Grilled Cranberry Stuffed Turkey Breast

This grilling recipe really received a wow from the BBQ family recently and it only took a few minutes to make, which makes me very happy. Turkey Breast are very inexpensive, taste great and grill to perfection, if you don't over cook them and that's a big if.

I prefer to marinade them and grill them butterfly style, that cooks really fast on the BBQ grill. But they are sooo much better when you can stuff them with stuffing and that is what this recipe is all about!

Grilled Cranberry Stuffed Turkey Breast

Ingredients

Grilled Cranberry Stuffed Turkey Breast4 Turkey breasts – butterflied

salt & pepper

1 box of Stouffer's Turkey stuffing mix – prepared

1/2 cup dried cranberries – diced

1/2 cup pecans – diced

1/2 teaspoon dried sage

1/8 teaspoon dried ginger

2 tablespoons honey

Your favorite rub – I used Pepper Pilot's, Peri-Peri “African Hot Pepper & Citrus Rub” (They are May 2010  Newsletter contest sponsors)

Cotton string for tying Turkey back together

Preparation

Grilled Cranberry Stuffed Turkey Breast

Wash, dry and lay out your Turkey breast. Butterfly them carefully so as to not cut all the way through. Prepare Turkey stuffing as per the box instruction (or make you own). Salt and pepper the butterflied Turkey breast lightly. Mix together the stuffing, cranberries, pecans, sage, ginger and honey. Place a heaping mound of this mixture on one side of the opened butterflied Turkey breast and then fold over the opposite side. Now tie the breasts closed so none of that stuffing comes out. (See picture) Apply your rub all over the Turkey breast and let site for 30 minutes in the refrigerator.

Grilling

You will be cooking this over direct coal/heat for about 5 minutes on each side to brown then more off to the side for indirect heat and cook till the internal temperature of the Turkey reaches 165° F. I don't turn mine at this stage – helps keep everything together. With the “Peri Peri wet rub I applied a little more at this point to help keep it moist. You could do a spritz of water and apple juice if you want to at this time also. Turkey breast will dry out fast if your not careful.

Options

Prepare everything up to the point of grilling, vacuum seal and freeze it to take camping. This will grill up to perfection over a campfire!
