\/>\n<strong>Presenter: \u00a0<\/strong><br \/>\nHey, everyone, today I\u2019m making my Cajun chicken skillet recipe on the Somerset gas stove on the Cooking Everything Outdoors show.<br \/>\nNow, this is the maiden voyage of the Somerset gas grill from Camp Chef.<br \/>\nJust put this together.<br \/>\nReally excited about firing it up.<br \/>\nWe\u2019re going to be going all cast iron today.<br \/>\nIt\u2019s going to be a quick and easy recipe.<br \/>\nSo let\u2019s go over the ingredients and get started.<br \/>\nI have 2 large skinless, boneless chicken breasts that I have already cut into cutlets and preseason for a couple of hours with Creole seasoning from Tony Chachere.<br \/>\n1 stalk of celery, chopped.<br \/>\n2 green onions, chopped.<br \/>\n1 yellow onion halved and cut into half ringlets, if you will.<br \/>\n1 red bell pepper.<br \/>\nAbout 6 mushrooms that I\u2019ve pretty much quartered.<br \/>\nYou\u2019ll need some heavy cream.<br \/>\nSome white wine, this is a chardonnay, your choice.<br \/>\nBasic salt and pepper.<br \/>\nMaybe a 1\/4 of a stick of butter.<br \/>\nAnd a few tablespoons of extra virgin olive oil.<br \/>\nSo our skillet is preheating right now.<br \/>\nI have it set on medium on my burner.<br \/>\nIt\u2019s as 30,000 BTU burners, so it\u2019s just going to heat up pretty darned quick.<br \/>\nSo what I want to do is I\u2019m going to put just a little bit of butter and some of my olive oil.<br \/>\nAnd what I\u2019m going to do is cook my chicken first.<br \/>\nNow, as this cooks we want to start removing the pieces that are nicely browned up, giving some of the other ones some more skillet time.<br \/>\nYou could certainly do this in batches that would expedite the browning.<br \/>\nMaking sure at all times that your chicken is cooked thoroughly.<br \/>\nOnce everything is done to your liking, just remove the chicken.<br \/>\nLook at all those really great sucks at the bottom.<br \/>\nWe don\u2019t want to burn those.<br \/>\nI was just going to add all that incredible flavor as we cook our dish.<br \/>\nAnd let\u2019s get a little more butter in there.<br \/>\nTad more oil.<br \/>\nIf this starts burning on you, turn the skillet down.<br \/>\nLet\u2019s get our onions in there.<br \/>\nLet\u2019s start saut\u00e9ing those down.<br \/>\nI\u2019m going to turn my heat just a bit down.<br \/>\nI\u2019m going to start lifting up all those pieces in there.<br \/>\nSometimes they are called fond, but for fresh meal they are known sucks.<br \/>\nAnd our red bell peppers.<br \/>\nAt this point salt and pepper.<br \/>\nAnd you could also add a little of Tony stuff.<br \/>\nHey, these are coloring up just fantastic.<br \/>\nI\u2019m going to get my celery in there.<br \/>\nThis is coming along really nice.<br \/>\nNow, I do want for me to do this I want it a little bit al dente with the vegetables, I want a little bit of bite in there.<br \/>\nI don\u2019t want them so soft that they just mooch.<br \/>\nSo they\u2019re coming along just the way I like them.<br \/>\nI\u2019m going to add the mushrooms now and my green onion because this cooked the quickest.<br \/>\nI\u2019m just going to cook those down a little bit.<br \/>\nJust tad more pepper, tad more salt, tad Tony stuff.<br \/>\nI\u2019m going to let that cook down for just a couple of minutes more.<br \/>\nNow, how beautiful does that look?<br \/>\nSmells phenomenal.<br \/>\nLet\u2019s get our chicken in there.<br \/>\nLet\u2019s mixed up.<br \/>\nBring that chicken back up to temp.<br \/>\nNow, it\u2019s time to add our white wine in.<br \/>\nAnd you\u2019re looking for, maybe, 1\/2 a cup.<br \/>\nOkay.<br \/>\nMaybe 3\/4 of a cup.<br \/>\nAnd what we\u2019re going to do is we\u2019re going to pick up all those sucks on the bottom and we\u2019re just going to burn those off.<br \/>\nStart marrying all these flavors together.<br \/>\nWe\u2019re going to burn off that alcohol.<br \/>\nAnd this is going to be part of our sauce.<br \/>\nAnd we\u2019re just going to make the sauce right in the pot.<br \/>\nSo our wine, we\u2019ve reduced it maybe by half.<br \/>\nIt\u2019s lifted up all those sucks from the bottom of the pot.<br \/>\nNow we\u2019re ready to add our heavy cream in.<br \/>\nAnd this is going to make a rich creamy sauce, about 3\/4 of a cup.<br \/>\nWe\u2019re going to let this cook at a nice slow simmer till it thickens up a bit.<br \/>\nSo our sauce is thickening up nicely.<br \/>\nI\u2019m going to finish it off with one last thing.<br \/>\nDip a little more butter.<br \/>\nWhat butter does on the sauce is that it makes it simmer and shine.<br \/>\nWe\u2019re ready to plate.<br \/>\nWe\u2019ll start off perhaps, some mixed greens here.<br \/>\nAnd a little bit of red bean rice, just because you need it.<br \/>\nCreamy chicken.<br \/>\nLook at that.<br \/>\nWell, there you have it.<br \/>\nThat\u2019s my Cajun chicken
