\/>\nPresenter:\u00a0 So what\u2019s the Cooking Outdoors way?<br \/>\nWell, it\u2019s very simple, we\u2019re going to take a baked potato and we\u2019re going to put our chicken pot pie filling in it, and we are going to twice bake this bad boy.<br \/>\nIt is absolutely killer, perfect for camping, perfect for backyard, perfect on a cold miserable day.<br \/>\nFisss\u2026it\u2019s just perfect.<br \/>\nNow this recipe will easily fill 4 to 6 of these big baked potatoes.<br \/>\nI\u2019m only going to do 2 just for the show here.<br \/>\nI mean, it\u2019s going to be lunch this afternoon for me and the Mrs.<br \/>\nBut, you know, the larger the baked potato, I think the better you\u2019re going to get more filling in there.<br \/>\nNow, as far as the filling goes, the chicken pot pie filling, if you want to use grandma\u2019s recipe because it\u2019s a secret family recipe and it just kicks but go for it, I\u2019ve got a little bit of a Southwestern flavor to mine, going to be just a pinch of heat and some little goodies in there.<br \/>\nI\u2019m using some frozen vegetables because it\u2019s really convenient.<br \/>\nIt\u2019s got some corn, some bell peppers, green, red, some black beans in there and some onion.<br \/>\nI\u2019m going to kick it up a little bit with some cayenne powder.<br \/>\nAnd the typical stuff that we\u2019re going to do is we\u2019re just going to make a quick roux.<br \/>\nI\u2019m going to use a skillet on the grill using a charcoal grill right now with some leftover briquettes.<br \/>\nThis is a good representation of a fire pit if you\u2019re out camping.<br \/>\nSo you\u2019re just going to need a skillet that you\u2019re not afraid to get in the heat.<br \/>\nOf course, I\u2019m breaking out my trusty old man pans, I\u2019ve been using these for years, they work great on the grill.<br \/>\nHighly recommend cast iron, too.<br \/>\nSo let\u2019s get our chicken pot pie filling going.<br \/>\nNow, as always the complete recipe will be down below and also on the website so you can follow along with me on this.<br \/>\nNow the first thing we\u2019re going to do is get our skillet over a good hotbed of coals.<br \/>\nIf it\u2019s too hot, spread it out a little bit, just work it until you feel it\u2019s about right.<br \/>\nI use my skillets on the grill all the time, so don\u2019t be afraid to do that.<br \/>\nMake sure it\u2019s got a heat safe handle or wear a nice big pair of gloves.<br \/>\nI\u2019m going to take and melt about 3 tablespoons of butter.<br \/>\nWhen your butter\u2019s ready, add your onions.<br \/>\nBe careful not to burn the butter.<br \/>\nYou may have to move your pan from side to side, lift it up off the coals, whatever you need to do just to make sure it doesn\u2019t burn, but I don\u2019t want that brown burn butter taste.<br \/>\nNow once your onions are saut\u00e9d down a little bit, I got a little brown on mine.<br \/>\nI like that.<br \/>\nWe\u2019re going add some salt and pepper.<br \/>\n8th to a 1\/3 teaspoon of cayenne pepper.<br \/>\nWe\u2019re going to go add some flour.<br \/>\nNow I have about 1\/2 a cup of flour here.<br \/>\nWe\u2019re going to make a nice roux with this.<br \/>\nJust get that mixed in that fat real good.<br \/>\nNow I want to add in some chicken broth.<br \/>\nI got about a cup and a 1\/2, almost 2 cups here.<br \/>\nMight not use it all.<br \/>\nJust get this all blended together so we don\u2019t have any flour clumps.<br \/>\nThat\u2019s going to thicken up a little bit.<br \/>\nWe\u2019re going to add some milk to it next.<br \/>\nAgain, I have about 3\u00bd a cup of milk.<br \/>\nI\u2019m not going to use it all.<br \/>\nWe\u2019re just giving a lot of flavor, making it nice and rich.<br \/>\nAnd it\u2019s just continuing to thicken up.<br \/>\nThis is beautiful.<br \/>\nNow, stir constantly, you don\u2019t want this to stick and burn.<br \/>\nOnce it\u2019s at the thickness you like, just remove it from the heat.