Calasparra is a local rice we use, a short grain rice, similar to risotto rice can also be used.

Obviously I’m living in Spain, so I’m not sure where you would be able to purchase Saffron from reasonably, in fact I don’t think Saffron can be bought reasonably, but as you use just the tiniest pinch, a little goes along way.

A Nora pepper is a dried red pepper , small round like the size of a golf ball. You do have to use this, not everyone does. The rice is a short round , fat rice – quite similar to Risotto rice – it needs to hold its shape and be able to absorb list of liquid without breaking down. Hope this helps.

The pan is a shallow flat pan, a large frying pan can also be used, as long as it has a large flat area . In both pictures I’m cooking on a gas ring, but different sizes. The rings fit the size of the pan. They can be used on legs or without, on the large paella, I’m tucked behind the wall keeping out of the wind. To cook above a wood fire is traditional , then you can use any size pan. Should you need any more info, please just contact me
