First off, I get to fire up my Weber Performer Grill with the Gourmet BBQ System grates, then I get to use my <a href=\"http:\/\/www.outdoorcooking.com\/camp-chef-classic-deep-12-dutch-oven.html\" target=\"_blank\" rel=\"nofollow\">Camp Chef 12&#8243; deep Dutch oven<\/a> and use it inside of the Weber Performer grill. The Camp Chef 12&#8243; deep Dutch oven fits perfectly inside the center of the Weber Gourmet BBQ System grate, making this a perfect setup for those that have limited space.<\/p>\n<p>A couple of quick notes about the recipe and techniques I used:<\/p>\n<ul>\n<li>When grilling the steaks, I used lump charcoal and standard briquettes.<\/li>\n<li>The steak rub is Brazos Legends &#8220;Sizzlin' Steak Rub&#8221;.<\/li>\n<li>Cooking the steak to medium rare or medium would be best to help keep the steak as tender as possible.<\/li>\n<li>I kept the Weber Performer Grill lid on while cooking the Grilled Steak Chili in the Dutch oven.<\/li>\n<li>Keep only a few briquettes on the bottom under the Dutch oven &#8211; I had about 10 under mine.<\/li>\n<li>Stir chili every 25 &#8211; 30 minutes or so to keep the chili from sticking to the bottom.<\/li>\n<li>Cook time will vary depending on your conditions &#8211; Mine cooked for a little over an hour in the Dutch oven.<\/li>\n<\/ul>\n<h2>Grilled Steak Chili Recipe<\/h2>\n<div class=\"easyrecipe\" data-rating=\"0\"> \t<link itemprop=\"image\" href=\"http:\/\/www.cooking-outdoors.com\/wp-content\/uploads\/2015\/11\/Easy-and-Delicious-Grilled-Steak-Chili-Recipe-Video-300x168.jpg\" \/>\n<div class=\"item ERName\">Easy and Delicious Grilled Steak Chili Recipe<\/div>\n<div class=\"ERClear\"><\/div>\n<div class=\"ERHead\">Author: <span class=\"author\">Gary House<\/span><\/div>\n<div class=\"ERHead\">Prep time: <time itemprop=\"prepTime\" datetime=\"PT30M\">30 mins<\/time><\/div>\n<div class=\"ERHead\">Cook time: <time itemprop=\"cookTime\" datetime=\"PT2H\">2 hours<\/time><\/div>\n<div class=\"ERHead\">Total time: <time itemprop=\"totalTime\" datetime=\"PT2H30M\">2 hours 30 mins<\/time><\/div>\n<div class=\"ERIngredients\">\n<div class=\"ERIngredientsHeader\">Ingredients<\/div>\n<ul class=\"ingredients\">\n<li class=\"ingredient\">1 1\/2 pounds of steak (round, sirloin, etc)<\/li>\n<li class=\"ingredient\">Steak rub to coat<\/li>\n<li class=\"ingredient\">6 slices bacon, cut into 1 inch pieces<\/li>\n<li class=\"ingredient\">2 medium onions, diced<\/li>\n<li class=\"ingredient\">2 Anaheim chilies, seeds removed and diced<\/li>\n<li class=\"ingredient\">1 red bell pepper, seeds removed and diced<\/li>\n<li class=\"ingredient\">1 Jalapeno chili, seeds removed and diced<\/li>\n<li class=\"ingredient\">6 garlic cloves, diced<\/li>\n<li class=\"ingredient\">1 large can chopped tomatoes<\/li>\n<li class=\"ingredient\">1\/2 tsp salt<\/li>\n<li class=\"ingredient\">1\/2 tsp coarse fresh ground rainbow pepper<\/li>\n<li class=\"ingredient\">1 tbs cumin<\/li>\n<li class=\"ingredient\">1 tbs oregano<\/li>\n<li class=\"ingredient\">2 tbs chili powder<\/li>\n<li class=\"ingredient\">1\/2 tsp cayenne pepper<\/li>\n<li class=\"ingredient\">2 tbs brown sugar<\/li>\n<li class=\"ingredient\">1 can diced green chilies<\/li>\n<li class=\"ingredient\">1 bottle of dark beer, room temperature<\/li>\n<li class=\"ingredient\">Optional &#8211; shredded cheddar cheese, sliced green onions for toppings.<\/li>\n<\/ul>\n<\/div>\n<div class=\"ERInstructions\">\n<div class=\"ERInstructionsHeader\">Instructions<\/div>\n<div class=\"instructions\">\n<ol>\n<li class=\"instruction\">Mise en place &#8211; get all ingredients together first!<\/li>\n<li class=\"instruction\">Preheat the grill for direct grilling.<\/li>\n<li class=\"instruction\">Season both sides of steak.<\/li>\n<li class=\"instruction\">Grill steak until medium rare or medium.<\/li>\n<li class=\"instruction\">Remove steak to rest.<\/li>\n<li class=\"instruction\">Add additional charcoal to grill as needed to cook chili in Dutch oven, about 20 in total.<\/li>\n<li class=\"instruction\">When charcoal briquettes are ready, place ten on Dutch oven lid.<\/li>\n<li class=\"instruction\">Place Dutch oven over bottom coals with lid on to preheat.<\/li>\n<li class=\"instruction\">Brown bacon.<\/li>\n<li class=\"instruction\">Remove excess grease.<\/li>\n<li class=\"instruction\">Add onions, peppers and garlic, stir and cook for 3 &#8211; 4 minutes.<\/li>\n<li class=\"instruction\">Cut steak into bite sized pieces.<\/li>\n<li class=\"instruction\">Add steak pieces to chili.<\/li>\n<li class=\"instruction\">Add steak juices to chili, if any remain.<\/li>\n<li class=\"instruction\">Add can of chopped tomatoes.<\/li>\n<li class=\"instruction\">Add dark beer, fill Dutch oven to cover chili ingredients.<\/li>\n<li class=\"instruction\">Add salt and pepper.<\/li>\n<li class=\"instruction\">Add herbs and spices.<\/li>\n<li class=\"instruction\">Add brown sugar.<\/li>\n<li class=\"instruction\">Add diced chilies.<\/li>\n<li class=\"instruction\">Stir to mix well.<\/li>\n<li class=\"instruction\">Cover with Dutch oven lid.<\/li>\n<li class=\"instruction\">Cook until chili has thickened and the steak is tender.<\/li>\n<li class=\"instruction\">Serve with cheese and sliced green onions (optional)<\/li>\n<li class=\"instruction\">Stir to mix.<\/li>\n<\/ol>\n<\/div>\n<\/div>\n<div class=\"ERNutrition\"><\/div>\n<div class=\"endeasyrecipe\" style=\"display: none;\">3.4.3177<\/div>\n<\/div>\n<p>Equipment used on the show:<\/p>\n<p>Camp Chef 12 inch deep Dutch oven &#8211;
