I hope you enjoy his writing as much as I do.<\/p>\n<h2 class=\"MsoNormal\" style=\"margin: 0in 0in 0pt; text-align: justify;\">Cookin\u2019 in the Cold<\/h2>\n<p class=\"MsoNormal\" style=\"text-align: justify;\">\u00a0By<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>Mark Hansen<\/p>\n<p class=\"MsoNormal\" style=\"text-align: justify;\"><a href=\"http:\/\/marksblackpot.blogspot.com\/\" target=\"_blank\">Mark\u2019s Black Pot<\/a><\/p>\n<p class=\"MsoNormal\" style=\"text-align: justify;\">\u00a0As winter approaches, many folks will put their dutch ovens into storage.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>There are various methods of \u201cwinterizing\u201d them, most of them involving making sure they\u2019re clean and dry and don\u2019t have a lot of oil in the bottom that can go rancid before they get pulled out again in the late spring or early summer.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>After all, cooking outdoors is for warm weather, right?<\/p>\n<p class=\"MsoNormal\" style=\"text-align: justify;\">At my house, I have a simple method of keeping my dutch ovens ready for spring: I use them all winter.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>The <a href=\"http:\/\/marksblackpot.blogspot.com\/2007\/11\/thanksgiving-turkey-and-ham-in-dutch.html\" target=\"_blank\">herbal roast turkey<\/a> is now a family Christmas tradition, as is the <a href=\"http:\/\/marksblackpot.blogspot.com\/2007\/10\/dutch-oven-pumpkin-pie-adventure-part-i.html\" target=\"_blank\">pumpkin pie<\/a> for post-Halloween.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>A couple of other favorites include the <a href=\"http:\/\/marksblackpot.blogspot.com\/2008\/01\/russian-coulibiac-in-dutch-oven.html\" target=\"_blank\">Russian Coulibiac<\/a> on a January afternoon, and the <a href=\"http:\/\/marksblackpot.blogspot.com\/2007\/12\/dutch-oven-steamed-crab-with-shrimp-and.html\" target=\"_blank\">Snow Crab Legs<\/a> (literally!).<span style=\"mso-spacerun: yes;\">\u00a0\u00a0<\/span><\/p>\n<p class=\"MsoNormal\" style=\"text-align: justify;\">Now, keep in mind, I\u2019ve only been dutching for about two and a half years.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>That\u2019s only two winters and they\u2019ve not been the harshest I\u2019ve ever seen, either.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>Utah winters are cold and snowy, but not always with the bitter wind chill that more humid climates bring.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>Still, I have learned a thing or two that I can share.<\/p>\n<p class=\"MsoNormal\" style=\"text-align: justify;\">Let me also state, for the record, that I\u2019m not cooking these dishes \u201cin the wild.\u201d<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>Virtually all of my cooking is done on my back porch.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>As a result, I\u2019m not standing out shivering while my food cooks.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>I\u2019m inside, snug, usually watching whatever my kids have on the TV. <span style=\"mso-spacerun: yes;\">\u00a0<\/span>This is not \u201croughing it\u201d by any stretch of the imagination.<\/p>\n<p class=\"MsoNormal\" style=\"text-align: justify;\">I\u2019ve found that in winter cooking there are primarily four issues you have to deal with:<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>Cold, Wind, Rain, and Snow.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span><\/p>\n<p class=\"MsoNormal\" style=\"text-align: justify;\">Dealing with the Cold<\/p>\n<p class=\"MsoNormal\" style=\"text-align: justify;\">This is probably the simplest of all issues to adapt to: Simply add more coals.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>How many?<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>Well, that depends on how cold it is.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>If you\u2019re dealing with general winter-y temperatures of, say, between 20<span style=\"font-family: Symbol; mso-ascii-font-family: Arial; mso-hansi-font-family: Arial; mso-char-type: symbol; mso-symbol-font-family: Symbol;\"><span style=\"mso-char-type: symbol; mso-symbol-font-family: Symbol;\">\u00b0<\/span><\/span>F and 40<span style=\"font-family: Symbol; mso-ascii-font-family: Arial; mso-hansi-font-family: Arial; mso-char-type: symbol; mso-symbol-font-family: Symbol;\"><span style=\"mso-char-type: symbol; mso-symbol-font-family: Symbol;\">\u00b0<\/span><\/span>F I\u2019d probably start with two extra coals below, and three to four above, in basic baking and roasting. More if it\u2019s colder, and less, if warmer.<\/p>\n<p class=\"MsoNormal\" style=\"text-align: justify;\">What you\u2019re cooking also makes a difference.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>If you\u2019re cooking a stew, then you\u2019ve got more flexibility, because you can go a bit hotter with less risk of burning. If your heat is too low, you simply cook it longer.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>If you\u2019re doing bread, then it\u2019s more critical to get the heat right. Too much heat can burn.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>In that case, I would err on the side of caution and not pile on the coals too high.<\/p>\n<p class=\"MsoNormal\" style=\"text-align: justify;\"><a href=\"http:\/\/www.cooking-outdoors.com\/wp-content\/uploads\/2008\/09\/dutch-oven-stand.jpg\" target=\"_blank\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-medium wp-image-233\" style=\"margin: 10px;\" title=\"Dutch oven Cooking in the Cold\" alt=\"Dutch oven Cooking in the Cold\" src=\"http:\/\/www.cooking-outdoors.com\/wp-content\/uploads\/2008\/09\/dutch-oven-stand.jpg\" width=\"116\" height=\"97\" \/><\/a>Another thing I\u2019ve learned is that it\u2019s best to get the ovens up off the ground.