I packed it with lots of flavor and plenty of opportunity to add even more.<\/p>\n<p>If you like your meatloaf with a bunch of heat, pour it on! class=\"ingredient\">1\/2 teaspoon Black pepper<\/li>\n<li class=\"ingredient\">1\/2 teaspoon White pepper<\/li>\n<li class=\"ingredient\">1\/2 teaspoon Cayenne<\/li>\n<li class=\"ingredient\">1\/2 teaspoon Cumin<\/li>\n<li class=\"ingredient\">1\/2 teaspoon Nutmeg<\/li>\n<li class=\"ingredient\">2 ea Green onions, sliced<\/li>\n<li class=\"ingredient\">1 ea Medium onions, chopped<\/li>\n<li class=\"ingredient\">1\/2 ea Medium green peppers, chopped<\/li>\n<li class=\"ingredient\">2 ea Garlic cloves, minced<\/li>\n<li class=\"ingredient\">3 tablespoons Butter<\/li>\n<li class=\"ingredient\">2 1\/2 teaspoons Worcestershire sauce<\/li>\n<li class=\"ingredient\">1 1\/2 teaspoons Hot pepper sauce<\/li>\n<li class=\"ingredient\">3 oz Evaporated milk<\/li>\n<li class=\"ingredient\">3 oz Ketchup<\/li>\n<li class=\"ingredient\">1 cup Bread crumbs<\/li>\n<li class=\"ingredient\">2 ea Eggs<\/li>\n<li class=\"ingredient\">1.5 pounds Ground beef<\/li>\n<li class=\"ingredient\">0.5 pound Ground pork<\/li>\n<\/ul>\n<\/div>\n<div class=\"ERInstructions\">\n<div class=\"ERInstructionsHeader\">Instructions<\/div>\n<div class=\"instructions\">\n<ol>\n<li class=\"instruction\">Combine the seasonings( salt, bay leaf, black pepper, white pepper, cayenne, cumin, nutmeg); set aside.<\/li>\n<li class=\"instruction\">Saut\u00e9 onions, green peppers and garlic in butter until tender in skillet.<\/li>\n<li class=\"instruction\">Add Worcestershire sauce, hot pepper sauce and reserved seasonings.<\/li>\n<li class=\"instruction\">Cook and stir for 8-10 minutes.<\/li>\n<li class=\"instruction\">Discard bay leaves.<\/li>\n<li class=\"instruction\">Remove from the heat; stir in milk and ketchup.<\/li>\n<li class=\"instruction\">Cool.<\/li>\n<li class=\"instruction\">Pre-heat grill to 350\u00b0F<\/li>\n<li class=\"instruction\">Add bread crumbs and eggs; mix well.<\/li>\n<li class=\"instruction\">In large bowl, combine beef, pork and vegetable mixture; mix well.<\/li>\n<li class=\"instruction\">Pat into greased 13-in. x 9-in. casserole dish.<\/li>\n<li class=\"instruction\">Bake in grill at 350\u00b0 using indirect heat for 65-75 minutes until a thermometer reads 165\u00b0; drain if necessary.<\/li>\n<\/ol>\n<\/div>\n<\/div>\n<div class=\"ERNutrition\"><\/div>\n<div class=\"endeasyrecipe\" style=\"display: with a little Cajun meatloaf.<br \/>\nAnnouncer: The Cooking Everything Outdoors show is sponsored by Camp Chef, and www.OutdoorCooking.com, and www.IslandGrillstone.com.<br \/>\nPresenter: So to make our recipe today we\u2019re going to be using a gas grill and a couple other pieces of equipment.<br \/>\nThe first thing I\u2019m going to be using is the grill plate from Grill Innovations.<br \/>\nThis allows you to bake in a gas or charcoal grill without any worries about burning on the bottom.<br \/>\nSo it\u2019s a great piece of equipment for your grill.<br \/>\nI\u2019m also going to be using a real nice casserole dish.<br \/>\nThis is from KitchenAid.<br \/>\nThey sent me this past winter.<br \/>\nYou\u2019re also going to need a skillet.<br \/>\nAnd I have my handy man pan here.<br \/>\nAnd you\u2019ll also be needing a wireless thermometer.<br \/>\nI\u2019m using the iGrill2.<br \/>\nThere\u2019s a lot of ingredients to this recipe and I\u2019ll have the complete list on the website and probably below in the About section right there.<br \/>\nSo just loosely mixing up your dry ingredients.<br \/>\nWe have here is white pepper.<br \/>\nThis is nutmeg, cayenne, black pepper, cumin, and bay leaf.<br \/>\nSo to get started I have my skillet on my gas grill.<br \/>\nIt\u2019s getting hot right here.