Les, do you do anything special to the steak as it air dries in the refrigerator? Flip, cover, etc.

Or even in my cast iron skillet with the ridges. I “age” for up to 5 – 7 days in the fridge, bring to room temp or almost to room temp, season and then cook as needed.