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>I used to put my dutch ovens on paving bricks, until I learned I was losing a lot of heat from the bottom coals to heating up the brick.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>Now, I have these short metal tables\/stands that I use.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>These are great, since they allow you to get the oven up off the ground. <span style=\"mso-spacerun: yes;\">\u00a0<\/span>They also do a good job of reflecting much of the radiant heat back up into the dutch oven. I can actually reach my hand underneath these stands comfortably, and not feel the heat.<\/p>\n<p class=\"MsoNormal\" style=\"text-align: justify;\">Dealing with the Wind<\/p>\n<p class=\"MsoNormal\" style=\"text-align: justify;\">A lot of cooks I know have fancy tables with wind screens, or wind blockers made of sheet metal, in all kinds of configurations.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>I\u2019ve got mixed feelings about that.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>I think that wind, if you understand it and plan for it, can actually be your friend. Wind blowing across the coals feeds them more oxygen, stoking them up, so they actually burn hotter.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>When it\u2019s cold outside, that can be a good thing.<\/p>\n<p class=\"MsoNormal\" style=\"text-align: justify;\">The downside is that it\u2019s a little tougher to regulate the temperature, since gusts will come and go.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>So, if you\u2019re doing a dish where steady temperature is more critical, like bread, you might want to go with a wind screen, or rotate the dutch oven more frequently, to avoid hot spots.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span><\/p>\n<p class=\"MsoNormal\" style=\"text-align: justify;\">Also, keep in mind that since the coals are burning hotter, they will also burn faster so, you need to replenish them more often.<span style=\"mso-spacerun: yes;\">\u00a0\u00a0<\/span><\/p>\n<p class=\"MsoNormal\" style=\"text-align: justify;\">Dealing with the Rain<\/p>\n<p class=\"MsoNormal\" style=\"text-align: justify;\">There are two basic problems with dutchin\u2019 in the rain.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>One is that the rain could put out your coals.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>The other is that if it starts raining pretty hard pretty quickly, the cold rain on the hot dutch oven could crack or damage it. Either scenario is not pretty.<\/p>\n<p class=\"MsoNormal\" style=\"text-align: justify;\">Generally speaking, if it looks like rain, I\u2019ll cook under some shelter.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>My front porch is covered so, it\u2019s still ventilated, but I\u2019m not getting rained on.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>I have set up my dutch ovens in my garage, but I caution you about that.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>Charcoal gives off carbon monoxide and could be deadly. <span style=\"mso-spacerun: yes;\">\u00a0<\/span>My garage is also well ventilated. <span style=\"mso-spacerun: yes;\">\u00a0<\/span>I can open the big doors in front, and a door in the back and the winds blow through. <span style=\"mso-spacerun: yes;\">\u00a0<\/span>I don\u2019t know scientifically if it would make a difference, but speaking personally, I wouldn\u2019t do dutch oven in an enclosed space with only one door open.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>The air would have to be able to flow through the space.<\/p>\n<p class=\"MsoNormal\" style=\"text-align: justify;\">My in-laws gave me this big round cylindrical metal hood that\u2019s supposedly designed to cover dutch ovens.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>It works, and I can even stack two 12\u201d dutch ovens under it, but, even though there are holes around the lower rim and a vent on top, it doesn\u2019t allow enough air circulation.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>I\u2019ve had times, trying it out, where it actually extinguished the coals.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>I don\u2019t recommend it.<span style=\"mso-spacerun: yes;\">\u00a0\u00a0<\/span><\/p>\n<p class=\"MsoNormal\" style=\"text-align: justify;\">One quick and easy solution that might work, if there\u2019s not too much wind, would be to set up a big patio umbrella over the ovens.<\/p>\n<p class=\"MsoNormal\" style=\"text-align: justify;\">Dealing with the Snow<\/p>\n<p class=\"MsoNormal\" style=\"text-align: justify;\">Problems with snow would be very similar to problems with the rain.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>I\u2019ve found that, unless it\u2019s a freaky-white-out blizzard, I can continue cooking in flurries or even relatively steady snow.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>Covering it somehow is a good strategy, like the umbrella or the hood, as long as you can keep air flowing over the coals.<\/p>\n<p class=\"MsoNormal\" style=\"text-align: justify;\">Ultimately, in all of this, even though I\u2019m cooking from the relative comfort of my heated home, I still think from time to time about my pioneer ancestors that had to cook in their dutch ovens regardless of the weather.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>If they didn\u2019t cook, they didn\u2019t eat.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>So, is it possible to make good food in tough weather?<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>Yes.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>Don\u2019t let it stop you!<\/p>\n<p class=\"MsoNormal\" style=\"text-align: justify;\">Thank you Mark for a great article!