<br \/>\nI\u2019m going to add some butter.<br \/>\nNow I\u2019m going to add my onions.<br \/>\nMy bell peppers.<br \/>\nAnd I\u2019m going to saut\u00e9 these until tender.<br \/>\nAs your onions become translucent and your peppers started getting soft, you want to add garlic and green onions.<br \/>\nSaut\u00e9 that enough until the garlic starts coming through.<br \/>\nSo, now that you can smell the garlic coming through, the aromatics of it, it just smells fantastic, we need to add our seasonings.<br \/>\nNow you need to add your Worcestershire sauce and your hot sauce.<br \/>\nI\u2019m using Crystal.<br \/>\nThis is about 2 teaspoons.<br \/>\nYou may want 2 tablespoons.<br \/>\nAt this point, that choice is yours.<br \/>\nMix it all together thoroughly.<br \/>\nAnd then we\u2019re going to cook it for several more minutes.<br \/>\nAfter this is cooked for several minutes you want to remove your bay leaf.<br \/>\nAdd condensed milk and your ketchup.<br \/>\nMix all this up thoroughly and set aside to cool.<br \/>\nNow let\u2019s put all this together.<br \/>\nSo I have a pound of pork and a pound of beef.<br \/>\nI\u2019m going to add my eggs, my breadcrumbs and my fixings.<br \/>\nThe reason I cooled the fixings down is because I didn\u2019t want to cook the egg too soon.<br \/>\nI want it to get it all mixed and blended.<br \/>\nAdding the hot spices and seasoning that we cooked up, the onion and such would have started to cook the egg and that would not have been a good thing.<br \/>\nSo once we have this mixed up we need to form it into a meatloaf.<br \/>\nThis is where you\u2019re going to get dirty.<br \/>\nOh, don\u2019t forget to give it a spray.<br \/>\nNever hurts.<br \/>\nMake it as pretty as you want.<br \/>\nThat looks good to me.<br \/>\nSo, what else is left?<br \/>\nKetchup, of course.<br \/>\nBut I don\u2019t just want any kind of ketchup.<br \/>\nI want something with some heat.<br \/>\nProbably good 1\/2 a cup of ketchup.<br \/>\nAnd I\u2019m going to add a good tablespoon of Crystal.<br \/>\nMix that up.<br \/>\nAnd then we\u2019re going to put this over the top of our meatloaf.<br \/>\nNow, I\u2019ve got a little bit of real estate around here that I\u2019m going to take advantage of.<br \/>\nI have some purple potatoes that I have taken and added some Tony Chachere\u2019s seasoning to it, so it\u2019s got some bite.<br \/>\nAnd I\u2019m going to put a few of those around here.<br \/>\nNow I\u2019m going to leave a little bit of room.<br \/>\nBecause about halfway through this cook, I\u2019m going to be adding some veggies.<br \/>\nJust a little zucchini and some squash.<br \/>\nMy grill\u2019s at about 375 right now, so let\u2019s get this meatloaf on there.<br \/>\nI\u2019m going to put my wireless thermometer probe in because we\u2019re cooking this to 165.<br \/>\nNow, about halfway through this, I\u2019m going to add my vegetables in there.<br \/>\nJust close it up and start baking.<br \/>\nSo about an hour and 30 minutes later, 162 degrees, we\u2019re ready to pull it.<br \/>\nWell, there it is, that\u2019s my Cajun meatloaf recipe.<br \/>\nI\u2019m not going to plate this up because this is dinner tonight with some friends.<br \/>\nBut I just love the way the ketchup caramelized there and maybe even burnt a little bit adding some nice texture.<br \/>\nThe smell is just incredible.<br \/>\nTake a quick bite of this.<br \/>\nOh, the cumin, cayenne.<br \/>\nHmm, the onions and the peppers coming through beautifully.<br \/>\nReally, you can spice this up , kick it up as high as you want.<br \/>\nBut this is a killer meatloaf.<br \/>\nYou got to give this a try.<br \/>\nThat\u2019s it.<br \/>\nI\u2019m out of here.<br \/>\nI hope you enjoy this.<br \/>\nGo out and make some Cajun meatloaf.<br \/>\nLet me know how you
