class=\"ingredient\">1 pound ground pork<\/li>\n<li class=\"ingredient\">1 pound ground turkey<\/li>\n<li class=\"ingredient\">1\/2 cup (8 tablespoons) ricotta cheese<\/li>\n<li class=\"ingredient\">1\/2 cup (8 tablespoons) parmesan cheese, freshly grated<\/li>\n<li class=\"ingredient\">1\/2 cup (8 tablespoons) panko breadcrumbs<\/li>\n<li class=\"ingredient\">2 tablespoons flat leaf parsley<\/li>\n<li class=\"ingredient\">2 cloves (10 grams) garlic, minced<\/li>\n<li class=\"ingredient\">1 teaspoon dried oregano<\/li>\n<li class=\"ingredient\">1 teaspoon, red pepper flakes, crushed<\/li>\n<li class=\"ingredient\">6 slices provolone cheese<\/li>\n<li class=\"ingredient\">2 sandwich rolls<\/li>\n<li class=\"ingredient\">Salt and Pepper, to taste<\/li>\n<li class=\"instruction\">Preheat the grill for about 30 minutes.<\/li>\n<li class=\"instruction\">Take ground meat in a bowl.<\/li>\n<li class=\"instruction\">Drop in half of the Parmesan cheese, ricotta cheese, salt, pepper, fresh flat leaf parsley, dried oregano, red pepper flakes, minced garlic, panko crumbs and eggs.<\/li>\n<li class=\"instruction\">Mix everything well.<\/li>\n<li class=\"instruction\">Shape the meat into balls and flatten them a bit.<\/li>\n<li class=\"instruction\">Drizzle some oil on the Island Grillstone and place the meatballs on the stone.<\/li>\n<li class=\"instruction\">Grill it up.<\/li>\n<li class=\"instruction\">Flip after 5 minutes.<\/li>\n<li class=\"instruction\">Cook until the meat reaches 165 F.<\/li>\n<li class=\"instruction\">Toast the buns on the island grill stone.<\/li>\n<li class=\"instruction\">Layer the buns with the provolone cheese slice.<\/li>\n<li class=\"instruction\">Arrange the meat balls on top.<\/li>\n<li everyone.<br \/>\nToday we\u2019re making Italian meatball sandwiches on the Island Grillstone the Cooking Outdoors way.<br \/>\nAnnouncer:\u00a0 The Cooking Everything Outdoors show is sponsored by Camp Chef and www.OutdoorCooking.com and www.IslandGrillstone.com.<br \/>\nPresenter:\u00a0 So you know what I hate about meatball sandwiches, and you know it\u2019s a pet peeve and we all have our pet peeves about something, is that when you go and get one it is so slathered in sauce that you can\u2019t taste the meatballs.<br \/>\nThat\u2019s typically because they\u2019re using the wrong meat and they overcooked it and such.<br \/>\nSo I\u2019ve put a little bit of thought into this recipe and I\u2019ve changed things up.<br \/>\nAs you know don\u2019t do a lot of meat around here, mostly because the wife and the kids are not big meat eaters and it\u2019s really ridiculously expensive.<br \/>\nSo we\u2019re changing this meatball sandwich up and I\u2019m going to be using turkey and pork which is going to give us a lot of moisture, some good flavor, especially with all the goodies I\u2019m adding to it.<br \/>\nNow, with any recipe that I cook outdoors I want to make sure that I\u2019m preheating equipment I\u2019m using.<br \/>\nIn this case I\u2019m using my Weber E-310 and my Island Grillstone.<br \/>\nAnd we\u2019re going to preheat this for a good 30 minutes.<br \/>\nIt\u2019s really cold out here.<br \/>\nThere\u2019s a lot of moisture in the air.<br \/>\nI want this nice and hot.<br \/>\nNow, you can cook it directly on a grill, make sure you\u2019re doing it over indirect heat or if you do it over direct heat be prepared for a lot of flare up because these meatballs tend to be a little juicy.<br \/>\nI put a drip pan underneath, put a little bit of water in there to catch the drips so you don\u2019t get that burned aroma that you probably won\u2019t like.<br \/>\nThis recipe bakes up really well.<br \/>\nSo if you have a camp oven or a smoker that you want to go and use, you can do that too.<br \/>\nBut let\u2019s get this mixed up and I\u2019ll show you how I\u2019m going to grill it.<br \/>\nAs I said, I\u2019m using pork and turkey, both ground obviously, of 1 pound of each.<br \/>\nAnd the complete ingredients list will be in the Show Notes below and also on the website.<br \/>\nSo this tends to get a little messy, but that\u2019s okay.<br \/>\nI\u2019ve got a lot of ingredients in here.<br \/>\nYou can adjust all of these to your own particular preference.<br \/>\nIf you don\u2019t like it to be real cheesy, back off on the cheese.<br \/>\nIf you don\u2019t want it to be hot, back up on the peppers, etcetera, etcetera.<br \/>\nSo let\u2019s just get started.<br \/>\nI have about a 1\/2 a cup of parmesan cheese.<br \/>\nThis is a good stuff.<br \/>\nUse the good stuff.<br \/>\nI\u2019m only going to use about 1\/2 of this in my recipe because I\u2019m going to save some of it for my sandwich.<br \/>\nSome ricotta cheese.<br \/>\nSalt and pepper.<br \/>\nFresh flat leaf parsley.<br \/>\nThe flat leaf has more flavor than the curly stuff.<br \/>\nIf you don\u2019t believe me, give it a try.<br \/>\nAnd some dried oregano.<br \/>\nRed pepper flakes.<br \/>\nFresh minced garlic.<br \/>\nI\u2019m using Panko breadcrumbs.