Transcription:<\/strong><\/p>\n<p>Presenter<br \/>\nHey, everyone, today we\u2019re making Coffee Brown Sugar Rubbed Tri-Tip in the grill dome on the Cooking Everything Outdoors show.<br \/>\nSo this is the first official cook in the grill dome.<br \/>\nOf course, being from California, I couldn\u2019t do anything else but tri-tip to get it started.<br \/>\nNow, before we fire up the grill dome, I want to put my rub together and it\u2019s super simple, not too many ingredients, and I really think you\u2019re going to like this.<br \/>\nSo, pretty simple and what our goal here is, is to create a coffee coco sweet.<br \/>\nWhat I have here is a 1\/3 cup of fresh ground French roast.<br \/>\nThey\u2019re strong and pungent you could cut back on this if you want.<br \/>\nAnd we\u2019ll need a 1\/3 cup of brown sugar, good tablespoon of kosher salt, tablespoon of fresh ground black pepper.<br \/>\nThis is 1 tablespoon of a fiery 5 pepper blend for some heat.<br \/>\nAgain, you could cut back on that if you want.<br \/>\nAnd we have a teaspoon of dark cocoa powder and 1\/2 teaspoon of smoked paprika.<br \/>\nNow, just take a blending implement of your choice, and give this a good go around.<br \/>\nYeah, that looks good.<br \/>\nNow, here we have about 2 1\/3 pound trimmed tri-tip.<br \/>\nPay a little bit more if you buy it trimmed or you can easily trim it yourself, typically it\u2019ll have a fat cap on there and you just take all the extra fat off with your knife.<br \/>\nYou don\u2019t need a lot of fat cap on the tri-tip.<br \/>\nIn fact, I rarely ever have any fat cap on mine.<br \/>\nAnd I\u2019ve washed it and patted it dry and then we\u2019re just going to pack the coffee rub on there and get it everywhere.<br \/>\nOnce you have it completely coated, you want to set it aside, let this bad boy get up to room temperature.<br \/>\nAnd while that\u2019s happening, we\u2019re going to fire up our grill dome.<br \/>\nTo get started, we need to heat up our charcoal and I\u2019ll show you how simple that is.<br \/>\nWe\u2019re going to use the grill dome electric starter, and then we\u2019re going to be cooking our tri-tip indirect.<br \/>\nOkay, so we have the grill dome rapidlite, electric charcoal starter.<br \/>\nAnd it\u2019s pretty interesting shape there and what that is designed to do is to go down into the bottom of your grill dome and you place your charcoal on top of that.<br \/>\nAnd here, what I\u2019m going to be using is mesquite lump charcoal.<br \/>\nAnd you can see I did a little test run yesterday because it was the first time and I ran it for about 3 hours and it hardly used any charcoal up.<br \/>\nBut I\u2019m going to add some more to this and then we\u2019ll get it fired up.<br \/>\nPlug it in, let it set, make sure your bottom vent is wide-open, leave your dome lid up.<br \/>\nOnce that gets started, we\u2019re going to close it and start heating this up, set it up for our indirect cook and heat it up and get it going.<br \/>\nOur mesquite lump charcoal is lit and it\u2019s time to unplug and remove this.<br \/>\nSet this somewhere where it won\u2019t catch anything on fire or hurt anybody because it\u2019s still very, very hot.<br \/>\nSo our charcoal is going.<br \/>\nI\u2019m going to set up my indirect rack with a drip pan.<br \/>\nAnd I\u2019m going to set my grate on top of that.<br \/>\nNow, we\u2019re going to close the lid.<br \/>\nWe have the top open about halfway to get things started.<br \/>\nI\u2019m going to close my bottom to about two fingers width opening.<br \/>\nI\u2019m going to let this preheat up to 350 degrees.<br \/>\nWhen I reach that temperature, I\u2019m able to control it.<br \/>\nWe\u2019re going to start cooking.<br \/>\nSo our grill dome is just about at 350.<br \/>\nI want to control it right around that range.<br \/>\nLet\u2019s get our tri-tip on.<br \/>\nI\u2019ve already put a temperature probe in here.<br \/>\nAnd I want to cook this indirect until I reach about 135 is my target range.<br \/>\nAnd then we\u2019ll check the sear on, it\u2019s the crust, see if that\u2019s good.<br \/>\nOkay, so I have reached an internal temperature of 135 and that does look good.<br \/>\nNow, what I want to do is I wan to get a little bit more of a crust on there.<br \/>\nSo what I\u2019m going to do is I\u2019m going to pull this real quick, remove my main grate, remove my drip pan and then I am going to use this as a sear grate.<br \/>\nSo I\u2019ll probably just going to put it on there for maybe 5 minutes on each side tops.<br \/>\nSo I\u2019m going to build up a little bit of a crust on that.<br \/>\nSo right now, it\u2019s been searing on one side for about 4 minutes and I\u2019m sitting at 139 degrees and I\u2019m going to take the probe out to make this a little easier.<br \/>\nFlip that over and get that go on just a little bit longer.<br \/>\nWell, we have seared it on both sides for 4 minutes about each and I took a quick temp with my instant-read and I\u2019m a lot higher than I wanted to be.<br \/>\nI\u2019m at now 150.<br \/>\nUnfortunately, that means my probe was not working correctly.<br \/>\nSo I\u2019m a little disappointed in that but I just think this is going to be fabulous anyway.<br \/>\nSo we\u2019re going to set it aside.<br \/>\nWe\u2019re going to rest it.<br \/>\nJust like that.<br \/>\nLittle bit of a weep hole there for the steam.<br \/>\nI really don\u2019t want it sogging up that bark that we\u2019ve cooked into there.<br \/>\nAnd we\u2019re going to let that set for about 10 minutes and see how close to well done I\u2019ve cooked these things.<br \/>\nIt\u2019s time to cut into this.<br \/>\nI\u2019m trying to actually remember which way the green went, so what I\u2019m going to do is take a little bit off in here.<br \/>\nOh and I can already tell\u2026 look at that.<br \/>\nThat is just beautiful.<br \/>\nThat looks fantastic.<br \/>\nThat\u2019s just about 150.<br \/>\nIt\u2019s so full of juice.<br \/>\nI don\u2019t think anybody could be happier with this tri-tip.<br \/>\nNow, you could cook it less than this, you can cook it more than this.<br \/>\nIt\u2019s your call.<br \/>\nBut I\u2019m just loving that.<br \/>\nThat\u2019s really nice color there, super juicy.<br \/>\nWell, we did it.<br \/>\nWe have our beautiful coffee rubbed brown sugar tri-tip.<br \/>\nSo good.<br \/>\nIf you\u2019re not a huge coffee fan, cut back on the coffee a little bit, maybe add a little bit more cocoa.<br \/>\nNow, I wan to take a second to thank Grill Dome for
