I made the mistake of only cooking a couple of Cod fish filets and those went fast. I would have never thought that my youngest son would devour them as fast as he did!<\/p>\n<p>Let's get right to it so you can start dinner for yourself.<\/p>\n<p>Equipment skillet &#8211; I used a <a href=\"http:\/\/www.outdoorcooking.com\/camp-chef-11-square-skillet.html\" target=\"_blank\" rel=\"nofollow\">Camp Chef model #SQ11<\/a><\/li>\n<li>Long blade spatula &#8211; I used the <a href=\"http:\/\/www.outdoorcooking.com\/professional-chef-spatula-set.html\" target=\"_blank\" rel=\"nofollow\">Camp Chef Professional Chef Spatula Set model #SPSET<\/a><\/li>\n<li>Charcoal briquettes &#8211; <a href=\"http:\/\/www.kingsford.com\" target=\"_blank\">Kingsford<\/a><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" Ingredients:<\/strong><\/p>\n<ul>\n<li>1 cup fresh diced mango<\/li>\n<li>1\/2 cup diced red bell pepper<\/li>\n<li>2 green onions, chopped<\/li>\n<li>1 jalape\u00f1o pepper, seeded and minced<\/li>\n<li>1\/4 cup chopped fresh cilantro<\/li>\n<li>1 garlic clove, minced<\/li>\n<li>1\/8 tsp. table salt<\/li>\n<li>2 tbsp. fresh lime juice<\/li>\n<\/ul>\n<p>Combine all ingredients and ground black pepper<\/li>\n<li>1\/2 tsp cayenne pepper<\/li>\n<\/ul>\n<\/blockquote>\n<p>Fire-up your charcoal grill with your coals in a single height mound in the center of the grill.<\/p>\n<p>While your coals are pre-heating, prepare your Cod filets; wash, dry and season liberally with the Homemade Fish Rub.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full
