For as long as I can remember, his trademark approach was as follows- Season with salt/pepper. Put fat side up in a foil-covered pan. Place in a cold oven, set to 375 for 45 min. Let rest 20 minutes. Butterfly and season again. Sear and finish on a medium hot grill. Slice into 1/2″ steaks which range from well to medium rare in one piece.
