{"id":11374,"date":"2014-10-17T12:10:48","date_gmt":"2014-10-17T19:10:48","guid":{"rendered":"http:\/\/www.cooking-outdoors.com\/?p=11374"},"modified":"2017-02-06T19:58:35","modified_gmt":"2017-02-07T03:58:35","slug":"dubliner-cheese-stuffed-chicken-breast","status":"publish","type":"post","link":"https:\/\/cooking-outdoors.com\/dubliner-cheese-stuffed-chicken-breast\/","title":{"rendered":"Dubliner Cheese-Stuffed Chicken Breast"},"content":{"rendered":"<h2>Dubliner Cheese-Stuffed Chicken Breast | Kerrygold Cheese Recipe<\/h2>\n<p>Crispy chicken doesn\u2019t need to be deep-fried!<\/p>\n<p>This recipe from my friends over at Kerrygold Cheese is simple, yet delicious with its crispy breadcrumb coating and Kerrygold Dubliner Cheese stuffed inside the chicken breast.<\/p>\n<p>Easily baked on the grill (yes you can bake on a grill) using the Kettle Pizza accessory and the Weber Kettle Grill.<\/p>\n<p><iframe loading=\"lazy\" width=\"1080\" height=\"608\" src=\"https:\/\/www.youtube.com\/embed\/0vkkEhFwM2Y?feature=oembed\" frameborder=\"0\" allowfullscreen><\/iframe><\/p>\n<p>(Closed Captioning available on this video)<\/p>\n<p>I personally found this to be a very easy recipe to execute on the grill. Total cook time was 45 minutes and prep time taking 20 minutes or so.<\/p>\n<p>Best practice here would be to use similar sized chicken breasts so they all finish baking at the same time.<\/p>\n<p>If you are going to use a charcoal grill like I did, be careful of the charcoal that you use, lump charcoal and\/or smoke of any type could easily over-power the taste of the chicken, you want to savor the Kerrygold Dubliner cheese and chicken flavors.<\/p>\n<p>I would like to thank Kerrygold for allowing me to use their recipe for this video! Grate 3 1\/2 oz Kerrygold Dubliner Cheese and cut the remainder into thin slices. Cut a pocket in each chicken breast and insert the slices of cheese. In a bowl, mix together the bread crumbs, herbs and grated Dubliner Cheese. Place the beaten eggs in a shallow dish and dip the chicken breasts into it, until evenly coated, then press firmly into the crumb mixture. hooked up with my friends over at Kerrygold cheese and I kind of beg them to let me cook this recipe on the show.<br \/>\nAnd we\u2019re going to be using their Dubliner Irish cheese, which is aged.<br \/>\nIt\u2019s got a little nutty flavor to it.<br \/>\nI absolutely love this cheese.<br \/>\nI\u2019m going to be using my KettlePizza pizza insert on the Weber kettle and we\u2019re going to bake with this, because you know you bake pizzas, you\u2019ve seen me bake a ton of different stuff on this and we\u2019re going to bake chicken on it today.<br \/>\nIngredients wise this fits within my requirements for keeping it simple.<br \/>\nWe have just a few ingredients and we start off with some Kerrygold cheese.<br \/>\nNow you\u2019ll need about 7 or 8 ounces.<br \/>\nThis comes in a 7 ounce block.<br \/>\nAnd what I did was I took half of it and I just shredded it up, then I took the other half and made it some slices.<br \/>\nAnd you need about 8 slices of cheese for your chicken breast.<br \/>\n4 boneless, skinless chicken breast.<br \/>\nI slid a pocket in mine.<br \/>\n4 ounces of fresh breadcrumbs or I chose to use panko.<br \/>\nI think these are going to be excellent addition.<br \/>\nAbout an ounce of Mediterranean herbs.<br \/>\nNow I couldn\u2019t find an authoritative definition of Mediterranean herbs, so I use some basal, some sage, some marjoram and Italian flat-leafed parsley and I just chopped that up finely or semi-finely and we\u2019re using that.<br \/>\n2 medium eggs, which we\u2019re going to scramble up here to use for our dipping.<br \/>\nAnd then about a 1\/3 teaspoon of salt, this is kosher salt.<br \/>\nBut first thing I want to do is get my breadcrumbs, my herbs, my salt and my shredded cheese together.<br \/>\nNow you can choose to grate your cheese up a lot smaller than I did.<br \/>\nThat\u2019s entirely up to you and what kind of cheese grater you have.<br \/>\nThis is going to work fine for me.<br \/>\nSet that aside and now I want to insert my cheese into my chicken breasts, get those ready.<br \/>\nAnd you can see I cut a pocket in each one.<br \/>\nI\u2019m just going to take 2 slices and just put it in there.<br \/>\nTime to get our egg together.<br \/>\nAnd prepare to get messy.<br \/>\nWe\u2019re going to set up our station here and then I\u2019m going to put my chicken on a Wilton baking sheet.<br \/>\nI\u2019m going to take my chicken.<br \/>\nWe\u2019re going to dip it lightly in the egg, get messy here and get our chicken coated in this and just lay that on our sheet.<br \/>\nAnd here\u2019s what we have, our 4 chicken breasts already, we have them in our Wilton baking sheet.<br \/>\nYou can butter the sheet if you want.<br \/>\nI just put these in completely dry on mine and going to work out just fine.<br \/>\nAnd now we\u2019re going to put this in our KettlePizza accessory, which is sitting at about 375 degrees right now.<br \/>\nRight in the center there.<br \/>\nNow we\u2019re going to cook this for approximately 45 minutes or until the chicken reaches 165 degrees Fahrenheit.<br \/>\nAbout halfway through your cook, you want to put on a pair of heavy gloves, rotate your pan so everything cooks evenly.<br \/>\nOh, look at that!<br \/>\nBeautiful!<br \/>\nJust coming along nicely.<br \/>\nThat\u2019s it.<br \/>\nWatch the clock.<br \/>\nMake sure you got a thermometer to check your temp.<br \/>\nWell, it\u2019s been about 48 minutes exactly and our chicken\u2019s up to temp.<br \/>\nLet\u2019s take a look.<br \/>\nLook at that!<br \/>\nBeautiful cheese, just oozing out of there.<br \/>\nBeautiful panko crust, that Dubliner Irish cheese, so let\u2019s plate this up.<br \/>\nHey, we did it, I got it plated.<br \/>\nI\u2019m dying to get a piece of this with the cheese on it.<br \/>\nOh, look at that.<br \/>\nIt blends so nicely with the chicken.<br \/>\nAnd yet you know it\u2019s how held up.<br \/>\nIt doesn\u2019t just melt and spread all over the place.<br \/>\nIt was able to hold up under these temperatures and we\u2019d cooked it to 165 degrees.<br \/>\nIt still has some consistency in there.<br \/>\nIt\u2019s just a great quality cheese.<br \/>\nThe panko crust is light, yet it has some flavor in it with those mixed herbs.<br \/>\nThis is good.<br \/>\nKerrygold, thank you so much for letting me cook this recipe.<br \/>\nI hope everybody
