>\n<em>Got a little sugar crunch and it\u2019s really, really, good.<\/em><br \/>\n<em>1 tablespoon dark cocoa.<\/em><br \/>\n<em>And a 1\/4 teaspoon of cayenne pepper, that\u2019s for the cocoa version.<\/em><br \/>\n<em>The other version is exactly the same minus the cocoa and I\u2019ve doubled up the cayenne.<\/em><br \/>\n<em>So we have a&#8211; excuse me&#8211; this is a 1\/4 teaspoon of cayenne.<\/em><br \/>\n<em>The cocoa, I used an 1\/8th teaspoon of cayenne, so I doubled it up in just the sugar based one.<\/em><br \/>\n<em>So let\u2019s mix all this together and then I\u2019ll show you how we set the smoker up.<\/em><br \/>\n<em>Prep, took me all of 5 minutes to prepare this and this is how easy it is.<\/em><br \/>\n<em>You just take 6 tablespoons of brown sugar.<\/em><br \/>\n<em>Your 1 tablespoon of raw sugar crystals.<\/em><br \/>\n<em>1 tablespoon of cocoa powder and in this version, an 1\/8th teaspoon of cayenne because we like a little kick.<\/em><br \/>\n<em>Just going to blend this together.<\/em><br \/>\n<em>No more difficult than that.<\/em><br \/>\n<em>Now this you\u2019ll probably have a little bit of leftover on it.<\/em><br \/>\n<em>I did from my last batch that I made.<\/em><br \/>\n<em>And what we\u2019re going to be doing with the bacon is we\u2019re going to be putting it on both sides.<\/em><br \/>\n<em>And there\u2019s a little process that I do with that and it\u2019s not that difficult.<\/em><br \/>\n<em>So break all these chunks up of brown sugar and get them blended really well.<\/em><br \/>\n<em>A fork would probably just make it a little easier to do.<\/em><br \/>\n<em>But, you know, we\u2019ve got a spoon.<\/em><br \/>\n<em>Spoons are good.<\/em><br \/>\n<em>Spoons are your friend.<\/em><br \/>\n<em>Okay, that\u2019s mixed up fairly well.<\/em><br \/>\n<em>Couple little chunks in there, but that\u2019s not going to hurt because it\u2019s all going to melt out on the bacon.<\/em><br \/>\n<em>Let me show you the bacon I got.<\/em><br \/>\n<em>Really nice stuff, full cut of bacon, nice, thick, gosh maybe, 1\/4 inch could be little under that, but really good slab of bacon.<\/em><br \/>\n<em>So that\u2019s what we\u2019re going to be using.<\/em><br \/>\n<em>Let\u2019s get the smoker fired up.<\/em><br \/>\n<em>So let\u2019s talk about our weapon of choice today.<\/em><br \/>\n<em>This is the Camp Chef 18 inch Smoke Vault.<\/em><br \/>\n<em>A lot of room in this.<\/em><br \/>\n<em>It consists of just a few components.<\/em><br \/>\n<em>Very, very, easy to assemble.<\/em><br \/>\n<em>I have the heating burner down here.<\/em><br \/>\n<em>I have a chip plate down here, water container here and then 3 trays.<\/em><br \/>\n<em>You have room for 2 more trays in there if indeed you want to do that.<\/em><br \/>\n<em>We\u2019re going to be using a couple of trays.<\/em><br \/>\n<em>I\u2019m going to be using 2 for my candy bacon and then I\u2019m going to cook a little extra bacon because I got another dish up, preparing later on.<\/em><br \/>\n<em>So let\u2019s get this going.<\/em><br \/>\n<em>First thing I\u2019m going to add some water to it.<\/em><br \/>\n<em>Really you could add beer or any moisture type thing.<\/em><br \/>\n<em>Apple sauce, apple sauce&#8211; nah, don\u2019t do apple sauce&#8211; apple juice or a blend of that.<\/em><br \/>\n<em>You know, add some beer just to get some extra flavour in there, but we\u2019re going strictly with water.