We eliminate the fear with this very simple recipe using minimal cooking steps on the grill, you will soon be able to master Surf and Turf any time any place! I was particularly impressed by the great flavor of the Grass Feed Beef, its rich meaty taste and juiciness from all of the beautiful marbling these Filet Mignon's had throughout it.<\/p>\n<p>My Lobsters were small 4 oz tails I purchased, but they were the perfect size for a double Lobster tail Surf & Turf. I of course dipped them in a little butter, roasted garlic and lemon juice mixture to add a bit of rich flavor to the Lobster Tails. Grilling Lobster Tails is quick and easy, so don't lose track of time. we\u2019re taking the fear out of Surf and Turf on the grill dome, on the Cooking Everything Outdoors show.<br \/>\n<strong>Announcer<\/strong><br \/>\nThe Cooking Everything Outdoors show is sponsored by Camp Chef and www.OutdoorCooking.com and www.islandgrillstone.com.<\/p>\n<p><strong>Presenter<\/strong><br \/>\nSo we\u2019re making Surf and Turf today and what that is, is steak.<br \/>\nAnd I\u2019m using some\u00a0Filet Mignon from my friends over at Greensbury Market.<br \/>\nAnd I have some real nice 4-ounce lobster tails that I picked up and we\u2019re doing doubles.<br \/>\nAnd only a few ingredients, you\u2019d be surprised how few we\u2019re going to use and how easy this is going to be.<br \/>\nSo on my Filet Mignons, these are just beautiful, these are grass-fed, all natural that get some beautiful marbling.<br \/>\nI just tied them up to get as even thickness as possible.<br \/>\nThey\u2019re pretty close to the same thickness but they\u2019re really just gorgeous.<br \/>\nAnd we\u2019re going minimalistic on those.<br \/>\nI am just going to be using salt and pepper, that\u2019s it.<br \/>\nThat\u2019s really all you need and that\u2019s what we\u2019re going with.<br \/>\nNow, on my lobster tails, these are little 4 ounces, they\u2019re pretty small, so I\u2019m going with two but they\u2019re really, really nice.<br \/>\nThey are wild-caught.<br \/>\nSo they are going to be quite flavorful.<br \/>\nThese are going to cook really, really fast.<br \/>\nSo I\u2019m going to get my meats started first because I want to sear and then cook it slowly, relatively slowly, and get it a nice medium rare, which everybody prefers.<br \/>\nI\u2019m going to probably overcook one of them because I like it closer to medium.<br \/>\nThis is a sea salt and it\u2019s a fine sea salt and we are going to put that right on the top.<br \/>\nDon\u2019t be shy on this.<br \/>\nThe salt\u2019s going to bring out some of that delicious flavor.<br \/>\nAnd then I have some fresh ground black pepper.<br \/>\nJust repeat on the other side.<br \/>\nSo right now, I\u2019ve been preheating my grill dome well over 30 minutes, so I know my grate is nice and hot.<br \/>\nIt\u2019s hovering right around 400 and what I\u2019m going to do is sear.<br \/>\nNow, for searing, you can get this up to 5, 6, 700 degrees.<br \/>\nBut this is a really thick steak, so I\u2019m going to just sear it on each side and then I\u2019m going to bring it up to temp direct heat.<br \/>\nAnd I think that I\u2019m going to get a really, really nice even cook on this.<br \/>\nAnd I\u2019m going to put my lobster tails on there just a little bit after the steak because the steak will come often rest and then the lobster tails cook really, really fast.<br \/>\nSo, to show you that you don\u2019t have to mess around with temperatures up and down, we\u2019re going to do it this way.<br \/>\nNow, one of the little tricks that they don\u2019t tell you about in restaurants is they will oil, grease, whatever you want to call it their meat before they go it and they grill it.<br \/>\nNow, as a backyard cook you can put a little olive oil on your meat to keep it from sticking or you could do it on your grate but what they quite often do, will take a can and spritz it, real quick, to get some coating on it.<br \/>\nNow, this actually happens to have some mesquite flavoring, so it\u2019s a big win for me and that\u2019s what we\u2019re going to do instead of coating our grate.<br \/>\nLet\u2019s cover this up about 3 or 4 minutes and then we\u2019re going to give it a spin.<br \/>\nNow, while our Filet Mignon are cooking, I\u2019ve already given them one flip and we\u2019re going to cook them to temp, if you will, let\u2019s prepare our lobster tails because this is really easy and I know a lot of people are intimidated by this.<br \/>\nNow, your lobster tails obviously have a top and a bottom.<br \/>\nAnd what we want to do is take a good pair of kitchen shears.<br \/>\nThese are KitchenAid brand.<br \/>\nThey are really sharp, lethal weapons.<br \/>\nAnd we want to cut the back.<br \/>\nThis is simple.<br \/>\nWith a good pair shears, this is like cutting newspaper, right down to the tail there.<br \/>\nOkay?<br \/>\nAnd then what I do is I take and I put it in the palm of my hand like that and then I want to try to crack this bottom here.<br \/>\nSo I will give that a squeeze, simple as that, then I\u2019ll break the back open and take out the meat, getting there and pull that out.<br \/>\nNow, once the meat is out, close that top back together and then lay the meat on top of that, and that\u2019s how we\u2019re going to cook it.<br \/>\nSo now, I simply want to give it a light basting of butter and this is going to help bring out the color while it cooks.<br \/>\nCertainly, clarified butter would be great if you had some available.<br \/>\nI didn\u2019t take the time to make any.<br \/>\nSo, just regular butter, not a lot, just get a little bit on there.<br \/>\nNow, if you want to spice this up or flavor this up, little salt, little white pepper so you don\u2019t see the flakes.<br \/>\nYou could add a little citrus of your choice, typically lemon juice, some garlic powder and such like that, that would be okay also.<br \/>\nAnd now I\u2019m just going to sprinkle a light bit of salt, very light.<br \/>\nNow, these are going to go on the grill dome.<br \/>\nSo my filet mignons are ready to come off.<br \/>\nI\u2019ve cooked both sides, cooked them up to temp, ends about medium, just a little under medium.<br \/>\nI know you guys like medium rare, but I\u2019m eating these, you\u2019re not.<br \/>\nYou cook them to medium rare or raw if you want.<br \/>\nYeah.<br \/>\nThose look good.<br \/>\nNow, for our lobster tails, we\u2019re going to put these, shell down.<br \/>\nI\u2019m going to do this with my hands, that\u2019ll be a little easier.<br \/>\nJust like so.<br \/>\nThese truly are going to only take a few minutes to cook.<br \/>\nJust like that.<br \/>\nLobster tails are done.<br \/>\nYep.<br \/>\nNow, do you see how bright, red those shells are?<br \/>\nAnd the color of the lobsters turned opaque.<br \/>\nNow, it\u2019s really important that you don\u2019t overcook these.<br \/>\nThat\u2019s a mistake a lot of people make.<br \/>\nThey just cook them for too long.<br \/>\nOkay, this is it, moment of truth.<br \/>\nOh my gosh!<br \/>\nFilet mignon.<br \/>\nI\u2019m going to put that bad boy right there, away from the flies.<br \/>\nThey are voracious, as you know, around here.<br \/>\nAnd that is how easy it is to do Surf and Turf on the grill dome or any grill in your backyard.<br \/>\nGive it a try.<br \/>\nDo it for Father\u2019s Day
