Hey everyone!

Not much to report this week other than my chef duties at camp are over – 5 days at 6500 feet cooking for about 30 people had it's challenges, but it all ended well, even though I was bone weary from doing it. We had to prepare breakfast and dinner for 5 days, of course I had to through in goodies like homemade cinnamon rolls, homemade biscuits, French bread, Desserts and cookies to keep everyone in a forgiving mood…

Breakfast included: Baked Pigs-n-a-Blanket, French toast, Loaded eggs scramble, Pancakes – including Blueberry pancakes, and a Frittata scramble.

Dinner included: Spaghetti & Meatballs, Grilled Pork Tenderloin, Chicken Piccata, BBQ Chicken and Corned beef.

Of course, all the fixings were included!

Baking bread or anything at 6500 feet is interesting – the cookies always came out flat but the bread was heavenly perfection!

Speaking of bread! We didn't have enough bread to make french toast with so I made some good old fashioned white bread from scratch – my newly earned Bakers Certificate from the Columbia Culinary program paid off!

And … Dutch oven desserts!

I hope everyone has had a good week!

Last Saturday was an amazing day at the Il Fiorello Olive Company and I have a ton of great stuff to share with you over the next couple of weels!

By the time you read this I will be into my 4th day cooking at the family's church camp. Close to 40 people are scheduled to be there during the 6 days of camp and I will be the chef on duty cooking 5 breakfast and 5 dinners with the help of my friend Al, I should be in great shape. It's expected to be close to mid 90's all week so add another 10 – 20 degrees when the oven are on.

On the menu:

• Pigs-n-a-blanket, french toast, loaded egg scramble, pancakes and fritata's with all the fixin's for breakfast.
• Spaghetti & meatballs, grilled pork tenderloin, chicken piccata, BBQ chicken and corned beef & cabbage for dinner.
• Dessert is looking like apple crisp, mixed berry cobbler, mini apple tarts and peach cobbler, all cooked in Dutch ovens.

It will be rough camping for the group!

Thankfully I don't have neighbors like that but I do have a lot of friends that are more than willing to help me eat my BBQ!

First off – Happy Fathers day!

Not a lot happened last week in the world of Outdoor Cooking for me, which is OK from time to time, allowing me to catch up on some projects that need to get done. Next week will be about the same with the singular exception of the Il Fireollo tour and grilling class I will be attending on Saturday. 4 hours of grilling, beer pairing, olive oil tasting and a personal tour of the olive grove, just spectacular! You will be getting all of the juicy details of the next few weeks.

Garden is coming in great with the first batch of zucchini, yellow squash, cucumbers and various peppers coming in. I'll be cooking up a special zucchini boat recipe here in the next day or two, yum! I promise I'll get some pictures take of the garden this week!

Another great grilling comic from cartoonist Jerry King

Hey everyone!

No much to report this week, everything has been a little on the quite side, which I am OK with!

The garden is doing very well and I am officially half-way finish and 1/4 planted. Need to get you all an update blog post to show you my progress!

I'll probably finish in the fall when things cool down a bit.

The big project this summer is working on the new outdoor kitchen I have been planning. I will be putting up a back wall/trellis first then pouring some more concrete for the actual kitchen, making the overall size about 14 feet in width. Plenty big for everything I plan to put in there: Dutch oven cooking table, Charcoal grill, Gas grill, Grill dome, Pizza oven, refrigerator, drawers, etc. a very big project.
