It needs to be tenderized and broken down and a marinade does the trick. Sometimes you just don't want to go with the flow, so I decided to try a dry rub. I choose a rub from on of my favorite books <a href=\"http:\/\/www.amazon.com\/gp\/product\/0761119795?ie=UTF8&tag=cookingoutdoo-20&linkCode=as2&camp=1789&creative=9325&creativeASIN=0761119795\">Barbecue! Bible : Sauces, Rubs, and Marinades, Bastes, Butters, and Glazes<\/a><img loading=\"lazy\" decoding=\"async\" style=\"border: none !important; margin: 0px !important;\" alt=\"\" src=\"http:\/\/www.assoc-amazon.com\/e\/ir?t=cookingoutdoo-20&l=as2&o=1&a=0761119795\" width=\"1\" height=\"1\" border=\"0\" \/>by Steven Raichlen. His &#8220;Dry Tuscan Rosemary Rub&#8221; was the perfect choice for my London Broil. Fast to put together and the smell of Rosemary was delicious.<\/p>\n<p style=\"text-align: justify;\"><a href=\"http:\/\/farm4.static.flickr.com\/3109\/2851330953_2f3afc01f3_m.jpg\" target=\"_blank\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" style=\"margin-top: 10px; margin-bottom: 10px; border: 2px solid black;\" title=\"Grilled London Broil with a Tuscan Rosemary rub\" alt=\"Grilled London Broil with a Tuscan Rosemary rub\" src=\"http:\/\/farm4.static.flickr.com\/3109\/2851330953_2f3afc01f3_m.jpg\" width=\"240\" height=\"180\" \/><\/a><\/p>\n<p style=\"text-align: justify;\">Here is what I did:<br \/>\nI took a 1lb London broil, washed it clean (just water), patted it dry and coated with some Olive Oil.<\/p>\n<h3 style=\"text-align: justify;\">Dry Tuscan Rosemary Rub<\/h3>\n<p style=\"text-align: justify;\"><a href=\"http:\/\/farm4.static.flickr.com\/3024\/2852165044_517c816d19_m.jpg\" target=\"_blank\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" style=\"margin-top: 10px; margin-bottom: 10px; border: 2px solid black;\" title=\"Grilled London Broil with a Tuscan Rosemary rub\" alt=\"Grilled London Broil with a Tuscan Rosemary rub\" src=\"http:\/\/farm4.static.flickr.com\/3024\/2852165044_517c816d19_m.jpg\" width=\"240\" height=\"180\" \/><\/a><\/p>\n<p style=\"text-align: justify;\">1\/4 cup dried rosemary<br \/>\n2 tablespoons dried oregano<\/p>\n<p style=\"text-align: justify;\">1 tablespoon dried crumbled sage<\/p>\n<p style=\"text-align: justify;\">2 tablespoons dried garlic flakes<\/p>\n<p style=\"text-align: justify;\">1\/4 cup coarse salt<\/p>\n<p style=\"text-align: justify;\">2 tablespoons cracked black peper<\/p>\n<p style=\"text-align: justify;\">Coat your London Broil with the rub about 1 hr before grilling. I wouldn't advise searing, you'll just toast the rub.