<\/em><br \/>\n<em>I\u2019m going to fill my water tray up.<\/em><br \/>\n<em>And now I\u2019m going to put my chips in there.<\/em><br \/>\n<em>I\u2019m using apple chips.<\/em><br \/>\n<em>We can have this argument any day of the week that you want.<\/em><br \/>\n<em>I\u2019ve done dry chips.<\/em><br \/>\n<em>I\u2019ve done wet chips.<\/em><br \/>\n<em>I lean more towards a combination of wet and dry.<\/em><br \/>\n<em>For this particular one, I\u2019m throwing in wet chips.<\/em><br \/>\n<em>Works for me.<\/em><br \/>\n<em>Whatever you want to do go for it.<\/em><br \/>\n<em>Enough said.<\/em><br \/>\n<em>And couple good size handfuls here.<\/em><br \/>\n<em>And that just slides in directly over the burner.<\/em><br \/>\n<em>I\u2019ll take my trays out to start with.<\/em><br \/>\n<em>We\u2019ll be loading our bacon up on these.<\/em><br \/>\n<em>And let\u2019s get this fired up.<\/em><br \/>\n<em>So I turn my tank on first and simply, one turn, turns it on.<\/em><br \/>\n<em>So I\u2019m turning mine all the way down to warm for right now.<\/em><br \/>\n<em>Just going to heat up the chamber while I prepare my bacon.<\/em><br \/>\n<em>Let\u2019s start making our cocoa bacon candy first.<\/em><br \/>\n<em>However many pieces you want to fit on your grate is entirely up to you.<\/em><br \/>\n<em>And all I\u2019m going to do is lay them out so I get a little bit of spacing in between.<\/em><br \/>\n<em>We\u2019ll probably get maybe 8 slices on here.<\/em><br \/>\n<em>Maybe, we\u2019ll see.<\/em><br \/>\n<em>So we got 3, 6, can we do it?<\/em><br \/>\n<em>Hmm, I\u2019m going to go with 7.<\/em><br \/>\n<em>Odd numbers are good.<\/em><br \/>\n<em>Okay, on the tray spaced out nicely.<\/em><br \/>\n<em>And all I do is just very carefully sprinkle a little ridge on my bacon.<\/em><br \/>\n<em>Not more than that.<\/em><br \/>\n<em>And that brown sugar and natural sugar crystals will melt and ooze on top of this bacon.<\/em><br \/>\n<em>Don\u2019t worry if it\u2019s a little messy.<\/em><br \/>\n<em>It\u2019s not an exact science because if it was, then you know I\u2019m not going to do it.<\/em><br \/>\n<em>Keep mixing up in your bowl so that you get an equal amount of chunks in here.<\/em><br \/>\n<em>Doesn\u2019t have to be a mountain.<\/em><br \/>\n<em>We\u2019re only going to be using up half of our original mixture.<\/em><br \/>\n<em>Maybe a little more than half.<\/em><br \/>\n<em>And that\u2019s it.<\/em><br \/>\n<em>That\u2019s batch number 1.<\/em><br \/>\n<em>All I have to do now, put it in the smoker.<\/em><br \/>\n<em>Okay, let me show you how I have this racked.<\/em><br \/>\n<em>Chips already starting to smoke, my water pan, one layer of bacon, the other layer of bacon and my third layer of bacon untreated.<\/em><br \/>\n<em>So I get my regular brown sugar candied bacon and my cocoa bacon.<\/em><br \/>\n<em>You can actually see it starting to melt a little bit right now.<\/em><br \/>\n<em>And what I want to do is get my temperature gauge up to about 250 degrees and I\u2019m going to smoke this for roughly an hour to an hour and a half is what I\u2019m looking at.<\/em><br \/>\n<em>And then when that\u2019s done we\u2019re going to flip it over and then I\u2019m going to put some more of that goodie on there.<\/em><br \/>\n<em>And then we\u2019re going to cook it another hour to hour and a half.<\/em><br \/>\n<em>You\u2019re going to love this.