<br \/>\nYou can just use regular breadcrumbs if you want.<br \/>\nAnd then eggs, I\u2019m using 3 medium-size eggs.<br \/>\nYou may need more.<br \/>\nThis is just a binder.<br \/>\nYou may also need more breadcrumbs, depending on how moisture mixture gets.<br \/>\nLet\u2019s mix this up thoroughly.<br \/>\nDid I mention I have two pet peeves about meatball sandwiches?<br \/>\nOkay, one of them is not really a peeve, but cooking meatballs is an inefficient process.<br \/>\nOkay?<br \/>\nI\u2019ll use it that way.<br \/>\nThe best way to cook meatballs is to bake them and that surrounds the meatball with heat so that it\u2019s evenly cooked and it builds up a nice crust and that works out great.<br \/>\nWhen you\u2019re grilling it\u2019s a little bit more challenging because if you put it on the grill grates it tends to sink into the grill grates, perhaps they\u2019ll roll if your grill\u2019s not level and such and you\u2019ll get a lot of flare-ups.<br \/>\nNow, with the Island Grillstone I have eliminated the flare-ups but I still might get a little bit of a roll and I might get some uneven cooking.<br \/>\nI don\u2019t like a meatball that\u2019s really done on the outside and still a little bit raw on the inside.<br \/>\nI\u2019d like it even and consistent.<br \/>\nSo what\u2019s the solution to that?<br \/>\nWell, once you determine how big meatball that you want, and this is going to be sandwich size, you\u2019re going to try to form a nice roll, round ball, guarantee you won\u2019t stay that way, and then you\u2019re going to put this on the grill.<br \/>\nWell, you cook it, you get it cooked just right and then you put in your sandwich bun because I like to use kind of a Subway bun, if you will, to steal a name there and you pick it up to go to eat it.<br \/>\nAnd one of those suckers is almost always going to fall out because they\u2019re going to roll out.<br \/>\nSo with that in mind I am going to give mine a little bit of a mini hamburger style look to it.<br \/>\nThat way I\u2019m going to get an even consistent cook.<br \/>\nThey\u2019re not going to roll anywhere.<br \/>\nThey\u2019re going to fit in my sandwich bun perfectly.<br \/>\nThey\u2019re going to be easy to sauce up.<br \/>\nAnd they\u2019re not going to fall out when I go to eat the darn thing.<br \/>\nAnd that may be is how we roll.<br \/>\nSo my grill\u2019s been preheating for about 30 minutes.<br \/>\nWe\u2019re around 375 on the Grillstone here.<br \/>\nYou may need to add a little bit of oil to yours to cook with.<br \/>\nI\u2019m just going to put a little bit and if your Grillstone\u2019s been really pre-seasoned quite well you won\u2019t need that much.<br \/>\nSo let\u2019s get these bad boys on the grill.<br \/>\nThat\u2019s the sizzle I want to hear.<br \/>\nDon\u2019t get me wrong.<br \/>\nIf you want a round meatball, make a round meatball.<br \/>\nYou know me, I just like to mix things up a bit.<br \/>\nOkay, let\u2019s close it up.<br \/>\nWe\u2019re going to grill this for several minutes and give them a flip.<br \/>\n5 minutes into this.<br \/>\nSmells amazing.<br \/>\nLet\u2019s give them a flip.<br \/>\nThat\u2019s what I\u2019m talking about.<br \/>\nThat\u2019s what you get with the Island Grillstone.<br \/>\nNow we need to cook this to 165.<br \/>\nRemember I get turkey in it.<br \/>\nIf you do in meat, you can do it to 145.<br \/>\nIf you want, you can cook at all the way through.<br \/>\nIt\u2019s your call.<br \/>\nBut with turkey or chicken we can\u2019t take any chances.<br \/>\nWe\u2019re done.<br \/>\nTemped to 165.<br \/>\nThey look incredible.<br \/>\nThey smell incredible.<br \/>\nI want to get them off.<br \/>\nNow I want to toast up semi bun real quick.<br \/>\nI\u2019m going to do it on my Island Grillstone, right in all of that grease and juice.<br \/>\nIt\u2019s only going to take a couple of minutes.<br \/>\nBuns are toasted.<br \/>\nNow, real quickly I want to get some provolone cheese on these bad boys.<br \/>\nAnd probably 3 slices will do.<br \/>\nI want to get my meatballs on here.<br \/>\nTake about 3 of these bad boys.<br \/>\nOkay, so I got some pesto I\u2019ve made.<br \/>\nThis is the good stuff, homemade.<br \/>\nGet a little last-minute stir there.<br \/>\nAnd I want to drizzle that over my semi.<br \/>\nAnd as I said a little bit of parmesan, holding that to the end there.<br \/>\nAnd that, my friends, is Cooking Outdoors Italian meatball sandwich or an Italian flat ball meatball sandwich, however you want to word it, but there it is.<br \/>\nAll right, I\u2019m dying to try this.<br \/>\nI mean, you just have no idea how wonderful this smells.<br \/>\nOh!<br \/>\nOh, holy shit that\u2019s good.<br \/>\nNow, I\u2019m not saying that just because I just made this up, this is really good.<br \/>\nThose Italian flat ball meatballs are absolutely juicy.<br \/>\nThat pesto just powers through.<br \/>\nIt\u2019s really wonderful.<br \/>\nThis bun is amazing.<br \/>\nSo having said all that,
