It is easy to make while camping or in your backyard and it can be scaled to feed as many people as you need. I call it my &#8220;Easy Chicken Piccata Recipe for a Crowd &#8221; for a good reason, it is almost fool-proof, if you keep the easy tips (below) in mind while cooking. To date I have cooked this Chicken Piccata Recipe for groups of 25 to 110 without any changes to the recipe other than scaling for quantity.<\/p>\n<p><iframe loading=\"lazy\" width=\"1080\" height=\"608\" src=\"https:\/\/www.youtube.com\/embed\/hsTbeXv7s68?feature=oembed\" frameborder=\"0\" allowfullscreen><\/iframe><\/p>\n<div class=\"easyrecipe\" data-rating=\"0\"> \t<link itemprop=\"image\" href=\"http:\/\/www.cooking-outdoors.com\/wp-content\/uploads\/2015\/10\/Easy-Chicken-Piccata-Recipe-for-a-Crowd-300x200.jpg\" \/>\n<div class=\"item ERName\">Easy Chicken Piccata for a Crowd Recipe<\/div>\n<div class=\"ERClear\"><\/div>\n<div class=\"ERHead\"><span class=\"xlate\">Recipe Type<\/span>: <span class=\"type\">Main dish<\/span><\/div>\n<div class=\"ERHead\">Author: <span class=\"author\">Gary House<\/span><\/div>\n<div class=\"ERHead\">Prep time: <time itemprop=\"prepTime\" datetime=\"PT30M\">30 mins<\/time><\/div>\n<div class=\"ERHead\">Cook time: <time itemprop=\"cookTime\" datetime=\"PT45M\">45 mins<\/time><\/div>\n<div class=\"ERHead\">Total time: <time itemprop=\"totalTime\" datetime=\"PT1H15M\">1 hour 15 mins<\/time><\/div>\n<div class=\"ERHead\">Serves: <span class=\"yield\">8 servings<\/span><\/div>\n<div class=\"ERIngredients\">\n<div class=\"ERIngredientsHeader\">Ingredients<\/div>\n<ul class=\"ingredients\">\n<li class=\"ingredient\">6 skinless boneless chicken breasts, quartered, pounded 3\/8 inch thick.<\/li>\n<li class=\"ingredient\">Salt and freshly ground black pepper<\/li>\n<li class=\"ingredient\">1 1\/2 cup all-purpose flour, for dredging<\/li>\n<li class=\"ingredient\">1\/2 cup canola oil<\/li>\n<li class=\"ingredient\">2 lemons, 1 juiced, 1 sliced<\/li>\n<li class=\"ingredient\">1 cup dry white wine<\/li>\n<li class=\"ingredient\">1 cup chicken stock<\/li>\n<li class=\"ingredient\">1 chicken bullion cube<\/li>\n<li class=\"ingredient\">1\/2 stick (4oz) unsalted butter<\/li>\n<li class=\"ingredient\">2 tablespoons capers with juice<\/li>\n<li class=\"ingredient\">2 tbs fresh parsley, chopped (optional)<\/li>\n<\/ul>\n<\/div>\n<div class=\"ERInstructions\">\n<div class=\"ERInstructionsHeader\">Instructions<\/div>\n<div class=\"instructions\">\n<ol>\n<li class=\"instruction\">Mise en place<\/li>\n<li class=\"instruction\">Trim, quarter skinless boneless chicken breast<\/li>\n<li class=\"instruction\">Evenly pound all piece to uniform size, approximately 3\/8 inch thick<\/li>\n<li class=\"instruction\">Heat cast iron skillet<\/li>\n<li class=\"instruction\">Add oil to skillet<\/li>\n<li class=\"instruction\">Salt and pepper both sides of chicken breast generously<\/li>\n<li class=\"instruction\">Dredge chicken breasts in flour<\/li>\n<li class=\"instruction\">Place in hot oil to cook only till lightly browned on each side<\/li>\n<li class=\"instruction\">Remove and place in baking dish<\/li>\n<li class=\"instruction\">Repeat until all are browned<\/li>\n<li class=\"instruction\">Pre-heat oven to 350\u00b0F<\/li>\n<li class=\"instruction\">Remove any excess oil from skillet, if any<\/li>\n<li class=\"instruction\">Pour dry white wine is skillet to deglaze, simmer until reduced by half<\/li>\n<li class=\"instruction\">Add chicken stock, lemon juice and bullion cube, simmer until reduced by half<\/li>\n<li class=\"instruction\">Add butter to melt<\/li>\n<li class=\"instruction\">Sprinkle capers over chicken<\/li>\n<li class=\"instruction\">Place lemon slices over chicken<\/li>\n<li class=\"instruction\">Pour sauce over chicken<\/li>\n<li class=\"instruction\">Bake in oven until the internal temperature of the thickest piece reaches 165\u00b0F<\/li>\n<li class=\"instruction\">Remove and serve<\/li>\n<\/ol>\n<\/div>\n<\/div>\n<div class=\"ERNutrition\"><\/div>\n<div class=\"endeasyrecipe\" style=\"display: none;\">3.5.3226<\/div>\n<\/div>\n<p>To put this into perspective and scale for a crowd: one person will eat about three pieces of Chicken Piccata.