<\/em><br \/>\n<em>So we\u2019ve been cooking for about an hour, actually, it\u2019s just a little over an hour.<\/em><br \/>\n<em>250 degree\u2019s been varying 225-250.<\/em><br \/>\n<em>Adjusted the Camp Chef Smoke Vault to about medium.<\/em><br \/>\n<em>Now I find that that with the temperature out here it\u2019s given me what I want.<\/em><br \/>\n<em>Chips have just about run out, so I got a good hour of smoke out of those handful and a half of chips.<\/em><br \/>\n<em>Let\u2019s take a look and see where we\u2019re at.<\/em><br \/>\n<em>I think it\u2019s time to flip them.<\/em><br \/>\n<em>Let\u2019s do it.<\/em><br \/>\n<em>Hot.<\/em><br \/>\n<em>Don\u2019t want to forget.<\/em><br \/>\n<em>The handle is going to be hot.<\/em><br \/>\n<em>Oh, yeah.<\/em><br \/>\n<em>That looks nice.<\/em><br \/>\n<em>Let\u2019s get these out of here.<\/em><br \/>\n<em>And this is not to make a giant mess.<\/em><br \/>\n<em>We got to hang on to this and we\u2019re just going to give them a nice flip.<\/em><br \/>\n<em>All that candy sugar just stays on there.<\/em><br \/>\n<em>Don\u2019t know if you can see Bailey down below me doing what she does best, scavenge.<\/em><br \/>\n<em>It looks delish.<\/em><br \/>\n<em>Okay, so all I\u2019m going to do now is sprinkle some more of the brown sugar mixture on each one, put them back in there for another hour, hour and a half.<\/em><br \/>\n<em>Simple as that.<\/em><br \/>\n<em>See you then.<\/em><br \/>\n<em>As I\u2019m preparing this and putting another coating of sugar on there, I wanted to point out one tip.<\/em><br \/>\n<em>If you are using the Smoke Vault or any smoker, keep in mind that even within a small box, you know this is an 18 inch smoker, there are heat zones in there.<\/em><br \/>\n<em>For this particular unit it\u2019s hotter in the back than it is in the front.<\/em><br \/>\n<em>And that certainly could be because the way I maybe have the water pan in there, or you know, who knows?<\/em><br \/>\n<em>But I\u2019m finding that the bacon to the back has cooked quicker than the bacon to the front.<\/em><br \/>\n<em>So what am I going to do?<\/em><br \/>\n<em>Obviously I\u2019m just going to rotate it around so that the back is in the front and the front is in the back.<\/em><br \/>\n<em>It\u2019s as simple as that.<\/em><br \/>\n<em>Now doesn\u2019t that look beautiful?<\/em><br \/>\n<em>That\u2019s just regular bacon.<\/em><br \/>\n<em>Sweet.<\/em><br \/>\n<em>Well, we\u2019ve been at this for a little over 2 hours and I\u2019m thinking we\u2019re just about done.<\/em><br \/>\n<em>So that there is our cocoa candy bacon and you can still see, you know, some opportunity for it to melt a little bit, but I\u2019m liking this.<\/em><br \/>\n<em>I\u2019m going to pull it.<\/em><br \/>\n<em>Brown sugared version.<\/em><br \/>\n<em>Looks beautiful.<\/em><br \/>\n<em>And there\u2019s our regular just smoked bacon.<\/em><br \/>\n<em>That is a thing of beauty.<\/em><br \/>\n<em>Well, that\u2019s how we do bacon candy.<\/em><br \/>\n<em>Brown sugar, cocoa, a little cayenne and just brown sugar.<\/em><br \/>\n<em>And again I think you could really put whatever you want on these as long as it\u2019s sweet.<\/em><br \/>\n<em>You know, you could use honey, probably agave, probably just, you know, pure cane sugar.<\/em><br \/>\n<em>Probably, all those things are good.<\/em><br \/>\n<em>So I hope you enjoyed this.<\/em><br \/>\n<em>I\u2019ve got a lot more coming.<\/em><br