<br \/>\nSo once we have our filling, the consistency we want, we\u2019ve cooked it a little bit, it\u2019s nice and thick, I\u2019m going to add our chicken.<br \/>\nAnd then we\u2019re going to add our vegetables.<br \/>\nNow, if you think it\u2019s a little too thick, you can always add a little bit more milk to it or even a little bit more stock.<br \/>\nWe\u2019re just going to set this aside and prepare our potatoes.<br \/>\nLike I said, these are previously baked.<br \/>\nAnd what I want to do is very carefully cut the top off of this.<br \/>\nNow, we\u2019re looking at about 3\/4th of this as far as where we want to remove it from.<br \/>\nSo I want a little higher than halfway point.<br \/>\nAnd I like to just go in with my knife and cut that out just about like that.<br \/>\nJust lift that off.<br \/>\nAnd then we\u2019re going to start scooping out the insides.<br \/>\nLeave a good 3\/8th of an inch around the walls.<br \/>\nWe don\u2019t want this collapsing or breaking, but get enough of the cavity so that you can put some filling in there.<br \/>\nAnd we\u2019re going to save this topping or this center for our topping.<br \/>\nTake your time, don\u2019t rush this.<br \/>\nIf you rush it, you\u2019re going to break your potato.<br \/>\nNow, when you have this carved out\u2026 and, you know, it\u2019s a pretty good size cavity in there, this is where we want to fill up with our chicken pot pie mixture.<br \/>\nJust get pack it in there until it\u2019s nice and full and you\u2019ve got absolutely as much in there as possible.<br \/>\nI bring mine right to the top and just a 10-bit over.<br \/>\nYou can make it overflow as much as you want.<br \/>\nBut what we\u2019re going to do is we\u2019re going to put a top on this.<br \/>\nSo what I do is I take some of the filling and I make myself some rustic mashed potatoes.<br \/>\nHow you want to do this is entirely up to you.<br \/>\nYou can add cheese, you can add bacon, certainly butter, perhaps a little milk, some salt, some pepper, some cayenne, little paprika, whatever you like.<br \/>\nOkay, it\u2019s looking pretty darned good.<br \/>\nSo, let\u2019s cap our potatoes.<br \/>\nNow I like to do it with a fork because I think it leaves a real nice pattern on it.<br \/>\nBasically, we\u2019ll just pile on the mashed potatoes.<br \/>\nAnd I do it and so that it\u2019s completely covering the opening.<br \/>\nIt\u2019s not going to stop stuff from bubbling out, but I think it just looks nice and then the fork also makes these great little cracks, little mashed potato peaks on there that brown up just beautifully.<br \/>\nSo now, everything\u2019s really cooked, you could probably eat it just like this right now, but I want to toast the top up a little bit.<br \/>\nSo I have my grill set up for 2-zone indirect heat.<br \/>\nI\u2019m going to put my potatoes over on the far cool side away from the hot part because this is\u2026 it\u2019s pushing 450, still a little hot, I\u2019m going to tone it down just a bit but I\u2019m going to put the potatoes on, cook them for about 15 minutes, maybe.<br \/>\nAnd very carefully place these beauties on your grill.<br \/>\nCover them up.<br \/>\nAnd we\u2019ll check on them every 5 minutes or so, make sure they\u2019re not burning.<br \/>\nWell, I think we\u2019re done.<br \/>\nThat\u2019s what I\u2019m looking for.<br \/>\nSo let\u2019s slide this off.<br \/>\nThat is a meal in itself.<br \/>\nYep, we got to try this.<br \/>\nLet\u2019s just get some of this goody here, some of this goodness.<br \/>\nIt\u2018s baked potato and it\u2019s chicken pot pie filling.<br \/>\nWow!<br \/>\nHmm!<br \/>\nI\u2019m sorry grandma, this kicks it.<br \/>\nThat\u2019s good.<br \/>\nSo, there you have it, chicken pot pie in a baked potato or twice baked chicken pot potato, whatever you want to call it it\u2019s simply good.<br \/>\nGive it a try.<br \/>\nAnd
