\/>\n<strong>Presenter:<\/strong><br \/>\nHey, everyone, today we\u2019re making grilled halibut with a lemon caper dill sauce on the Cooking Everything Outdoors show.<br \/>\nSo, just a couple of quick points before we get started, this halibut is sustainably harvested.<br \/>\nI received it from www.GreensburyMarket.com.<br \/>\nThey have a lot of great organic, sustainable food products there, meats and fish and poultry also.<br \/>\nAnd we\u2019re also going to be cooking this on the round Island Grillstone.<br \/>\nSo let\u2019s get started and go over our ingredients.<br \/>\nYou\u2019ll need 4 halibut fillets.<br \/>\nSee, these beautiful halibut here.<br \/>\nFor our dressing, you\u2019ll need a couple of medium lemons.<br \/>\nAnd I\u2019ve just cut those in half and trimmed the ends off.<br \/>\n4 tablespoons of extra virgin olive oil and that\u2019s divided.<br \/>\nThis is 3 here and then I have 1 here.<br \/>\n1 tablespoon of capers.<br \/>\n1 tablespoon finely chopped chives, 1\/4 teaspoon of kosher salt and a 1\/4 teaspoon of fresh ground black pepper.<br \/>\nFor our rub, you\u2019ll need 1 teaspoon of granulated onion, 1 teaspoon finely chopped fresh dill, 1\/2 a teaspoon of kosher salt and a 1\/4 teaspoon of freshly ground black pepper.<br \/>\nSo one of the first things we need to do after we\u2019ve preheated the Island Grillstone is get our lemons ready for the dressing.<br \/>\nWe need to put a little bit of oil on the surface, that\u2019s going to go down on the grill.<br \/>\nOur Island Grillstone is really hot.<br \/>\nI\u2019ve pre-oiled it a little bit.<br \/>\nAnd we\u2019re just going to grill this up and caramelize them to release all that sweetness that the lemons have.<br \/>\nOkay, so after a few minutes, that\u2019s what we\u2019re looking for, pull these off.<br \/>\nWe\u2019re going to let them cool off.<br \/>\nLet\u2019s put our dressing together.<br \/>\nWe ended up with just a little over a tablespoon of lemon juice after I\u2019ve squeezed out the cooked lemons and ran it through sip to get most of the stuffers out of there.<br \/>\nAdd our oil, that\u2019s 3 tablespoons extra virgin olive oil, our chives, and our yummy capers.<br \/>\nAnd that is our sauce for our halibut.<br \/>\nNow, we just need to put a rub on our halibut and get that grilled.<br \/>\nSo let\u2019s put our rub together.<br \/>\nWe have our salt and pepper, our granulated onion, and our dill, fresh, fresh, fresh.<br \/>\nAnd that looks good.<br \/>\nNow, for our halibut, you could see how beautiful these are.<br \/>\nThey\u2019re just\u2026 ah, just gorgeous.<br \/>\nSo I just want to add a little bit of olive oil to all sides, and we\u2019ll just do this the old-fashioned way, get these all coated up.<br \/>\nSo let\u2019s get our rub on these.<br \/>\nJust a little bit on each one.<br \/>\nOkay.<br \/>\nWe\u2019re ready for the grill.<br \/>\nSo, now the moment of truth.<br \/>\nLet\u2019s get these on the grill.<br \/>\nOh, that looks fantastic.<br \/>\nThese will not take long to cook.<br \/>\nAlright, these are cooking very, very fast.<br \/>\nCaramelized on one side, browning up nicely, just beautiful.<br \/>\nI\u2019m really happy with the way that looks.<br \/>\nLet\u2019s get this off the grill and see how pretty that is.<br \/>\nLook at that.<br \/>\nOkay, let\u2019s plate this up.<br \/>\nOne beautiful piece of halibut here.<br \/>\nWe\u2019ll need ourselves a little bit of decoration.<br \/>\nWell, is that fancy schmancy or what?<br \/>\nLet\u2019s take and drizzle our sauce on there.<br \/>\nAnd there you go, my friends.<br \/>\nWell, everybody, that\u2019s it.<br \/>\nWe\u2019re done.<br \/>\nHalibut with a lemon caper sauce, some dill in there.<br \/>\nAbsolutely
